The only thing my husband complained about was gas 😂. Can we add little baking soda to beans to help with that gas problem. If so how much should you add. One time I added too much
@loiscobb687 Lois you ,are to funny! I've never added baking soda to my beans. However, I have found using natural antacid such as Beano prior to indulging, works for those gas sensitive members of my family.
All you need is to cook some rice.😊

@@loiscobb687 Adolphs meat tender not only works as a quick meat brine, it will tenderize the toughest collards, mustards turnip or kale greens. Add the adolph's to the greens after they intially go in the pot and begin to cook down and stir. Remember to go a little lighter on and other seasonings you use containing salt because the adolph's is salt based. All you need do afterwards is to cook slow those greens!

About how long do you cook the beans so they won't be mushy. Also how much butter and sugar
Once the beans have quick soaked for the hour. They will appear to have plumped up and the water in them decreased. Combine the beans and ham hocks together bring to a rapid boil then reduce to a medium heat. Cover and cook approximately 35 minutes then test the bean texture. The bean should have give but not turn to mush between your fingers. If the bean crumbles it is not done enough and another 10 - 15 minutes of cook time is required. I use 1 full stick of butter per package of beans. I would start with 2 tablespoons of sugar, taste it and if you require more add. You want to achieve a equilibrium between the salt and sweetness of the dish.

Do you pull the hawk skin off and cut up the meat on the bone?
I cook them whole until they are falling off the bone and the flavor of the hamhock is rendered. Then separating the skin from the meat (if I choose not to eat it) is really easy. Thank you for stopping by to watch. Happy New Year!
Have you tasted great northern bean? They’re both white and one is bigger in size but is there much of a difference in taste? Which ones do you prefer?
Are your referring to butter beans(dried lima beans) or cannellini beans(white kidney beans). If so, each of the beans mentioned have a distinct flavor. I am partial to the great northerns and enjoy cannellini beans in a savory white chili. I leave the butter beans to my husband and youngest son. Beans are a delicious versatile mainstay in my home. Toddrick you are correct. All three have salt content, which is why "not" going heavy with the ingredients you can control is recomended in the video. You may also choose to purchase the low sodium version of Lawry's or omit it altogether. The options are endless with home cooked meals. You are always in the driver's seat! I don’t understand why you say this isn’t healthy. It’s got a bit more sodium, but the potassium in the beans should balance it out in your body. We’ve been brainwashed into thinking good ethnic food isn’t healthy. And don’t get me started on pork. Pork is fine.
