Having worked in restaurants and also had owned one myself through all of my 20s. This is a lot of hard work, commitment and passion. I can’t imagine doing the dishes at the end of the day is like for such a small place. To get all those preps done in 3.5 hours is also astonishing. Running a hospitality business regardless big or small can age you x3 faster.
Some people push paper and some push food. This is all what is called work. I worked for years in the restaurant industry sometimes 15 hour days putting my way through grad school, in every position from saucier to line cook to front of house to server. I tel my wife often how much i miss the camaraderie in the back of the house we had. . Ive longed for that for the past 12 years since i stepped away.

such hard work..If I go and eat at this place, I would really eat my food with gratitude and thankfulness in my heart...💖💖💖
You wouldn’t be disappointed either. The food is amazing. Wish someone would open a place like this all over the states.
I just can't get over the fact that how polite they are❤️❤️
Having worked in restaurants and also had owned one myself through all of my 20s.
For some people, it keeps them young.
Was just thinking this myself. Hats off to you as well as this restaurant owner and staff for the skill and dedication!
Makes me miss working in the kitchens when I was younger. Mom and pops restaurants are some of my favorite places to work. Some the most stressful but its up the owners to set the energy. Very nice. Keep up the great work!
I love the precision everyone has with their movements, done it a million times and not even phased by the cameras

these dinky little restaurants always have the best food. you can tell by the pots and pans alone that they've had a ton of customers over the years.
I'm self-employed. This triggered my ptsd. I felt like I worked all day watching this. I admire these folks for the obvious pride they have in their work. Hats off.
What I miss about Japan is that even a "simple" lunch is made of so many ingredients. It looks so good.
This deserves way more views!
こういう飯屋の動画結構見たけど仕込みから出前まで全部見れて一番見応えあるなあ
I lived in Osaka Japan for 5 years. Those day's were the best! I love the Japanese. Such a noble people!

Skill, art, and patience is what it looks like this takes. I want to learn to make authentic as this. This is amazing.
it's a shame they order in the udon, but it makes sense
i want to eat it
The Katsudon looks AMAZING!!!
駅前大衆うどん、すごく懐かしいですし、すごく美味しそうですね! It looks Fantastic and Tasty! 😄
The pride in their food and the process of making it is simply amazing!
Where is the clean kitchen pride at?
I love eating scallion and it's nice to see them washing them before cooking.
You know, there are a lot of restaurants that don't do that for saving time.
and i noticed they picked off the brown tips too. with these extra steps they'll never expand like mcdonalds (thank goodness 😀) i wonder who invented the green onion cutter, probably someone who had to cut a lot of them
Ewww who doesn't wash their scallion and pick off the brown tips before chopping???
@@honghanhpham *i* do it at home, but i wonder if it's done in businesses...
It got done at both of the Japanese restaurants I've worked at so yeah.
Quality first over here
It’s all so amazing! Their skills and products are so high-quality! I’ve eaten zarusoba, but never zaruudon, so that’s the one I want to try most out of this udon-ya (?)’s menus.
Also, the mixed rice looks like the most nice dish of its type I have seen, even comparing it to fried rice dishes. I really want to try it. Thank you to the proprietor, staff, and this channel for allowing us to see this! ❤️❤️❤️
Is it just me as I always feel calm and relax when watching video like this. Just a normal day and normal people do their daily job with so much passion and love. It is the exact definition of happiness.
The previous owner like many others live the phrase, "Age doesn't slow them down." The pride, passion and sheer will power they have is outstanding. Respect to the owners who continue the running of the restaurant.

I've eaten most of these dishes but never seen them made and they look as delicious as I remember...this seriously looks like a great place to eat !!
i love that the previous owner still works there
Fantastic , looks like father and son working in unison. Absolutely wonderful, its all about family and good food.

@@Soten_Bori I agree ☝️
24:25 lmao, they are legit using an abacus. That’s insane!
Almost all of their equipment looks well used, even the tables and chairs. Shiny new stuff might be nice but you can really feel the warmth and care from everything.
This place seems to be really organized. I can see he puts a lot of effort into the preparation of the food that goes into his udon noodle dish. I would love to try something like this one day.
i agree!
Waikiki has an authentic udon shop

you should go one day! some days when i was in japan i ate dinner 3 times a day bc the food is so good, and so much to try too
The food looks lovely, but what struck me more were the view we got of outside, with the scooter delivery. It looks so quiet and orderly, despite being in the middle of a huge city.
All there hardwork and dedication is commendable , the whole crew is so much dedicated towards their work
I'm so amazed 🥺😭 their dedication and how skilled they are, the process itself is almost perfect, even the details on the food ingredients, love it. Made me wanna come visit there someday 🥺
Yes it seems like people in the Japan don't just work, they make their craft into perfect skills.

大葉がふっと沈んだ後、パッと浮き上がったシーンが好きです。こちらの天かすも美味しそうだな。
What really amazes me watching this is the lack of shouting in the kitchen. Having worked in that kind of environment before, it's astoundingly quiet.

I don't understand a word of Japanese, but I enjoyed this video.
I have worked as a cook / chef several times here in the USA, and just looking at that food makes me want to take a trip to Osaka just to try everything on their menu. I can't imagine how good it must smell.
It's amazing, you should definitely experience it.
Bro actually it smells like chicken's ass. Just they change recipe while opening a store in the west. When you go to Osaka you'll find that whole this theatre is a two trick pony with a 1000$ bill in the end which doesn't worth even 10 bucks. Trust me pal, go to the burger king, go to Johny Rockets or 50's burgers and live your life out.
Their hardwork and consistency is what made me stay and watch the whole video. Mad respect.
This is so beautiful seeing how the food is being made by him, I love how Japanese cooks/chefs treat every food like it's their masterpiece! Much respect for him! Anyway guys, I'm going to visit Japan in the end of the year (hopefully the Covid is not that bad anymore so it's easy to abroad), and I want to know if it's easy/ difficult to find halal food like this in Japan? Thank you so much for the help! :)
Kyushu would probably be your best bet as they have a Muslim population there
Everything looks so incredibly fresh and tasty. The noodles and sauces looks perfect consistency etc. Artisan level. Wow. ❤️
One day I will visit your shop. I live on the other side of earth.
I love it. This is absolutely special.
Everything is so clean so fresh and I know it’s delicious one day I would love to go to Japan
@Ray El then what's your standard of clean
@Ray El he got covid paranoid the world used to be normal everybody working with their hands to do something like pizza but now since covid everybody wants gloves but is the samething and with gloves it's much harder to work and to clean them that's why we have the immun system

To be fair though there are actual rules to this stuff with the law and food safety.
People SHOULD use gloves, hairnets, masks etc when making food.
