I haven't eaten dinner yet & I'm so tempted to jump through my computer screen & steal that sandwich from you, or guilt you into making me one- LOL. In all seriousness, I found that the 'best' fried chicken is always dredged in buttermilk. I love the addition of potato starch. I use that in some of my recipes. I'll have to try it with my fried chicken. I was also trying to figure out how to make some good onions. Thanks for the tips.
Golden Balance, have you tried a Kiwi Nakiri for onions? They're so thin and sharp you get them cut with so much less onion juice in the air for your body to react to. Good luck!
Keep the root end on your onion while slicing it. I'm not sure what it is about the root end but as soon as you cut that end off, the tears start flowing.
Try freezing the onion for about 10 minutes to make it really cold (but not frozen), rinse the onion after you cut the top and bottom off to get rid of the onion juice and have a fan blow away the onion fumes 😬 no more tears 👍
