Bok Choy Is AMAZING & Why You Should Eat It (with recipe)

  • Bok Choy is an incredibly healthy but often under utilized vegetable. Being high in calcium and low in oxalates makes it one of the best sources of calcium and other minerals. Just two cups of cooked Bok Choy contain almost half your RDI of iron and more protein per calorie than black beans! It also contains one of the most powerful anti-oxidants found in food called Sulforaphane that helps to fight cancer, prevent memory loss and protect our DNA.

    SAUTEED BOK CHOY WITH TOFU
    4 cups bok choy, chopped
    1/2 cup chopped onion
    1/2 block tofu, cut into chunks. (You can sub cooked/canned beans or another protein source)
    Sauce
    1 tbsp chopped ginger
    1 tbsp peanut butter
    1 tbsp ACV
    1 pitted date
    3 tsp tamari
    1 garlic clove
    1 tbsp flax
    2-3 Tbsp water. Use more if needed.
    I like the sauce thicker, but you may like it thinner. Have fun experimenting but remember, if you can always add more water, but not take it away!
    Saute chopped onions and tofu chunks on medium heat. Add water to prevent sticking. Sauté for 3-5 minutes until onions cook through and become soft. In a blender or magic bullet, blend all sauce ingredients together until smooth. Add sauce and bok choy to onions and tofu and sauté until bok choy is soft. Serve hot and enjoy!       Simnett Nutrition , a tip when cooking with tofu when you use it in stir fried!! You should lightly fried it so it will keep it shape when you fried it with vegetables.If you like to add the crispy into your dish , you should fried until it became golden brown and add it last when you finished cooking the rest of your ingredients.

      You're right. People out there, keep eating vegan (mainly healthy food) and after a while you'll crave for veggies. I never thought that my I could crave for carrot with hummus, but I now do.

      It's great mixed into an oil-free stir fry. It is a slightly bitter green, so it pairs really well with soy sauce or teriyaki sauce. Chop the white part into cubes and add it to the pan, then shred the green part and add it towards the last two minutes of cooking. Happy cooking!

    Bok choy side dishes have always been my fave when going out to eat at places that do serve it. I decided to start buying and cooking it at home, now I have the bonus knowledge of knowing it's actually a great source of vitamins that I need in my diet!

    I've had some bok choy in my fridge for a while and finally used it tonight. I was inspired by your recipe, but made some changes based on what I had available. Tofu, bok choy, onions, carrots, red cabbage and broccoli with a teriyaki/peanut sauce. With 3 awesome brassicas, I'm calling it my crucifer-RICH stir fry. Thanks for the inspiration and fun facts!

    I made this dish with the sauce for me and my husband for dinner today. Oh my gosh, I can’t tell you how much we loved it! The only tweaks I did are as follows: adding mushrooms and garlic to the stir fry and leaving the garlic out of the sauce. We prefer garlic cooked, so I did it that way. Anyway, the meal was so amazing. It will now be one of our go-to favorites. Thanks for all your cool recipes and tips for those of us working on eating whole foods and lots of plants. You and Crystal are great!

    Thank you for another educational video! I am Chinese and a very common Cantonese dish is to have it sauteed in a little oil and garlic and then topped with a few pinches of salt. Also works well in soups like to you said with some tofu - it's the bomb!

    This was awesome!
    So easy to grow, too!
    I bought a packet of mixed seeds called "asian greens" & it was by far the best and easiest crop I've grown, alongside English spinach.
    Kale is also easy to grow but it attracts a LOT of bugs; bok choy/pak choy and other asian greens DON'T bring bugs in to anywhere near the same degree!
    They also go great in a smoothie raw ❤ thanks Derek!

    Bok Choy is so easy to grow. It comes to maturity super fast in my fall South Carolina garden. Can withstand frosts. Your recipe was delicious.

    I love this series!! I also love Bok Choy and I use it all the time! I don’t know if any one else would be interested, but would you consider doing a video on molasses?? I feel like I’m the only one who eats it, and I know the taste can be polarizing for folks, but the iron and calcium content is crazy high! I’d love to learn more about it. Thanks for all you do!     Thank you for this recipe. I have made the dressing you suggested and slightly adapted it using coconut aminos, little grated garlic and ginger root then used it as a condiment for steamed zucchini.
    I have just subscribed to your channel what I like about how you do things is you blend recipes with food chemistry and food history and nutrition so you learn several things into one. 👌
