Secret to the CREAMIEST garlic mushroom PASTA!

- I don’t think there’s a time of the year I don’t crave garlic mushrooms with pasta. I come back to it time and time again for comfort and ease. Hunt down a selection of interesting mushrooms for this Creamy Garlic Mushroom Pasta recipe, they will add flavour and texture beyond anything you’d get from regular old button mushrooms!
You'll need:
4 Tbsp. extra-virgin olive oil
1 onion, finely sliced
50g butter, cut into pieces
500g mixed wild mushrooms, torn into bite-size pieces
3 garlic cloves, finely sliced
450g bucatini
50ml dry white wine
250ml double cream
Zest and juice of ½ lemon
15g Parmesan, finely grated, plus more for serving
Small handful parsley, chopped
Freshly ground black pepper

Added spinach and chopped green pepper and used milk with the pasta water to thicken rather than cream. Also had stir-fried beef on the side for my carnivorous husband. Big success!
Great tip on cooking down the onions, i do it every time now with most dishes and it makes all the difference.

This recipe is great! Our little family of 5 love your recipes and this one has made its way into the monthly recipe rotation! We didn’t have double cream/heavy whipping cream, so instead I substituted with a chicken broth-based velouté and added skillet-cooked chicken. With all hobs going, got it done less than 15 mins!

Loved it! Substituted white wine vinegar for white wine, cashew cream (3/4 cup cashews soaked in warm water for 30 mins, draining and grinding them with 1/2-3/4 cup fresh water) for cream; added 6-8 garlic cloves, zest of half lemon, and juice of half a lime!

Just made this tonight! Wow! So good. Used shiitake mushrooms and sliced them in four. Used a small amount of Heineken to substitute for the white wine. The shiitake mushrooms really soak up the 1/2 squeezed lemon. Incredible flavour! I'll have to work on my timing a bit better for next time as my cream really reduced or absorbed quite fast while the pasta was finishing up in the pot. Next time, a little creamier. Thanks for this awesome recipe. Trying to get more mushrooms into my diet on a weekly basis. This is a delicious start! Cheers!

As soon as I saw this video I had to make the dish for dinner. It came out great! Good idea to reserve some pasta cooked water in case sauce needs to be thinned out.

I made this but added some porcini powder cuz I wanted to up the mushroom flavor ante. It was delish!
I made it tonight. It was really good. I added a little bit more wine and one thing I highly recommend is adding fish sauce and a bit of sugar. The fish sauce really brings out the flavor.
The sauce came out the most delicious!

Those mushrooms will give nice umami flavors instead of using meat.

Very well done! I think this dish is originaly named "Pasta alla Boscaiolla" But Your's method with caramelized onion and the garlic put at that stage is wonderfull. Good Luck.

Just one thing about your chantarelle mushrooms: some of them have some darkened edges: you wanna cut that off!
These dark edges are going bad. And you don't want that in your dish.
(I have been learning to forage mushrooms for some 2 years now. From a certified expert. So I've learned to be picky about that.)

You twist the pasta to get it all into the water. You should leave it whilst cooking.

This came out excellent. As a complete beginner I was a bit bummed that you didn't mention how long the double cream should be reduced, and I might have gone a little overboard, but everything apart from that was fantastic.
add a bit of pasta water to loosen it up if you overreduce the cream.
Need to do this, plenty of wild mushrooms here in the swedish forests right now
