Hi Mary......I love your videos however, the background construction noise is very annoying. older people with any hearing impairment at all will not be able to take much of it. Sorry to complain because I love your videos. I believe this to be good advice and if I were you I would tell the carpenter to get lost.
I pray that way over billions of people join your cooking videos. Some videos assume you know what they are adding into the recipe and how much. For someone who does not have a clue about cooking is already lost. Happy I stumbled into your videos. You give very simple + clear instructions.
Just did this yesterday, and it's so easy! Mine took more than 6 hours, ended up leaving the ham hocks in all night to be fished out the next morning, but it turned out beautifully! Nice rich, gelatinous broth I'll have to make my navy bean soup in a couple of days. Thanks so much for teaching us how to do this. This is the "stuff" that improves our quality of life, regardless of the challenges of the day.

This is so handy, I bought ham hocks to make split pea soup! They’re quite meaty and reasonably priced, here. I always hoard my vegetables’ scraps, now, in my freezer in a container, just as you advised. My son loves the bone broths I make from your recipes!
Hi Mary, 😄😄 I just came back from the butcher shop and the grocery store, I got me some beautiful 👍smoked ham👍 hocks, I bought some pigs feets and pig tail😁 and I am going to leave everything in the Crock-Pot before I go to work, I will be back by 6 a.m. and my pork bone broth should be deliciously😊 ready. I remember my grandmother and my dad making it, but I have never done it, today will be the my first😄 time but I do remember that it 😳was delicious.

I love your videos Mary. You are so sweet and lovely. For your folks that use mason jars to freeze, place them in freezer for 24 hours with their liquid item in them with no lids on. This gives time and space for expansion and gets rid of pressure by the product and air. Put lids on next day after frozen.
I've been making gallons of this stuff since Christmas for Senate Bean soup (my favorite), Split Pea and Lentil soups. I also used the bone from the Christmas ham. 😁 Delicious!
Whenever my Mother in law cooked a pork roast My Father in law and I would enjoy the gelatinous broth left in the pan slathered on toast! It was delicious! I miss those days!

I've been watching Mary's videos for a while now. If you are like me and want the exact amount of water (and least amount of bone) use 2L water and 1 kg marrow bones. Everything else is 100% optional, but 100% enhancement

I know this is an old one but, 🤞I have discovered Pigs trotters and use them for my bone broth. I start with mirepoix and add garlic, ginger, chilli flakes, peppercorns, coarse salt & ACV. Cheapest cuts. Traditional pressure cooker. 2lt water. 2 hrs. I save the meat and bones that make up 4 hearty meals. The skin is like Jelly. Soo yum!

I have search your videos to see if I am missing something for pork bone broth....do I roast the bones before I start this? One of my favorite 'gravies' when I was trying to restrict my carbs was to reduce pork broth down to a thin brown gravy consistency. I didn't add my seasonings until I had it as thick as I wanted to serve it. Delicious.

2 hours on low pressure in the instant pot. If not smoked need to put in the oven like the beef. Don’t have to have the skin but more beneficial. Add vinigar 1/4 cup for 8 quart stock pot. Or fortified wine. To draw out collagen.

Hi Mary!!!!! Just checking up on you to see what you’re doing these days. Summer has passed and the temperatures are cooling off a bit in Carolina 😊. This is a fantastic recipe but from around this neck of the woods I would have to take a couple of the ham hocks and make a pot of large Lima beans and a pot of rice. I might have asked this before I found this video , but how do you make red eye gravy? Can you still do it the old fashioned way? I had some years ago, and have never forgot the smooth flavor.

Is too high of heat can break the collagen down, how does pressure canning the bone broth work? I mostly freeze my broths, but freezers are getting full around here 🤗 and I would like to can it and see how we like that.

I'm trying to find ways to reduce food waste in the home. What if I want to keep the veggies with the soup? I ask because throwing them out would defeat the purpose of boiling my left over bones.

While the collagen is good, I am worried about the saturated fat which is unhealthy. Could you advise on this please? I am concerned as I have high cholesterol. Thanks! 😊
Skim the fat off or use a fat separater.

Hey Mary. Enjoy your videos but I don't have room in my freezer to keep the broth and have always canned it. Does the extra heat destroy the collagen because it's not gelatenious after canning but liquid.

Can you Make any bone broth in the oven?
Hello Mary. I have made some of your broths and stocks and canned the stocks. I am seeing people make onion stock and tried it myself. I added whole onions rather then scraps and some green onions and garlic as well. My questions to you is have your tried it and if so can you make a video? Another question is I want to make garlic stock and wonder if you have tried that as well? I want different stocks for different recipes and for different reasons as well. I have not yet seen garlic stock anywhere and wonder if it is something that can be done safely for canning.

@@MarysNest I don't use vegetables when I prepare bone broth. Does that impact whether it will gel or not? I didn't think it would but that is the only thing that I don't do. My broth comes out watery and never gels.
@@anonymous6594 - No, the vegetables will not impact the gelatinous nature of the bone broth. The reason to add vegetables is to increase the mineral content of the bone broth. Hmmmm....I'm not sure why you bone broth is watery. Make sure you use high-cartilage bones like oxtails, knuckles, or patellas. And make sure that you do not add too much water. I have never used just pork skin… However… That said, I believe that in Chinese cooking there is a recipe for making a type of broth with just pig skin and it is supposed to be very good for you. So I would definitely give it a try. First of all, I adore you and think you are wonderful and a treasure
Now, to my question. Last night I did a very simple pork bone broth in the Instantpot (pork shoulder blades I had cut away from two pork butts, carrots, onion, celery, turmeric root, pepper, bay leaves, some fresh thyme, GARLIC and oregano) and cooked it for three hours plus natural release time. I strained and defatted as you usually do and then put it in the fridge not expecting much. it gelled magnificently, better than almost any of my previous bone broths. I'm using it today as an additive to my beef bone broth with beef necks, ox tails, leftover cooked ribroast bones and I'm doing it on the stovetop in a stockpot this time. Long explanation to get to the question, I know, but here is the question: Will the addition of the very gelatinous pork broth enrich the beef bone broth, or will the gelatin in the original pork broth just break because of the long cook time (12 hours)?

I would probably not re-cook the pork bone broth - which sounds like it came out like a dream!! You would risk the chance of damaging the gelatin which as of right now, sounds fabulous!

Hello! Would red wine vinegar be a good substitute for the red wine/ apple cider vinegar?
In my opinion...absolutely! The idea is to acidify the water. I have used several types of vinegar and they have all worked well.

nyslor1982 - When I made pork bone broth I used the smoked hocks (sort of like a “shank”). But I think you could certainly use the neck bones. For the hocks, I went a shorter time because they seemed so loaded with cartilage, I figured it would gel up pretty quickly but for neck bones, you could try 12 hours. How do the neck bones look? Do they have a good deal of cartilage? Are they also somewhat meaty? If so, you might want to brown them first. Keep me posted and let me know how it turns out. Love, Mary🤗
