    Honestly I'm glad I stumbled across this! This seems to make ramen much more easier to make than other channels I've seen that have "authentic" recopies and it intimidates me. But seeing these easy ingredients to help an often overwhelmed woman makes me happy I can make my favorite dishes at home!

    One of the greatest channels on the entire internet. I'm not exaggerating. Thank you so much for showing me all the secret techniques for such delicious 'home cooking'. I miss authentic Japanese food and you show us all everything from breakfast side dishes to izakaya favourites. Fantastic.     I tried and really great I found u. Want to say thank you so much for sharing this simple soup. I made the first ramen. It was so simple but the teste is so wow. I tried with noodle but I used it for meatball, white noodle, tofu, mashroom, and bok coy also. I think it will be good also for beef soup. Slice beef soup.     This is an AMAZING video but this American can't quite wrap her head around boiling pork belly. I marinated and sautéed my first ever pork belly in traditional Asian seasons and sauces for ramen soup and holy canolies, it was so good! I hope that's not insulting at all because I genuinely want to try some of these recipes. Asian food is absolutely INCREDIBLE and one of my favorites! ❤

    밤에 돈코츠 라멘 배달하는 곳이 없어서 ㅠ
    직접 해먹으려고 레시피를 찾다가 들어오게 되었습니다.
    돈코츠 라멘 따라 만들어봤는데 진짜 비슷한 맛이 나네요? 굿굿🎉
    저는 집에 미소가 없어서 한국 된장을 대신 썼어요. 한국된장은 미소보다 짜니까 조금 덜 넣어야 됩니다.
    그리고 생강도 집에 없어서 마늘로 대신 넣었구요. 그래도 제법 비슷한 맛이 납니다!
    국물에 돼지고기가 전혀 안들어간 돈코츠라멘! 오히려 좋아

    Love this quick and easy tutorial ! I made the shoyu ramen with chashu and it was amaaaaazing ! The only problem is I haven't mastered the perfect ramen egg yet, as the shells stick, so they looked weird.

      About the egg, it is said that if you pierce a small hole in the shell before boiling the egg, you can peel it cleanly after boiling.

      I found the older the egg, the easier it is to peel! Try using eggs you’ve had in the pantry for a while and icing the eggs for 5 mins before you peel them

    Wow, what a great set of recipes. The 'sake' you use....what kind is it, do you refrigerate it? Can you use 'cooking sake' instead of drinking sake?

      Mine is drinking sake. The brand name is "Sho Chiku Bai 'Ten' Sake".

      I just buy this because this is the cheapest one so far. 😁
      As for storage, since cooking sake contains seasonings other than sake, it is better to keep it refrigerated. While, the sake I use is always stored at room temperature. (Others may have a different opinion.)

    Because some restaurants took the short cut and put milk to make tonkatsu ramen that I almost die. I’m allergic to dairy products and I didn’t realize that they put milk in the both. That scarred me so bad now I can’t even eat Tonkatsu ramen anymore 😢but I’m going to try the other recipe. It look so good❤

      In real ramen shop, milk is usually not added in tonkotsu ramen, so please try it when you come to Japan. (Please ask stuff there just in case though)

      I used whole milk. But you can use non fat milk or some other kind if you want. Using soy milk would also work, I think.

    Love this video! Been wanting to make homemade ramen without so many of the extra days it takes for some of the broths haha 😅.
    Also I noticed at 12 mins or so you do what i believe is called a "cartouche". Seen it done once or twice at my restaurant but always with parchment paper. Basically just helps with keeping in moisture while boiling something.

      I think miso made from rice koji is most common and popular miso in Japan as it matches various dishes. I use it for everyday use (miso soup), and also used in tonkotsu ramen.

      I like to use miso with dashi for everyday use because it's easier and saving time. I often use it in dishes other than miso soup, as the dashi broth in it gives it a rich flavor.
      It is your choice, so any miso can be used with or without dashi.
