I found that making the cream twice increases the creaminess. Allow the original mix to rest for several hours or overnight in the fridge and then re-blend for a few minutes. This virtually eliminates any residual grittiness from unblended nuts.
Blenders are funny and can't be judged by their appearances. I have a Blendtec that's 1550 watts with 2 blades and it does so much better at blending than my Ninja that's 1500 watts with 6 blades.
I made the basic cashew cream today, swapping the raw garlic for a head of roasted garlic for a roasted garlic cashew cream. I was eating the dregs straight out of the blender, it was so good. You are a gem, thank you for your recipes!
I finally tried this and its honestly life changing. I can now make any flavor cream that goes on anything and its so easy. Idk why but i thought it would be hard but literally just a few minutes of time and i have a cream for the rest of the week. cant wait to try all your recipes. Thank you 💚

what i've learned from making hummus is that ice cubes are a secret to creaminess, i can't explain it, but i now made cashew-chickpea-garlic hummus with a standard blender, not super powerful, but added a bunch of icecubes (and a splash of water) and it made it soooo smooth and creamy!

I've been making cashew sauces for years. With a Vitamix you don't need to presoak the cashews at all, I blend mine on high for 5 min so it gets steaming hot- always as smooth as real cream. If you don't have a Vitamix def soak them.
I think it will blend quicker and more smoothly if you don’t add all the liquid at once. Use just enough liquid to keep it moving (lubricate the solid particles). If you add too much “lubricant” at once, all the solid particles are just sloshing around instead of mashing up against each other and breaking up. Use the friction to your advantage.

Surely more expensive than doing it from scratch, but it works well for the occasional snack.

Hi Rachel! I think cannellini beans would be nice but certainly quite different texture and taste wise. I’d start slowly with the liquid because you want the cream to be thick. If you can have other nuts, I’d try it with raw walnuts, pine nuts or macadamia nuts!
Actually sunflowers seeds are a good substitute as people with nut allergies can usually eat them and they're neutral flavoured. Definitely need to soak them.

I loved the idea of this recipe, but had to make so many changes that it hasn't been the best version of itself 😅😅 I hope to achieve such creaminess and a tastier version another time. Haha yes it’s super useful! I got mine at a local kitchen store called whisk years ago. It’s silicone based. I love it because you can replace the tip with other ones so if you want a thick or thin squeeze. Maybe you can find something similar on amazon?
I just make a mess trying some recipes. Big clean up now. I need to find the $$$ to get the right blender. I also need to be more careful about following the recipe measurements exactly. I love what you showed and will try until I get it right. The sauces are a very - very big key to my new vegan effort.

If you do it in the small 4 cup food processor it comes out perfect. Better then the vitamix and large food processor.

I use an Oster too. I bought a vitamix but it sounds like a jet taking off in your peaceful home, so I took it back

You can also add cooked white beans or tofu if the taste of cashew too strong.

Haha yes it’s super useful! I got mine at a local kitchen store called whisk years ago. It’s silicone based. I love it because you can replace the tip with other ones so if you want a thick or thin squeeze. Maybe you can find something similar on amazon?

I just make a mess trying some recipes. Big clean up now. I need to find the $$$ to get the right blender. I also need to be more careful about following the recipe measurements exactly. I love what you showed and will try until I get it right. The sauces are a very - very big key to my new vegan effort.
Hi there! I'm sorry it was a mess, but yes, a high-powered blender is key to making cashew cream. Do you have a good food processor? That would work as well! And you're right about that - good sauces and condiments can take vegan food to another level!
