Yes take note that Deronda is using baby bok choy. Much larger bok choy needs to be cooked under a different process.

I noticed you cut off the bottom of the bok choy once to separate, cut another inch off to separate some more, and then after cleaning you cut off the ends yet again. It occurs to me that if you just cut once a larger portion off the bottom, that you wouldn't have as much grit to clean off. But that is the lazy part of me trying to find shortcuts.

Ty for cleaning the bok choy. I’ve watch so many other videos where they just cut it and dump it into the fry pan to cook. All I can think of is how much grit they’re cooking. Yuck.

Well, you should call this Lemon Bok Choy, you put a ton of lemon in it. I've never seen anyone use lemon before, this is not traditional bok choy, it's American style. You are not supposed to add salt to extract the liquid from the bok choy. You'll make it go limp. It's not spinach. Don't do it. Add salt after it's ready, just before you serve. Or add a tablespoon of soy sauce and oyster sauce to finish it up for a more traditional stir fry bok choy.
