I just made this during the crazy coronavirus lockdowns, and it’s SUPER GOOD. I didn’t have chicken stock or corn starch so I just used the water from boiling the noodles (which was really starchy) and added chicken bouillon cubes to it. Tastes better than having it in a Korean restaurant and was super easy to make. Thank you!!!

If yes, then I believe to make Jjajangmyeon you can't substitute chunjang with anything, even with chinese fermented black bean, it's just taste differently than anything else. Gochujang (red pepper paste) can be substituted by mixing couple of other ingredients, but chunjang is really one of a kind You could buy the Jjajang powder (and mix it with water) on amazon, the common one is Ottogi brand
You can make your own starch from potatoes. Requires only slightly overlooking potatoes, then jist strain it out and put the water in a container to let it separate from the MASSIVE ammount of starch. Pour out the water carefully and then take out the starch and let it dry or refrigerate as is. Boom, you have free starch.
For anyone wanting to get started in Korean cooking, I feel like this is the best dish to start with, right? My first time I made it with spaghetti noodles instead, and it was still really good.
I cooked this last week and my husband loved it. I couldn't get fresh noodle in my area but dried noodle was not bad. I also cooked 불고기, 뚝불, 안동찜닭, and Orange chicken. My husband was so surprised that his wife can cook haha. Thank you sooooo much for recipes!!
Today was the second time making this dish. The first time I did not have cabbage on hand so I used zucchini and pork. This time I used cabbage and chicken (thigh meat) and I like it with the cabbage and chicken much better. I also threw in a little left over squid. It was delicious! Your dish is now a permanent part of my dinner rotation. It also gave me the opportunity to dust off my chopsticks and use them again. Thank you so much for sharing.
Don't fret, use an array of "meaty" mushrooms (shiitake, oyster mushroom) and fried tofu instead. If you feel fancy, go buy seitan as a good meat substitute. I would add extra veggie stock powder to give it more flavour. Good luck!!

Made this friday. Everyone loved it!! The only differences is that we excluded the cabbage, used udon, ground beef and added sweet & sour sauce and hoisin sauce. We also didn't add the cornstarch water because me and my sister thought that the sauce was thick enough to our liking (kinda regret that now because halfway into eating it i was like hmm the sauce could be a bit thicker lol). But overall it as really good!!

Omgggggg I just made this recipe with the slightest variations (chicken instead of pork, veggie broth instead of chicken, and added potato) and it’s SO GOOD!! The rice wine made the most delicious difference... I didn’t even have to add sriracha because it was so flipping good and that says a lot hahah Thank you for sharing this!

Just finished my bowl. It was a big hit with my husband and kids. The only thing I did different was use beef and beef stock since that’s all I had to make it spur of the moment. Works great with rice noodles too!

Not really, you can easily replace pork with any other kind of meat (or no meat), can just exclude alcohol, and anything else. It's easy to adjust.
