I'm just glad to see that in not the only one eating lentil tacos in the morning! I do mine a little different, but it's mostly the same. I don't mix the cheese into the lentils directly. Instead, I do a bed of cheese and add the lentils on top so it's more like a quesadilla. I also like adding some red enchilada sauce to the base. That being said, anyone who hasn't had this recipe is missing out!

if you use a waterstone a lot, it can help to get one of the lapping/grinding stone they sell to re-flatten them. They're designed to wear down some, and if you favor certain parts of the stone, they can cup or get grooved

I love that you show yourself stuffing your face with the tacos at the end!! Much more relateable than channels where they take one delicate little bite. I'm going to try to persuade my meat eating husband to make a batch of this, as it seems like they'd made a nice easy lunch while we're on school holidays and with 40 degree heat anticipated next week (where I am). THanks!

Frankie is wearing a babushka! Also a slang term for Polish/Russian old woman.🙂
I've found that I must make myself something to eat while watching your videos 'cause they make me hungry! So good!
What you've made here is more along the lines of a quesadilla as opposed to a taco. A distinction that will make a difference in a Mexican restaurant/community when ordering food.
You lost me at the vegan cheese most of which are made with oils, often highly saturated coconut oil. Yech! But what one can do is replace the 'cheese' with a thick humous. It's not quite the same and doesn't turn gooey which is the best part of any cheese, but if one cares about their coronary arteries it's an acceptable substitution. Add a little nutritional yeast to the humous and you get sort of close. I also like to make quesadillas in my old George Foreman hamburger grill or you can use a pannini press as well.
I've now finished eating my grilled multi-grain sourdough toast topped with smashed&flavored tofu, avocado, spicing, lemon juice, chopped cilantro. yum! Nice having breakfast with you!

DUDE! This recipe looks fantastic! What are your thoughts on pan dry-roasting the spices? That was a suggestion from someone from SE Asia, so that's how I've been doing it. Also, I cannot tell you enough, how awesome it is to have someone making tasty, spice filled vegan and PBNO food, I see a lot of people making WFPB-NO things with very little spice flair and it saddens me.

I have been a vegetarian for 50+ years and eat a lot of vegan meals but never made the total switch because for me it's difficult to afford all the great products out there now. I also at my age have osteopenia and somehow have to add to my diet a little more umph so I don't break into pieces. ❤

I'm a carnivore trying to lessen my meat consumption, so I did a vegetarian variant on this with full-milk cheese and sour cream, and they were phenomenal! If you happen to have them on hand, I recommend mixing cayenne, New Mexico Chile and ancho in place of just 2 straight tablespoons of chili powder; it gives the lentil mash mixture a bit more depth.
Thanks so much for the recipe!
