The food quality standards are among the highest in the world in Japan. I'm a rather picky eater, however I'm inclined to agree. A lot of what I see from these videos looks really appealing quality wise. Buckwheat noodles are extremely tasty, not to mention highly nutritious.

You couldn't get that for twice as much in most euro cities either, but we are slowly getting more Asian cuisine for much more reasonable prices now outperforming even Kebab's and Bakeries. As a local German I got lucky with a what I consider a perfect restaurant recently very close to me. I'd prefer Japanese but we attract Vietnamese and Taiwanese chef's and their families a lot more due to social policies developing after the war with the following soviet occupation and their preferred immigration changes. Hoping for my relatives in the US also since all four children love Japanese cuisine, especially sweets which I regularly snatch from them when Christmas comes around. 🎄

I hope his restaurants continues to prosper. As someone who just recently visited Japan, I loved going to these smaller noodle shops. They were always better for the most part than the more well known tourist spots.
This Place sadly looks very messy, rundown and not clean at all. it would been shut down by regulations here already. Would be better if they could skip leg day from time to time to clean the place or do some renovations. But its rural japan so no one cares and no money for it i bet. The food looks good and has some craftwork to it.
For me, Japanese food is too "blank" for my taste. My problem is that I can't eat any product from the water, so of course in Japan I don't have much left... Italian, Greek, Indian and of course my lovelty French are the most suited to my tastes. Food tastes is very personal. If you take French food, it's so ‘overrated’ by foreigners that a lot of bad restaurants have sprung up all over the world, and for foreigners it's very difficult to find real French restaurant/tastes, even in top restaurants (just go out of Paris, it's the same in every country, for the best food, leave the capital!) The Italians and Greeks are more family-oriented and very friendly.

I thought of this fast-paced life where quickness is often rewarded, compared to the slower pace of this woman, who carefully slices the burdock root. This is love! A meal that to me would seem like a chore, is made loved by time and devotion... The bond between mother and son, being able to watch them work side by side in simplicity together... The food must be incredible, I would fly just to sit down in the shop! Amazing sincerity from this family... to have a bite of the mugwort noodle!! Wow. I wish them continued success and contentment.
