Ingredients -
For The Chicken -
2 tsp (10ml) - Olive Oil For Chicken Seasoning
8 - Large Chicken Thigh, Boneless & Skinless
1 tsp (2.5g) - Onion Powder
1 tsp (2.5g) - Garlic Powder
1/2 tsp (1g) - Dried Thyme
1/2 tsp (1g) - Dried Oregano
Salt & Pepper
1 Tbsp (20ml) - Olive Oil For Cooking Chicken
Creamy Garlic Mushroom Sauce -
1 Tbsp (14g) - Unsalted Butter
2 - Shallots, Finely Diced
300g (10.5oz) - Swiss Brown Mushrooms
100ml (100g) - Dry White Wine
6 - Garlic Cloves, Minced
1g (0.03oz) - Fresh Tarragon
3g (0.1oz) - Fresh Parsley
300g (10.5oz) - Thickened Cream
50g (1.7oz) - Parmigiano Reggiano, Freshly Grated
Recipe Notes -
This dish is best when fresh, as the cream-based sauce can potentially split upon reheating. If you wish to store it, it will last two days in the fridge. I don't recommend freezing it.
This recipe is fantastic on its own but can also be served with all your favourite sides, such as mashed potato, pasta, rice and a wide range of vegetables.
The fresh herbs are optional, as well as the parmesan cheese, but they add incredible flavour. They can be substituted for their dried counterparts if you can't source fresh herbs. Use 1 tsp of dried parsley and 1/4 tsp of dried tarragon. The tarragon can easily overpower the dish if used too much. You can always add but can't take out, so adjust to your liking.
Cream alternatives will no longer make this dish the fantastic recipe that it is. Without cream, you'll need to add flour as a thickening agent, ruining the sauce's texture.

I just cooked this tonight. Oh my Gosh, it is so delicious!! Followed **every** single ingredient! Except tarragon, cos I couldn't find it. Soooo yummy, the flavour is super intense! Served it with salad and mashed potatoes. And rice too, because my brother loves his rice and he absolutely, thoroughly loved it so much. Thank you for the recipe!!🤗🤗❤

Onion powder, garlic powder, dried thyme, dried oregano is always a staple in your recipes and its truly a GAME CHANGER in my cooking. Thanks for always having them in your recipes most of the time and as I’m glad I don’t have to buy it and only use it once or twice for specific recipe.

Very well put together video. The dish turned out great. My wife loved it. She was sous chef. I cooked in a large cast iron skillet which really retains heat so the chicken browned very nicely. I used wine and it reduced perfectly. Good show!

Really nice! I know you don't like cream alternatives in this recipe, but I like leaving the cream out and freezing the dish as thin flat slabs in freezer bags. When it comes to quickly preparing a work lunch, I'll break off some pieces, heat them in the microwave and then mix in some evaporated milk or pre-made bechamel sauce (which has Parmesan cheese in it as well) so it can be poured over reheated frozen rice.

Thanks for sharing this great recipe! I’m trying to be a better cook and this has been a great entry point. Ingredients are affordable and easy to find, it’s straightforward to make, it only needs one pot, and it’s delicious!
Because I’m lactose intolerant I sometimes skip the heavy cream and substitute it with more chicken stock with some extra Parmesan cheese. The broth ends up tasting similar to French onion soup, which is still pretty great!
Thank you for the recipe. I rarely comment on videos as I don't like to write anything negative. I loved this video because - (a) Wonderful recipe (b) It was to the point (no extra chit chat) and (c) Practical - not going overboard with too many ingrediants and (d) one pot. I am not an experienced cook, but feel inspired to try this recipe, so thanks again.

I make something similar but a couple of different herbs, no shallot and use coconut cream instead. I will have to try this recipe! Looks like a winner!!!!!

I tweaked this recipe by using chicken I'd already roasted. I used greek yoghurt in place of cream, chestnut mushrooms, then incorporated lemon tilda rice and petit pois to make a kind of risotto. We use grana padano rather than parmesan. Lemon, tarragon & sage are the obviously perfect partners to chicken. It was hands-down the best rice dish we've ever eaten! Thanks Chef Jack for the idea 👍👍

Made this tonight and it was a hit, even with the ones who don't really like mushroom. Our blended family is 2 X 57 year olds, a 35 year old, 3 x 22 year olds (triplets) and 1 x 19 year old so it's a major feat to make something everyone will eat!
