How to make delicious Okonomiyaki (Japanese savory pancake) step-by-step guide

    Hi everyone. Today's dish is Okonomiyaki, also known as a Japanese savory
    pancake. Okonomiyaki originates from Osaka and is one of the most beloved soul foods in the region. Since I was born in a city next to Osaka, I grew up eating lots of Okonomiyaki. So today, I'm proudly introducing an authentic okonomiyaki recipe. I'll leave all the ingredients below. I hope you'll like it! Have fun cooking Japanese food😊

    Ingredients ( Portion for 2)
    Okonomiyaki Batter ingredients
    * Cake Flour (100g) (You can substitute it with all-purpose flour.)
    * Baking Powder (1tsp)
    * Water (150ml)
    * Instant Dashi (1tsp)
    * Soy Sauce (1tsp)
    * Salt ( 2 pinches)
    * Eggs (2 Large)
    * Tempura Bits (10g)
    Note: I forgot to mention in the video that the baking powder helps to make the Okonomiyaki fluffy and creates a nice crispy crust. Also, some people prefer to add grated mountain yam to the batter to make Okonomiyaki fluffy, but I assumed it's hard for many of you to get it. So, I didn't include it in today's recipe. If you want to add it, add only 20 grams of grated mountain yam to the batter. If you add too much of it, the gooey texture of the mountain yam will remain inside even after it is cooked. But, the baking powder takes over mountain yam's job perfectly, so you don't need it.
    And if possible, please try to use Tempura bits that contain shrimp or squid.
    Those tempura bits enhance the flavor of your Okonomiyaki big time.
    Ingredients that go inside Okonomiyaki
    * Cabbage (300g)
    * Green Onions (2pcs)
    * Pork Belly Slices (180g) ( fine to use Bacon, but it's not authentic.)
    Toppings for Okonomiyaki
    * Katsuobushi ( Dried Bonito Flakes)
    * Aonori ( Dried Green Seaweed Flakes)
    * Beni Shoga ( Red Pickled Ginger)
    An Alternative to Japanese mayonnaise
    * Non-Japanese Mayonnaise (150ml)
    * Soy Sauce (1Tbsp)
    * Sake (1tsp)
    An Alternative to Okonomiyaki Sauce
    * Ketchup (2Tbsp)
    * Worcestershire Sauce (2Tbsp)
    * Soy Sauce (1tsp)
    * Honey (2tsp)

    When I lived in Kyoto, okonomiyaki quickly became one of my favorite foods. I had never had katsuobushi as a topping before that, but it absolutely makes this dish. Along with the mayo and sauce, it's the perfect combination for savory comfort food.

      I was able to track down the ingredients, as you mentioned. It helped a lot that an Asian grocery store opened up half a year ago in my area, so getting a lot of ingredients are much easier now.
      I've always been fascinated with this dish since I saw images of it when I was a kid, so it will be fun to try a successful version of it.

    I tried Okonomiyaki once when I visited Japan and it was amazing. So I decided to try and make one but it took me a while to gathered the necessary ingredients. Especially the onkono sauce and Japanese mayonnaise but fortunately I found a store that sells Japanese products. The results was amazing for my first time your video was so helpful thank you.

    This looks delicious. I imagine that, like most pancakes around the world, there are many variations on extra or different add-ins. What varieties do you like? I would imagine a seafood version is delicious, too.

      I also enjoy adding seafood such as Shrimp and Squid to Okonomiyaki along with pork belly. But my No 1favorite is the straightforward Cabbage and Pork belly combination. 😋

    just wondering if you know the protein content of that flour as it just may be called something else in another country. Also what brand dashi powder do you use..
    I will definitely give this a try very soon.

      Cake flour in Japan and the US contains about 7-9% protein. And all purpose flour contains
      10-12% protein. Cake flour is plain wheat flour with finer particles and less protein content compared to all purpose flour. And for Dashi powder, I usually use Hondashi Instant Dashi.

      They are definitely similar. Only differences are takoyaki sauce is a little sweeter and thicker. I sometimes use takoyaki sauce for my okonomiyaki. It’s still delicious. So you can use them interchangeably. Thank you for the comment.😁

    I’m a new subscriber to your channel and was amaze how delicious and easy to make your recipes. However in this recipe you use pork. I do not eat pork. Can I substitute other meat instead?

      Yes, you can. But please make sure to slice it thinly otherwise the meat won't cook thoroughly.
      And, I recommend using relatively fatty part of meat. Fattier meat makes Okonomiyaki tastier.

    Do Japanese ppl ever mix up the pancake ingredients? Like adding bits of meat, green onion, etc? I bought the katsuoboshi grinder and a couple expensive extremely hard fish, so far I stink at grinding it..I just make “fish dust,” but the miso soup I made with the dashi I made from it was the best tasting I ever made..

      angie definitely click on the description found top right it's called a couple things like the three dot menu or the meatballs menu n well this is a cooking show sooo I thought the meatball menu was cute but nonetheless now you know what it is n where to find it.... I'm hungry again so I'll heat-up my homemade frozen dumpling-guys n the crunchy chili oil umami-bomb dipping sauce, recipes are great but tasting n creating a sauce you can't live without is priceless!!...
