Yeah, I remember that, too! At some point, the layers became so dense that it had more of a cake-like texture or something? Not bad, but not a croissant, anymore. I forgot what the ideal number of folds was.

Oh man, I was rewatching Yakitate Japan and had a conversation about the show with a Japanese friend of mine. She said back in the day when the anime was airing on TV, they would sell the breads from the show in convenience stores for about a week until the next episode’s bread shows up. Got me real jealous bc as a kid, I really wanted to try some of the breads they were making in the show.
I’m so happy that this anime got a second life. I watched this when I was a preteen. It taught me loads of food science + Japanese culture. Even though it may all be entry level little tidbit knowledge, this anime made me explore more of both Japanese culture and cooking, well into adulthood.
They don't actually have recipes despite being cooking series, it was meant to be parody of those other more "serious" cooking manga anyway so most of those breads aren't replicatable irl.

A lot of the ideas said people used are...deliberately bizarre or envelope pushing for flash and flare but the techniques and mechanics behind baking are legit.

It's so refreshing to see on camera talent giving credit to the people behind the scenes like what happens on this channel. I don't think I've seen it on any other cooking show/channel (at least to this extent), but it should be done more often elsewhere! This is one of the many reasons I love watching this channel!

I learned a ton of cool techniques from this, thank you! Whipping the flour into the butter block and the indents when rolling out your dough are both brilliant, intuitive, and not something that I'd ever have thought of from the savory side of things.
I was actually quite surprised to see the butter whipped with flour. This way is normally used to fold the "French method" (it's basically the other way around. The butter is encapsuling the dough) but for this method (called German method) it's not necessary at all. What's most important is the consistency of butter and dough. (They should be of the same consistency). But oh well I should try one time.
Yakitate is the manga i used to read when kids and now i became baker because of it, i ask my ex pastry chef when i started working as baker that it is possible to make 300 layer of croissant, he said possible but is hard because if ur not careful the layer will be broken and hes not reccomended it so i never make it. But man you made it and makes me want to read the manga again and try your method. Thank you

As a guy who loves making home made pastries, I could guess from the clip already the creator of the anime never stepped into a kitchen. There's a point when you fold the dough and the butter layers are too thin to break apart and then melt together, that croissant would have zero layer division and pretty much would be a waste of effort.
Afaik the creator did consult with a professional baker most of the time, but yeah that croissant was just fantasy. Then again, this is also the same anime where warm hands are a superpower for better bread making.
@@Dalehan Yeah, animes/mangas won't be and shouldn't be as realistic as real life because it would be boring but there is definitely some realistic stuff since the creators know what is realistic and what is not. To be honest, if they show only bakes normal stuff I wouldn't even watch it but I do think that some of the recipes could work but I'm not a baker. One thing I couldn't understand tho is how the mc beat the yakisoba dude by flattening the bread, but then again, it's been a very long time since I watched the anime so I probably forgot some details.
Alvin should try out some recipe from the "I Love Curry" manga. there are some great ones in there (they always have the recipe from the story at the back of the comic)

As a guy who loves making home made pastries, I could guess from the clip already the creator of the anime never stepped into a kitchen.
There's a point when you fold the dough and the butter layers are too thin to break apart and then melt together, that croissant would have zero layer division and pretty much would be a waste of effort.
Afaik the creator did consult with a professional baker most of the time, but yeah that croissant was just fantasy. Then again, this is also the same anime where warm hands are a superpower for better bread making.
@@Dalehan Yeah, animes/mangas won't be and shouldn't be as realistic as real life because it would be boring but there is definitely some realistic stuff since the creators know what is realistic and what is not. To be honest, if they show only bakes normal stuff I wouldn't even watch it but I do think that some of the recipes could work but I'm not a baker. One thing I couldn't understand tho is how the mc beat the yakisoba dude by flattening the bread, but then again, it's been a very long time since I watched the anime so I probably forgot some details.
Alvin should try out some recipe from the "I Love Curry" manga. there are some great ones in there (they always have the recipe from the story at the back of the comic)

That said, you’re doing it wrong. They were very clear in the show that you have to work the dough with unusually warm hands, none of this chilling lark
