All your preserving looks wonderful. I am up to my eyeballs in tomatoes this summer. We have harvested over 500lbs and doing daily pickings. I've managed to can a years worth of ketchup, salsa and now working on canning up tomato soup. My neighbors have been blessed with tomatoes weekly cause my kitchen table is over flowing with tomatoes.
I’m in SC nearish the coast! What the high temperatures in July didn’t get in my garden, Debby did. Luckily, we have a long growing season, and I hope I can get a little extra for the pantry!
Tomato-palooza!! I love it. I'm so jealous. Here in Minnesota, it has not been a good year for tomatoes. They are just starting to blush now... and sooooo behind. Can I ask how many tomato plants you plant? That's an incredible harvest. And pizza sauce, YES!! Love canning it, it makes it so convenient.
You can use this crackling instead of bacon and add it to egg and salad but cook longer to get rid of all fat, It's better to cut into smaller pieces before you start melting and it's delicious and better than bacon for me.
Hi Amanda , have you tried dehydrating your tomato skins and then making them into a stock powder . I did It last year & it was one of my favourite things to use. Really versatile but unfortunately it didn’t last long . Loving the every bit counts challenge videos , Thankyou ❤
I did try this one year, and didn't use the powder very much. I may try it again, but I didn't really want to do that this year. What do you use the powder for?
@@TheHappyHomestead , I find it gives a real depth of flavour to stews , casseroles, pasta dishes, gravy etc. it’s so concentrated a bit like a dried version of tomato purée . Wont be making much this year unfortunately unlike you, my tomatoes are poor. 😢
I'm curious as to where you got your pork fat? I would love to find a source and make my own lard. Oh, and, I hadn't thought to do tomato soup - great idea and I have that Ball book! TIA
We bought a whole pig from our local farmer, and I made sure to get the leaf lard saved. But you can find any local farmer who does pigs, and ask if they have any. Sometimes you can find it at local butcher shops too.
Foods taste different when they go through a Folley or similar food mill tjan many of the other methods. Clean up is much quicker and easier. The left over peels, skins, etc... are far more processed than in most machines and also easier to further use, or not.
I canned three kinds of beans last week. Canning limas later this week. It’s just me and my puppy, so I don’t need as much as someone with a large family. I got enough tomatoes to make about three or four bowls of the roasted tomato soup - not jars, bowls! I’ll probably just freeze what I don’t eat for lunch with a grilled cheese!
I have the medium pro....it's basically a medium size with an insert that holds 5 trays instead of 4. And I have the Premier Oil pump. It was an investment, but one I have never regretted!

I used to make ripe tomatoe relish! Delish but have lost the recipe. Keeps in fridge and great on roast beef.

Yes! MN here too. The plants are now giving up after being beaten by so much rain. Bummer!
