How to Make Beef Udon (Niku Udon) (Recipe) 肉うどんの作り方 (レシピ)

  • Craving for a steamy bowl of hot noodle soup? This Beef Udon is absolutely heart-warming and is my go-to Japanese comfort dish. Tender sliced beef on top of chewy udon noodles in a savory broth. What’s not to love?

    INGREDIENTS
    1 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc)
    ½ negi (long green onion) (use only the white part of negi; you can also use 2 green onions)
    6-8 oz (170-227 g) thinly sliced beef (chuck or rib eye)
    2 servings udon noodles (6.3 oz/180 g dry udon noodles; 1.1 lb/500 g frozen/boiled udon noodles)
    For Beef
    1 Tbsp soy sauce
    2 tsp sugar
    For Soup
    2 ½ cups (600 ml) dashi (Japanese soup stock) (I'll show you how to make quick dashi using a dashi packet in this recipe. You can purchase it ▶ amzn.to/3HssMDe.)
    1 ½ Tbsp soy sauce
    1 Tbsp mirin
    1 tsp sugar
    ⅛ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)
    For Toppings
    3 sprigs mitsuba (Japanese parsley) (optional)
    1 green onion/scallion
    4 slices narutomaki (fish cakes) (optional)
    shichimi togarashi (Japanese seven spice) (for a spicy kick)

    Essential: rinse udon in cold water after cooking to firm them up else they are too soft. You can reheat again to bring up to temperature and they will stay firm

    How do dashi packets compare to dashi made from scratch? Is the drop in quality very noticeable? I live in a rural area and I want to know if it will be worth the pain to get the ingredients imported or if I should just buy packets

    Question: why not heat frozen udon in the boiling soup instead? Pro/Con? Thank you

      When you boil frozen udon, you will see starch coming out after you remove the udon. If you don’t mind cloudy udon soup broth that’s ok… but I recommend cooking separately so the udon soup is clean and delicious.

    Where are the best places to get thinly sliced beef?

      I usually get mine at a Japanese market but you can also get it at Korean and Chinese markets too! Look out for Shabu Shabu beef or beef for hot pot.

      A while back, we made a decision to skip the intro and ending because the majority of people were skipping those segments. We thought we could put our effort into creating more videos. Which is why we could produce videos almost weekly now (before it was a struggle, because I am not good at speaking in front of the camera and it takes hours. LOL). I try to be more present on Instagram. 🤗

      They are already pre-cooked (steamed), so I won't say "raw" but yes, usually served at room temperature.
