@AaronandClaire - have you considered using concentrated HonTsuyu (such as Kikkoman's variety) in lieu of HonDashi/soy sauce/mirin? Isn't that basically what you made from the Dashi granuals by adding soy sauce and mirin anyway? Appreciate your input. Regards.

All it's missing is the rectangular fried looking scrambled egg that soaked up the soup need to find out how to make that. 😊 does anyone know what it's called???

This is okay as a minimalist noodle bowl for when you’re so hungry you can’t think about anything else. Also it’s nice to add your own preference in flavors to make it more complete.

What do fish cakes and rice cakes taste like?
They're more of a texture thing, chewy and bouncy. But the fish cake has a slightly seafoody flavor but definitely not in a bad way! 🤗
