I use my Instant Pot now to cook beans, no-pre-soak needed. If I have time, I will cook, either smoked turkey or ham hock first in 5 cups of chicken broth, with the same spices and onion that you use for 30mins and let the IP slow vent. I take out the meat, remove the meat from the bone, add the picked over, and rinsed bean to the liner, lock the lid and set to cook for 70mins..but if I don't I just add the beans at the beginning..
Her spirit lives on… my grandma who adopted me died during 2020 due to Covid, 4 years later it still feels like it just happened. Home cooked meals and making the family smile is the best remedy.

Just make sure that you bring those beans up to a boil for at least 10 minutes. Beans contain a poison that causes severe gastroenteritis. Slow cookers may not get the beans hot enough to eliminate this toxin and are not recommended for cooking beans....unless you boil them first.

Very good 👍🏻 Here in Northern New Mexico we've been growing pinto beans for generations and is a staple diet. What is really good in frijoles is red Chile from the ristras we grow make here (Red Chile Pods) or red Chile powder from New Mexico. I also like adding Chicos (dried roasted corn) to my beans really gives great flavor. But adding turkey to beans is a new one to me. I can see the health benefits to it. Gonna have to try it! Also we make green Chile, blue corn, cornbread! Thanks for sharing this great recipe FELIZ NAVIDAD 🙏🏻🙏🏻🙏🏻

Here's something to consider about the 33% less sodium broth. It's pretty high in potassium, probably from the use of potassium chloride as in other salt substitutes. It has a flavor note that some of us can't abide. I prefer to use "no salt added" type products that are low in sodium and use no substitutes. Then I can control the sodium level by adding my own regular salt as necessary without the metallic twang of the potassium chloride substitute.
Thanks for this info. I never understood why low sodium has a weird taste. I like your suggestion of using no salt broths and adding your own salt.
