It’s called the Leidenfrost effect. The pan is so hot that it creates a layer of steam at the bottom of the droplet and it causes stuff to glide.
It's common knowledge, calling someone "Mr science" because they know what the Leidenfrost effect is, is like calling someone Einstein because they have heard of black holes.
Hitman- that was compliment. Don’t sound so snobby. Not everyone knows what you know.
@saint3211. It was a cute compliment in fun. And not everyone knows about this tip and what's it called.
Honestly it's not that serious. Sheesh 🙄.
@katemiller7874. For real.
My favorite part about this video is your scientific explanation about the metal pan and the appropriate time to put food in so that it will not stick. I appreciated the water demonstration as well. Thank you for sharing this video. You gained a subscriber.

Yay! So glad it helped Mitch! Thank YOU for watching!
Your characterization of "stainless steel pores" is incorrect. You observed the Leidenfrost effect on the water, which is purely a function of the temperature of the pan.
The oil you added prevented the food from sticking.
Yes, and with that it's not just any oil but a very hot oil, which creates an instant crust on any food it touches and prevents it from sticking.
I was surprised to see of a chef that didn’t realise that oil was what made the veg not stick.
Oh shut up
i want to try this. thanks for sharing!
Hope it turns out great Marlon. Thank you for watching and commenting!
I never knew this trick about stainless steel heating, Thanks!!!

Thank you so much for watching Brigitte!
Very impressive! I knew about the stainless steel tip but most cooking videos don't bother educating people on that type of information. That makes me want to watch more of your videos. Thanks!
Thank you SO much! I'm so glad it was helpful and thank you so much for watching!
*Kim* Yes...great tip! To clarify though, once the pores close back up and it's gone thru the heating process, they will *STAY* closed should you not place food in the pan right away while the pan continues to heat a bit further?
You seemed to indicate there was just this small window of time, and then too...there will be foods that do *NOT* require the high heat, so if the pan heats *UP* to make ready for the food, the pores open back up should the heat decrease...correct?
Everyone knew exactly what NoSoldat4u meant.....why did you feel the need to correct her? Does it make you feel superior?
You should not use UA-cam cooking shows to learn about science or you too will believe this BS
Great tips
Thank you so much! :)
Wow thanks for the tip!!

You're very welcome Daisy!
Daisy, did someone *STEAL* the *E* from the 'steal' and replaced it with an *A* ?..but then the thief was considerate to give you an *I* ,right *CHIEF* ?
"Steel".... not steal.
Also *CHEF* NOT chiefs...

Thanks for watching!
Accidently came across your Bok Choy recipe as I have some to cook, but mine is washed and chopped ready to cook, have not cooked yet but so impressed with your tip on stainless steel pans as I to love to cook in stainless steel, shall defiantly give this tip a try.
Thank you so much for watching Judy! You can still make it with chopped Bok Choy, using the same seasonings and making them in a standard pan. They'll be ready a bit sooner, so don't leave them in the pan that long. I'm so glad the video was helpful!
Thanks for sharing your recipe
Thank YOU for watching and commenting! :)
Very cool. I’ll be trying my bok choy like this tonight. Thanks so much for the tip about stainless steel cookware! 👍🏻 I always avoided my big stainless steel pan and now I can’t wait to bust it out! I don’t cook with oil and I use water or veggie broth to keep things from sticking and it always worked except for my stainless steel pan. Great video. 🙏🏻🌱
Thank you so much for watching! :)
This recipe was quick easy and delicious. 😋
I'm so so glad! Thank you for watching!
Well done! Big fan of Bok Choy and this looks like another great way to cook it. Loved the "water drop" pro tip. Thanks!
You're so welcome! I hope it turns out great :) One of my favorite veggies!
Thanx! Very useful!
Thank YOU for watching Ana! :)
oh my god that stainless steel advice !! Ive always hated cooking with teflon pans and now i can use stainless steel for everything. Thankyou so much.
You are SO welcome! I love stainless steel, I've had this pan you see in the video for YEARS and it still works just as perfectly today. I hate how often you have to replace teflon. Thanks for watching!
Thanks for the stainless steel tip. I switch to stainless years ago and have had great 'luck' with it because (this is weird) I can usually tell when the pan is ready by the way it smells.
Glad you're enjoying cooking in stainless Lisa! Thank you for watching!
Thank you for the tips about the steel frying pan, I was about to throw that thing out 😅🙏🏻 and the bok choy 🥬 was delicious 😋

Bok choy is the best! Glad the video was helpful and thank you for watching!
Great video!! 💕
For anyone with inflammation or chronic pain it's best to use Avocado Oil, Extra Virgin Olive Oil, or Virgin Coconut Oil. These aren't high in Omega 6 like any of the vegetable oils so they won't induce inflammation! 🤗
Thanks for sharing! :)
