actually jjajangmyoen doesn't have to be that oily!!! I was surprised when they added that much oil. If you make this please don't add that much oil. It will make it more unhealthy.
Yeah. I also thought that we don't need to deep fry the black bean paste. Anyway, I've tried using no oil at all. It works. I use water intead of oil. Moreover, I didn't put starch water. Instead, I directly boiled the noodle with the black bean paste. It tastes good.

It is Korean, it was inspired by Chinese dishes but the dish itself doesn’t exist in China. Yes they sell it at “chinese” restaurants in Korea but you won’t find it in actual China.
@@jwl00066 You're both kind of right. Halves of a whole story. It's inspired by Zhajiangmian, which literally means Fried Sauce Noodles. The difference between the two is that the Chinese version uses sweet bean paste while the Korean version uses black bean paste.

Last time I made it I just fried the cabbag3 with only 1 tbs of oil and then put the black bean paste and the water and it was great.
He poured the oil off, did you notice? Don't get too worried, some people use LARD!

춘장만으로 간을하면 아무리 잘 볶아졌어도 텁텁해질수 있어요 . 간장을 반드시 넣는게 좋아요. 면은 삶아서 찬물로 전분기 씻어낸후 다시 뜨거운 물에 담궜다 건져내야 짜장과 비볐을때 온도가 급격히 내려가지 않습니다 .
