    It’s called the Leidenfrost effect. The pan is so hot that it creates a layer of steam at the bottom of the droplet and it causes stuff to glide.

    Fabulous trick with that stainless steel pan. We have a nice Cuisinart that I very rarely use because of the sticking thing. Now I’ve been schooled. Thanks! Game changer 🙂

    I love using stainless steel pans as well. They work great, I guess the temperature was just an instinct thing for me, as I have been cooking for many decades. I also use cast iron, which I love as well. Thanks for the great vid and the info.

    Your characterization of "stainless steel pores" is incorrect. You observed the Leidenfrost effect on the water, which is purely a function of the temperature of the pan.
    The oil you added prevented the food from sticking.

      Yes, and with that it's not just any oil but a very hot oil, which creates an instant crust on any food it touches and prevents it from sticking.

      *Kim* Yes...great tip! To clarify though, once the pores close back up and it's gone thru the heating process, they will *STAY* closed should you not place food in the pan right away while the pan continues to heat a bit further?
      You seemed to indicate there was just this small window of time, and then too...there will be foods that do *NOT* require the high heat, so if the pan heats *UP* to make ready for the food, the pores open back up should the heat decrease...correct?

    Accidently came across your Bok Choy recipe as I have some to cook, but mine is washed and chopped ready to cook, have not cooked yet but so impressed with your tip on stainless steel pans as I to love to cook in stainless steel, shall defiantly give this tip a try.

    Very cool. I’ll be trying my bok choy like this tonight. Thanks so much for the tip about stainless steel cookware! 👍🏻 I always avoided my big stainless steel pan and now I can’t wait to bust it out!     Thanks for the stainless steel tip. I switch to stainless years ago and have had great 'luck' with it because (this is weird) I can usually tell when the pan is ready by the way it smells.

    For anyone with inflammation or chronic pain it's best to use Avocado Oil, Extra Virgin Olive Oil, or Virgin Coconut Oil. These aren't high in Omega 6 like any of the vegetable oils so they won't induce inflammation! 🤗
