      Simnett Nutrition , a tip when cooking with tofu when you use it in stir fried!! You should lightly fried it so it will keep it shape when you fried it with vegetables.If you like to add the crispy into your dish , you should fried until it became golden brown and add it last when you finished cooking the rest of your ingredients.

      You're right. People out there, keep eating vegan (mainly healthy food) and after a while you'll crave for veggies. I never thought that my I could crave for carrot with hummus, but I now do.

    Bok choy side dishes have always been my fave when going out to eat at places that do serve it. I decided to start buying and cooking it at home, now I have the bonus knowledge of knowing it's actually a great source of vitamins that I need in my diet!

    Awesome! Cruciferous veggies also are a good protector for women as they fight estrogen dominance conditions, and help protect against ovarian and breast cancer :)

      It's great mixed into an oil-free stir fry. It is a slightly bitter green, so it pairs really well with soy sauce or teriyaki sauce. Chop the white part into cubes and add it to the pan, then shred the green part and add it towards the last two minutes of cooking. Happy cooking!

    I've had some bok choy in my fridge for a while and finally used it tonight. I was inspired by your recipe, but made some changes based on what I had available. Tofu, bok choy, onions, carrots, red cabbage and broccoli with a teriyaki/peanut sauce. With 3 awesome brassicas, I'm calling it my crucifer-RICH stir fry. Thanks for the inspiration and fun facts!

    Bok Choy is my absolute favourite vegetable- not even kidding. My favourite is the shanghai version- and you're right, it's really under used. I actually had to go all the way to the asian market in Calgary to get some because no one in my town had any.

    pak choi is the name commonly used in the UK, while bok choy is the name commonly used in the US

    When I was breastfeeding I was eating bok choy with butternut and a little honey as a snack made lots of beardless sandwiches with it. Now I have it in mostly smoothies warm/cold salads going through a big head a week or a bag of small ones.

    I love to put pok choi in a simple salad instead of lettuce, gives the salad more crisp and more distinctive taste. All the vitamin C saved! 🙂 Thanks for the video, great content as always.

    So many uselful information! I finally have an explanation for my yellow skin. My relatives were so worried, because like you say, no one eats so many beta-caretenes from plant foods, as us whole food vegans! My doctor sent me to ultrasound, dermatologist, hematologist, everywhere, but everything was NORMAL! I started to thing I'm subclinically deficient in B12 for some reason (despite takih 100mcg cyanocobalamin 2x daily). Yeeeez!

    I made this dish with the sauce for me and my husband for dinner today. Oh my gosh, I can’t tell you how much we loved it! The only tweaks I did are as follows: adding mushrooms and garlic to the stir fry and leaving the garlic out of the sauce. We prefer garlic cooked, so I did it that way. Anyway, the meal was so amazing. It will now be one of our go-to favorites. Thanks for all your cool recipes and tips for those of us working on eating whole foods and lots of plants. You and Crystal are great!

When I get in bed, I search for a video I haven't seen before so that I can probably have the meal the next day. Omg Derek, I have SO enjoyed your recipes!! I specifically looked up a video with bok choy and made it today ( used tahini cuz I didn't have peanut butter) but I had most of the other items you named!     I eat a lot of Shanghai bok choy - 1. cut into quarters 2. fry (or water fry) 3 cloves garlic for 1 minute 3. add all the bok choy with a tbsp or so of water and some iodized salt 4. Cook for up to 3 mins (just until stems are slightly translucent). Serve on rice with your favourite tofu or beans. SO YUM!

      I often add thickly cut mushrooms and bell peppers to the garlic stage and cook for a couple mins. SUPER YUM!

    If your city has an asian food store, buy your Bok Choy there. It will likely be cheaper and more fresh. Also, asian stores will have a wide variety of green veggies you've probably never tried before, like gai lan or chinese kale which also has omega 3.

    I just started wok cooking and just discovered Bok Choy 🥬! It is so tasty, along with mushrooms and bean sprouts, stir fried, I could literally go full on vegetarian 🌱!!! This should be a great step in the right direction for weight loss too!

    Bok Choy is so easy to grow. It comes to maturity super fast in my fall South Carolina garden. Can withstand frosts. Your recipe was delicious.
