    for those people who want to know the ingredients and don’t want to have to go to their website,
    Ingredients:
    1/2 yellow onion
    1-2 green onions
    1 small knob of ginger
    10.6 oz (300g) thinly sliced beef (Beef for shabu shabu, sukiyaki, or bulgogi)
    1 tbsp neutral-tasting oil
    2 servings udon noodles
    Sauce for Beef:
    2 tbsp soy sauce
    1 tbsp sugar
    1.5 tbsp mirin
    1/2 tsp (2g) grated ginger
    Dashi Broth:
    4 cups (960ml) water
    2 tbsp soy sauce
    2 tbsp mirin
    1.5 tsp Japanese bonito soup stock (hondashi)
    Toppings (optional):
    Japanese fish cake (narutomaki)
    soft-boiled egg

    I did this but used 3 cups of chicken stock for the broth. And I cooked the udon noodles with the beef and onions rather than separately. Next level. Delicious

    I am so glad you cook for Claire. I grew up with my dad being the cook for our family. And my mom was raised with her grandfather cooking. I can't find any guy to cook for me.☹️ Plus I am 47 so I probably never will. At least I can learn to make your yummy food! 😄

    @AaronandClaire - have you considered using concentrated HonTsuyu (such as Kikkoman's variety) in lieu of HonDashi/soy sauce/mirin? Isn't that basically what you made from the Dashi granuals by adding soy sauce and mirin anyway? Appreciate your input. Regards.

    Thank you for this!! I didn't include the ginger in the beef but OMG I think that was the right choice for me!! I'm so happy 😢
    It tastes just like the beef udon that I used to get at a restaurant. All it's missing is the rectangular fried looking scrambled egg that soaked up the soup need to find out how to make that. 😊 does anyone know what it's called???

I also ended up trying Bibim Guksu and Chicken Bulgogi and I almost died from how GOOOOOOOD it was.     I just printed a recipe but they didn’t fry the meat..they soaked the meat in soy sauce ten just threw it in the soup! I just wanna know which me this makes the beef soft?

    Hey guys... I don't particularly like udon ( I think they are too chewie ) and I think that a different noodle would work for this recipe, but I thought I would ask before I tried something different...Any suggestions?     This is okay as a minimalist noodle bowl for when you’re so hungry you can’t think about anything else. Also it’s nice to add your own preference in flavors to make it more complete.

      They're more of a texture thing, chewy and bouncy. But the fish cake has a slightly seafoody flavor but definitely not in a bad way! 🤗

    I'll tell you what that is a beautiful looking soup and I'm going to make that. I would love to know exactly what a Japanese fish cake is I've never had that.
    I am positive this is super delicious and I love soup when it's cold out I just had some food on noodle soup tonight and I love udon noodles!!
    Sadly I had no green onion in my house. 🤣

      You can try it with any cut of beef. (Just partially freeze it and slice it yourself.) Or you can try it with some mushrooms. The sauce itself is so delicious, you'll be happy about it! 😉👍
