    All I can say is WOW! JUST WOW! This is fantastic and yummy. I am new to plant based eating and have been trying various recipes for making “cheese” sauce, and none are like this. That bell pepper is the absolute best ingredient. Thanks for the recipe demo.

    I have been making this regularly for almost a year. Best cheese sauce hands down. Lately I've been substituting the red bell pepper with a couple chipotle peppers in Adobo. OMG! So good. Also, I add the Chipotle Cheese Sauce to my black bean chili. Instant amazingness. Makes the chili creamy with that smoky chipotle taste. A little goes a long way.

    Great recipe! We add a teaspoon of Tony Chachere's Creole Seasoning and, post-blend, we pulse a can of Rotel tomatoes into the hot mix. Fabulous. We make it so often, I now make 'queso kits' in bulk, adding all of the nuts, yeast, and spices into vacuum packs or pint-sized mason jars. When we want to make it, we just have to put the 1-cup almond milk and bell pepper into the Vitamix, and add the contents of a 'queso kit'. Couldn't be easier!

    Someone recommended this recipe a few months ago and now we make it at least once a week! Make it with some rice and beans and Butler Foods Taco Crumble. Perfect tacos. I made Mac and cheese with it last week. It keeps well in the fridge too. We also use yellow and orange peppers too, works just as well.

    We LOVE this recipe! We also add some pickled jalapeños and some of the liquid from the jar, because we like it spicy. Amazing!

    I made a variant with just cashews (didn't have almonds) and canned jalapenos instead of bell peppers. Still awesome

    I made this tonight and wow this sauce was amazing!! I have made some vegan cheese sauce that was not good like the potato carrot one i find is not that great and way to much work! This was simple and fast to make and very delicious 10/10

    My boyfriend and I tried this multiple times and shared it with others! WE LOVE IT! We even made it spicy and it always came out delicious! love this recipe easy and delicious. I also added this recipe into the Vitamix app and it has been easy with the scale.

    We made this recipe with a green bell pepper. Oh my was it good. Dipped our chips in, slathered it on tortillas for vege burritos and they were the best we’ve had. Tonight is red pepper time then spoon on potatoes. It is surprising how good this is even cold. It adds a lot of flavor. Thanks for the recipes.

    Hello. I just made this. I actually cut the recipe in half except the cashews. It's only me and I didn't want to make too much. I used fresh homemade almond milk. IT TASTES GRRREAT! The next time I will use a stronger blender for a smoother consistency. I can see pieces of almond pulp in mine. My cashews were also soaked overnight. Because I cut the recipe in half, I used a half of bell pepper, but I think that is why mine came out more of redish more cheese color. It looks almost like a cheese sauce mixed with salsa. 🤷🏾‍♀️ It's good though. 🤗

      After I let it heat on the stove, the color was giving cheese. The taste was 💣 🔥 🤗 I baked a sweet potato, topped with steamed brocoli and put the "cheese" on top! It was DELICIOUS! Now I'm eating it with tortilla chips. Last night for dinner, I had it on pasta!

    This queso is excellent! I like to make it as an appetizer along with almond butter, hummus and fresh veggies when we have guests over. Even though the recipe makes quite a bit, it doesn't last long. It rarely makes it to the fridge.

      Tough as that's what gives it its distinct flavor. Cooked sweet potato could work, though that's quite a bit more effort than tossing in a pepper

    Made this today as mac & "cheese" for my kids, they loved it and me too. Have to re-do it for myself another day and spice it up,I really missed some jalapenos in it. It was quite a pain to clean up afterwards though, for the first time I had to clean the container by hand, something unheard of before :D But thank's for sharing, I was dreaming of a vegan queso for a long time ;)

    Made this today for vegan nachos 😋 Sooo good! Have already shared and will make again. So easy, better than expected. 👍🙂 Wish I could upload a pic.
    Btw, I don't have a Vitamix so I blended in my small cup Ninja and warmed up on the stovetop. Worked great, easy to do . 👍

    This recipe was great!!! I had my toddler help as well. Both kids loved it. Thank you!! We just purchased a Pro 750. I remember going to the LA County Fair as a kid and seeing the demonstrations. Now in my 30s, I finally got one!!

      Life is NOYOKE sure I will ! After I tried yours, lol 😂. Just wanted to make sure the temperature will not get to high too keep it raw, but no biggy . I should receive my blender during this following week ! So excited. It took me a while to decide , but your channel is really neat, I watched others too so I am being really honest here , you keep it simple and real and in complete transparency. You help me understand a lot of stuff and even the things that we are not expecting like how to work the lids on smaller containers and other stuff mishaps that may happen .
      I really appreciate, that’s real life !

      Could have been an oversized pepper? More blending (cooking) will reduce it and make it less soups. Thx for trying

      Oh no! This one actually should be easy. Rinse right away with water and maybe a dish brush. Then run a cleaning cycle- 30 seconds on high speed with a couple drops of soap and half-full of warm water

    Learn from my mistake and never use a frozen red bell pepper to make the cashew queso. It comes out way too liquidy.

    I followed this recipe to a T hoping to find a good vegan queso, but I have to say it just wasn't there. I've missed the taste of queso for a long time, and this just doesn't compare. It doesn't taste bad persey, it's just very bland. I even threw in a jalapeno pepper to try to spice things up and it just disappeared. This is a real shame considering this is the second recipe I've tried with nutritional yeast and found it to be lacking.

    This looks delicious. But also exemplifies exactly what I find so annoying about vegan culture. This isn't queso! Why call it that?? Just call it what it is, "creamy cashew dip (a chili con queso alternative)." I get it, your proud that you made something out of entirely different ingredients that tastes similar to actual queso dip. It sounds pretentious though to announce "vegan queso" to the world. Its like inventing hummus and trying to pass it off as "chickpea queso" just because you're vegan and decided it resembled queso dip. Why cant it just be its own thing? Heck if you actually gave this dish a proper name, it might become an actual popular reginional thing that takes on a life of its own rather than being just another "vegan substitute". Youre selling yourself short! And its alienating to people like me who arent necessarily vegan or even vegetarian for that matter, but who are open to and interested in healthier tasty options.

    Why do vegans say almond milk? It's nut water. Vegans won't drink milk, so why call it nut milk? It's water with a few ground nuts. Call it what it is.
    I hope you are not making your child vegan. Children need fat and cholesterol, which is what's in breast milk. The need for fat and cholesterol doesn't end at two or three. They need it to grow from an infant to an adult. Children need milk, eggs, meat, fish, and butter, just like you ate when you were children.
