Hokkaido milk bread would be great! The tanzhong method makes every bread so fluffy
I recommended using the inside or outside of a Bundt cake pan in the last episode to make the mountain bread. But anyway, maybe now you can consider my other suggestion, making Italiano Stromboli. You take the ingredients for an Italiano Sub and bake them into a Delicious Stromboli. 😋 It would be perfect for your Bread Challenge ❤️
1. I think Azuma used a complerely different dough for the ball
2. Try heating your pan first, then take it out of the oven and flip it. It may be easier to stick the dough ball and bread to the bottom of the pan if it's hot and currently upside down on the table/countertop.
3. The naan dough might need to be a bit more wet? Remember he tried doing this with a shorter timeframe so it may not be as "doughy" as it should be?

Oh my gosh, that was my suggestion! Now that I've seen it in action, I think I see the flaws in that. Your right! The middle dough needs to be thicker. Maybe just give the outside a tiny stretch and let gravity take over for a minute or two 🤔 also, there needs to be a binder to make the top stick, and with all the oil, the only thing I can think of is maybe a bit of flour? If you flour the bottom of the top and give it a few minutes to bind, it might just work. Ah! Good luck!
Oh gosh, I forgot to mention, perhaps flattening the top a bit so the top dough can rest and combine with the bottom properly
Why don't you try making our Indian rotis. They are a type of thin bread and they are super easy to make . You can find plenty of roti(রুটি) recipies on many Indian, specially bengali cooking channels . They go so well with milk or any type of curry.

I was watching the intro and it reminded me of the anime but I thought it was just a coincidence until you actually mentioned the anime. Kinda crazy lol, anyways I hope you get it next time! I also wanna say after seeing you mention sinigang so much (awhile ago but still) when I saw the soup mix at the store I picked some up to try! It really is sour it's so interesting I liked it alot. The powder before dissolved reminds me of popcorn or snack salts that are flavored so thank you for introducing new foods it makes me want to try more things

Pre cooked it and make sure it's still soft, and sit it on top of a mountain shaped foil tlime what you did here, and bake it until crispy, because as i remember that episode azuma made this naan, it is crispy as he mention
As for your question at the end, I think most people would advise you baking it on some metal, cone shaped tool so that the bread would look prettier, but A, I’m not sure what kind of tool would be like that, and B, I think I prefer the heterogeneous texture the foil gets you. As for the top, I say treat the little slab of dough like tiny pizza dough. Just hold one end in the air, lets gravity slowly stretch it out, and turn it around. It won’t stretch to thin, and you can just drape it over. Try it for another day though. Wouldn’t want you to flood your bread streak with just this recipe. Keep up the good work. 😉

To make mountain shaped bread you could yous a giant cupcake tin. The top half as a mould would definitely be sturdier than foil.
