  • Yellow squash is a very popular summer vegetable that most of us enjoy. Through the wonders of our modern-day food supply system, many of us can find it in our local grocery store year-round. If you're not sure what to do with yellow squash, this video is for you. I cover the basics from what it is, to nutritional aspects, to how to select, store, prepare and preserve the squash.     So Judy I am an old fart excuse the expression I watch videos and guns fishing hunting cars etc. however my wife is out of town and I bought some squash and I watched your video I learned more about squash than I ever thought imaginable I love squash and I especially liked when you said what herbs and spices go good with it so instead of just throwing a steak on the grill like I do all the time when she’s out of town I want to add some healthy squash I really enjoyed your video. Do you have any steak videos.

      Hi Don! Well, if you're an old fart, I can say that I am too! Oh well...that happens :) I'm glad the video was so helpful to you, especially when your wife was out of town and you're cooking for yourself. Sorry, but I don't have any videos on steaks. I'm focusing the videos primarily on plant foods. Why? Because SO many people don't eat enough of them, and like you, many just don't know what to do with them. I'm creating this online library as a ready reference tool to help anyone who is in that situation. So, I'm really glad the video was so helpful to you!     I wish I watched your video before I grew my yellow squash because I let them get as huge as possible and they tasted horrible. I got the feeling that you're supposed to pick them when they're still bright yellow and now you confirmed. Haha. At least the chickens will have gourds.

      Hi Patrick! Thanks for watching and sharing! Yes...the squash ARE edible when huge, but really tough, need to be peeled, and sometimes even the seeds removed. I'm glad you have chickens who will enjoy them :)

    It’s my first time growing a crock neck and I’ve never eaten one. It was approx. medium size and the skin change from being a smooth texture to bumpy. What concerned me was the inside has a greenish color. Is it okay when it look this way?

      Hi Charlene! Yellow, crook neck squash can develop bumps and have a slightly greenish color. They are safe to eat. In fact, I have some growing outside right now and mine are looking the same way as yours. We've been eating them and they are perfectly fine. I'm not a horticulturist, so I can't say exactly why they have grown that way. We recently moved to the area we're in, so this is my first year gardening on this property. It may be something with the soil, or it may just be the variety of squash that's causing the bumps. I can't say for sure. However, the squash are safe to eat, so enjoy! thanks for watching and asking :)

    Squash bought abt a week back and lying on kitchen table, can b eaten?if small seeds are seen still we can eat?

      Hi Jaikishin! That's a great question. I'm assuming this was a yellow squash. I'd say that if the squash still looks good...not shriveled, not moldy, not discolored or changed in any noticeable way, it's probably OK to eat. I don't know what you mean by small seeds being seen. Yellow squash have seeds on the inside that wouldn't be seen until the squash is cut. That is perfectly normal. If seeds can be seen when the squash is whole and not cut, it may be starting to grow into a new plant. If that's the case, it's probably not something to eat. If that's the case, you may be better off planting it in the back yard to get a new squash plant out of it. I hope this helps! Thanks for watching and asking. Best wishes to you and yours :)

      @@allglad Yellow squash can be eaten literally any way you want to eat it...raw, mashed/squashed, sliced and steamed, roasted, sauteed, boiled, grilled...however you prefer. I don't think there's any one way that is "best"...it's a matter of personal preference. I don't think you need any special tool to mash/squash yellow squash. A food processor would shred it well when raw, or mash it when cooked. A grater would work when the squash is raw. A potato masher if it's cooked would also work. I hope this helps!     How do you know if the squash is ripe or rotten?

      A yellow squash that is nicely ripe is smooth skinned without wrinkles or blemishes on it. An older squash would have wrinkles and some spots on the skin. The older one may also be somewhat soft whereas a fresher one would be a bit more firm. Hope this helps! Thanks for watching and asking :) Best wishes to you and yours :)

    Aloha sista how are you fine I hope, are you using hyodan squash I planted one and its getting huge first time I'm growing that variety of squash, wat type is her a in the video mahalo hope to be a from you, aloha from pearl city, pacific palisades oahu hawaii, way up da mountain about 750 elevation nice and cool smile again aloha and mahalo for the lesson I learn plenty,

      Aloha George! Mahalo to you too for watching and commenting! I don't know if a yellow squash is the same thing as a hyotan squash. However, if it's a summer squash, it could be used in the same way as a yellow squash. Try it! Also, if it's getting huge, it may be overdue in picking. If it's like summer squash of other types, the bigger they get, the tougher they are. The skin and seeds get really tough when they get big and usually they will need to be peeled and seeds removed. If picked when smaller, the whole thing is tender and edible. Hawaii is beautiful! Enjoy the videos in the cool breeze on your mountain :)

      Hi Tony! That's a great question! Here are a few things I can think of right away. (1) Sometimes they get a white mold on them in a place or two. That's a sign they're getting old and need to be used right away or tossed, depending upon how much mold you see. If it's just starting and there's just a tiny bit of mold on it, you can cut it out and wash the squash REALLY well, then use it immediately. If it's all over and slimy, please toss it out. (2) Sometimes when they're old, they may look OK on the outside, but when you cut into it, it may be darkened some just inside of the peel. Again, you can toss it, depending upon how much darkening has taken place. Or, if it's not too bad, you can cut it off. Discard the darkened area and eat the rest right away. (3) Sometimes when they are old, they will develop brown streaks or spots on the outside and look withered and become a bit dehydrated (they will be rubbery or flexible, much more so than when fresh). If it looks really bad, you could toss it. If there's no mold, no darkness on the inside, and it's not too withered, and not slimy at all, it's getting old, but still should be OK to eat.     Hello Beautiful, I found your channel today, was looking to see why my yellow squash had a green tint after cooking. This happened once before, but not this much. Google said it's actually from a disease on the plant from aphibs, but safe to eat, so of coarse I was looking for another opinion.

      Hi Tara! I too have seen yellow squash with a little greenish tint. I have eaten them with no issue. I'm not aware of the cause other than what you found on Google. So, as far as I'm concerned, no worries other than for the life of the plant (from the problem associated with the aphids). Thanks for watching and asking!
