As a German living in America never would I have expected Japanese bread to look so much like German bread! This gave me so many flashbacks of going to our local bakery as a child and getting treats out of the bake shop window behind the wife's back as a teenager when we were still out in town center on a Saturday morning ☺How I wish I could taste one of your breads! Our baker used to make his breads the same way you do, but when he became ill and his daughter took over she modernized and changed recipes to save money and work more efficiently and nothing would taste the same. The way this young gentleman makes bread is almost a religious experience. So meditative and absolutely beautiful. He treats every step of the process with respect. There is true love and care in what he does. I’m very sure the bread he makes and bakes taste delicious. Thank you for this video.🙏🙏🙏

I grew up in Hawaii and never knew about artisan bread. When I graduated high school I joined the military and went to Europe for three years. There I fell in love with artisan bread and other hand made breads. I’m in my fifties now but I wish I had learned about this type of bread making process when I was a kid. I would love to have a job like this. Making bread by hand and having a small bread shop. These days I’m unable to physically work like he does. But I would have loved and cherished a life like this instead of the one I have lived so far. Beautiful work. I would love to try each and every one of these beautiful types of bread.
I am fascinated by what I have just seen. I grew up in Europe and was practically raised on rye bread which I still love, in my old age. Now I live North America and when I see this master baker Koki Ota how lovingly he makes and creates his bread, I am filled with feelings like amazement, envy and sadness at the same time. I am amazed by this baker's lovingly made products, envying local people who have access to this baker's products and I am really sad that I am not one of those people. Master Koki Ota (and I mean Master), although we never met and most likely never will meet, you have my respect and I wish you many years of success.
Rye bread is THE best for sandwiches. And gotta have the caraway seeds too. Get yourself a Rueben sandwich on rye with some thousand island dressing and you’re in heaven.
Greetings from Taiwan. The skills of this baker are incredible. To do this all by hand with nearly no electricity is amazing. I love how he effortlessly spoke to his neighbor in French. I travel to Japan often and hope to visit this beautiful bakery in the mountains.

Respekt!
Traditionell gebackenes Brot - lecker! 💪

Such dedication. He obviously has been doing this since he was a child, and enjoys the quiet and solitude. His bread baking is true art. Where I live, we have a small baker's shop where he does the same type of bread, in a wood fired oven, etc. He's only open one day a week for 4 hours. There is no bread made anywhere that tastes better than bread in a wood fired oven. What a joy to watch this man do his craft. I just wish I could enjoy some!!
He uses French methods, even materials such as the canvas where he places the loaves and how he weighs them, using fabric covered baskets to mold them, etc. It's exactly how we do it in France traditionally.
Absolutely one of the best educational bread baking channel’s out there. As a bread baker myself I was so thrilled to see this one man accomplish baking bread without any help. Wonderful video. I really appreciate all the work that this man does to make his bread, from the milling, to the hand mixing, proofing, and finally forming and baking the loaves. They are beautiful! Wish I lived near enough to have some of his all natural bread!
What a delightful time I had watching this. I was a baker myself, it was during a break in my career, wanted to do something different, and ended up doing the training and started a job as an overnight baker. Just seeing myself involved in the process from the ingredients to seeing your product being sold, it's been so far one of the most fulfilling experiences I had in my life.
I've spent the last few years teaching myself how to bake bread. As a professional, can you explain to me why he's firing the loafs so hard? And the way he's kneading the dough into itself caked on with flour surely shows that in the layers, I've done this myself countless times. Am I missing something?
Watching this young man, 1st blessing his bread before he started and then watching him doing everything by hand, transported me back in time 30 years when I was just learning on the job in a standard small restaurant, baking through the night. I would have loved to experience the joy of making traditional wood fired bread with this gentle young man 🙏 😇 ❤️ 💙 💜 💖 💗 💘 ❤️ Thanks for sharing this beautifully made video with the world. This baker is so admirable. I hope the locals realize how fortunate they are. He is a true artist! Wish I was there to buy a loaf. And, with 3.5 mil views, I hope the Food Star channel gifts him from the revenue. After all, he IS the star of the show. ✴
Fantastic! This is how bread has been made for hundreds if not thousands of years. A millstone and a primitive oven with a lot of elbow grease is all it takes. Absolutely beautiful and peaceful to watch! My prayers to you and everyone who stumble across this comment. I pray for peace and joy in the hearts and minds of anyone who may be struggling somewhere in the world today and ask for mercy and grace for us all.
Im in the U.S. and have only seen this type of bakery in videos or movies. I had no idea that their are some still open today. I've seen other videos claiming to do the same as this one but don't. I must admit I dont usually watch baking videos unless its to get a recipe, but found myself mesmerized by his work ethic, calmness and his skills that are second to none. I watched the entire video and couldnt take my eyes off it. It comes across clearly that he loves what he does, does it flawlessly, all by hand too. And that oven, wow, what an amazing place to cook and work. My mouth is watering just thinking about the gorgeous loaves of bread. Ive tried my hand at baking but never got to even my mother's level, after seeing this I get it. It takes a special kind of person who can put this level of effort and love into baking for it to come out so perfect every single time. Thank you for sharing this, as it has made my day and taught me alot at the same time.

I worked exatly like that in a French bakery in the mountains decades ago. Organic stone-milled flour, mountain river water, sourdough, wood oven. Everything he does on the video is totally familiar to me. We made couronnes, too. A tip: if you make the cut at a 45° angle it opens in the oven in an even more beautiful way. Unbelievable this is in Japan! Keep up the good work!
I didn't realize all of the little rituals I was taught when learning to bake were universal: the prayer before beginning, starting the fire with wheat grass (or as close to it as you can get), marking the wall with wheat to dedicate the space, etc. Thanks for sharing the connections between mindful bakers across cultures.
Total admiration and respect for the craft of this baker. People who live close by are blessed. There is no time lapse but to make this kind of bread requires more then 24 hours, probably 36 or even 48 hours. If the cost of the bread is less then €10 it is cheap. I like the way he doesn't compromise by making the kinds of breads (curry, sausage rolls, etc.) that seem to be expected of most Japanese bakeries. He's sticking to authenticity in the type of bread he WANTS to make, and apparently has gained a robust following as a result. (Kyotango in Kyoto Prefecture is known for its wealth of independent artisans and craftspeople, so I guess this makes sense.)
@@haohan1847 the bread he makes is not just bread , cause of using sourdough it is high on minerals, vitamins and antioxidants , we don't have in other bread. And it increases the bloodsugar much slower so it's better for diabetic people also it satisfies hunger longer

That is what they call ppl like him in Japan, folks who owns their own restaurant or bakery: masters

These were the most rewarding 41 minutes this week. I'm making my own bread since a few years, but seeing a master at work is just enjoyable.
Hello from South Australia 🇦🇺 the only thing wrong with this lovely video is that it doesn’t come with ‘smell-a-vision” 😊 can you only imagine what delightful smells come from this quaint bakery! Thank you for sharing with us 🙏
Every bread gets his extra care, and the final quality approval. I enjoyed this craftsmanship video sooo much. I am lucky to have a French Bakery across the street, which also delivers handmade bread for us locals. Thank you from Australia, Melbourne 28.04.24

True definition of an Artisan. So methodical it's become mesmerizing to witness from fundamental production to completion. It's hard not to appreciate someone who takes this much care into their craft. Food is love, and this proves it in its entirety.
Quite hypnotic to watch.

The way this young gentleman makes bread is almost a religious experience. So meditative and absolutely beautiful. He treats every step of the process with respect. There is true love and care in what he does. I’m very sure the bread he makes and bakes taste delicious. Thank you for this video.🙏🙏🙏
i thought he looked miserable and grumpy. also, all food sellers i know and love, enjoy selling their hard work and seeing the joy on their customers' faces. the fact that he cannot even sell his own bread is a red flag to me. i hope his mental health is good.

Thank you again for letting me re-leave few minutes of those magic moments… I can almost smell the hot breads coming out the wood oven. Stay safe and happy , greetings from Canada 🇨🇦 R.Morretti
Wonderful to watch this young man’s work ethic in creating fresh bread from scratch- what a lucky community to have him.

You are so right. Reminds me of the Bakery in Germany where I grew up.

Bin selbst Bäcker. Bewundernswert, was er da macht.
Traditionell gebackenes Brot - lecker!

It says in the video description that he traveled to France to learn this skill, then return to Japan to run his own bakery.
Well Said!!!
He uses French methods, even materials such as the canvas where he places the loaves and how he weighs them, using fabric covered baskets
to mold them, etc. It's exactly how we do it in France traditionally.
Me too!!

I would have loved to experience the joy of making traditional wood fired bread with this gentle young man

Lucky you! Do you think that your former bakery is still operating? I'd be interested to know more about it.

My biggest takeaway from this video is how he is doing this without music or podcast going. Staying present while on task is very inspiring.
I respect this guy greatly, from firewood to baked goods, amazing, good work sir!
It's good to see a japanese bakery that makes bread instead of cake disguised as bread
since he is a one man show, i dont think he can afford to make fancy breads even he wanted to. his operation is already very lean and you can see it takes him a whole day to do it. a helper has to service the selling and delivery. i dont think it is about compromise at all.
accurate. Bread is mediocre over there, compared to all else there. I want to go to this town now
