Hi everyone. Thank you for coming back to my kitchen. Today's dish is Japanese hamburger steak. We call it Hambagu in Japanese. This is a Western dish we (Japanese) arranged in a Japanese way. Hambagu is one of the most beloved Western-style dishes in Japan. And, I grew up eating it quite often. I'll leave all the ingredients and cooking instructions below. I hope you'll enjoy this recipe. Have fun in the kitchen! 😊
Ingredients for Hamburger Steak (Portion for 2 or 3)
: Ground Beef and Pork blend (300~350 grams)
: Onion (half)
: Panko Bread Crumbs (25 grams)
: Milk (3 Tbsp)
: Egg (1large)
: Salt (1tsp)
: Black Pepper (1tsp)
: Nutmeg (1/2tsp) Optional
Ingredients for Sauce
: Red wine (3Tbsp) You can substitute it with White wine or Sake.
: Ketchup (3Tbsp)
: Worcestershire Sauce (3Tbsp)
: Butter (20 grams)
Cooking Instructions 1 ( how to make hamburger patties)
1) Chop half the onion finely.
2) Sauté the chopped onion until brown.
(3 minutes on medium-low heat, then 5 more minutes over low heat.)
3) Cool down the sautéed onion thoroughly.
4) Knead the ground meat thoroughly with salt only first. Knead until sticky.
5) Add milk to Panko and mix. Once the panko is moistened evenly, add it to the ground meat.
6) Beat the egg well. Then, add it to the ground meat.
7) Add sautéed onion ( make sure it's cold ), Black Pepper, and Nutmeg to the ground meat.
8) Mix them all together until the mixture becomes sticky again.
9) Divide in half and make 2 meatballs. If for 3 people, you can make 3 meatballs.
10) Through the meatball from one hand to the other 20 times. It'll remove the air bubbles from the
mixture. Then, shape it into a round patty. After the patties are done, cover them with plastic wrap
and refrigerate them for 30 minutes.
Cooking Instructions 2 ( how to cook hamburger patties)
1) Place the patties on a non-stick frying pan. If you don't have a non-stick frying pan, add a
little bit of cooking oil and place the patties over it. Then turn on the heat to Medium- low
and cook them for 3 minutes to sear the bottom side of the patties.
2) Flip the patties over and cook for another 3 minutes to sear the other side of the patties.
3) Flip the patties again. Then, lower the heat to LOW, add 3 tablespoons of water, put a lid
on, and steam the patties for 5 minutes. And it's ready.
4) Move your hamburger steaks to serving plates and cover them with aluminum foil to keep
them warm.
Cooking Instructions 3 ( how to make sauce )
1) We'll use the same pan. Add Red wine to the pan. Turn on the heat to medium-low. Then,
scrape off the flavorful bits stick to the bottom of the pan.
2) Once the Red wine starts boiling, add Ketchup, Worcestershire Sauce, and Butter to the pan.
Then give it a mix and continue stirring until the sauce thickens.
3) Pour the sauce over the hamburger steak and it's done. - Навчання та стиль
This is the great part of UA-cam, sharing and trading the best of each other's ideas and techniques. Kunihiro does a great job. He is a great exponent of Japanese style, technique, precision, and practical knowledge. No need for fancy sets, goofy editing, 'personality'-based entertainment. (He does have plenty of personality, it's just not manufactured 'for TV'). Thank you Kunihiro! Will make this for the January Basho!

I love this dish, And eat hamburgers around USA and Canada
Very nice. Thank you! I really like the explanations of the food science behind some of the steps. It helps me to know the reason for a step so I can apply the knowledge to other recipes.
I'm going to give this one a try.
I'm glad you found my video helpful. I also love to learn the food science. My ex-boss often told me that cooking is science. 😊
@@sushibykunihiro7534 Your ex-boss is right. Cooking is a branch of organic chemistry. Following a recipe is a lot like following a chemistry experiment.

Ah, the most important lesson for me in this was the steaming for 5 minutes to retain juiciness. Excellent presentation and description!
Glad it was helpful! Yes, steaming makes your Hamburger Steak a lot juicier. 😋

Awww……Look at the juice from the meat!! I literally would do anything for it! lol
I must say this video made me smile alot, mainly for the memories of my german grandmother teaching me to make frikadellen. The only differance really is the spices used. for 454g of pork/beef mince, 1 teaspoon prepared yellow mustard, 1 teaspoon dried marjoram, 1 teaspoon sweet Hungarian paprika, 1/2 teaspoon ground ginger, 1/4 teaspoon ground mace, 1/4 teaspoon ground coriander, 1/8 teaspoon ground cardamom, 1 clove garlic , minced, 1/4 cup chopped fresh parsley if you want to try the german version from Hamburg germany. Every family has there own version but we all share the same basic herbs and spices with tweaks to the amounts and additions that lead to arguements at family get togethers of who's is the best. We will be trying your recipes as you make it as well as Oma's recipe and let the kids decide. Tale care, God bless one and all.
Thank you so much for watching. I'll definitely try your recipe.😋 I never tried German style hamburger steak. So excited!😊
merry xmas
Thank you so much. I hope you had a wonderful Christmas too. I wish you and your loved ones a joyous and safe holiday season filled with love and laughter. 🎅
A clear and precise description on how to cook this mouthwatering burger.......can't wait to try this Hambagu , can l substitute gluten free
breadcrumbs for the panko ? Thank you Kunihiro
Yes, you can. Thank you so much for watching. I hope you'll have wonderful holidays.😊
Yummy😋😋 0:21
Thank you so much for watching my new video right away. I hope you'll have wonderful holidays.😊
In huge parts this is the recipe for what we call "Frikadellen" in germany 🙃 super delisious, and is a relatively cheap dish. You could use dry breadrolls instead of the panko, just rehydrate them in water, squeeze the water out after a few minutes and add to the meat. Goes really well with mashed potatoes, caramelized onion and gravy❤
Thank you for sharing that! It's fascinating to see the similarities between dishes across different cultures. Your tips for using dry breadrolls instead of panko are really helpful-I'll definitely give that a try. And pairing it with mashed potatoes, caramelized onions, and gravy sounds absolutely delicious! 😊
Thinking to add some mushrooms to the sauce making it a huge winner.
Try enoki mushrooms (if you can find them) with the sauce I add a but of vinegar and gochojang
Kunihiro San can you do a seafood bouillabaisse ?
IThank you, I love gravy, could I add a little Consume to it. Thank you. ❤❤❤
Yes, you can. But, the sauce is tasty without it already.😋
A delicious take on an American favorite. I don't miss the bun at all.
Супер Шеф! Соосное мясо+ вкусный соус = Класс! 👍👍Super Chef! Coaxial meat + delicious sauce = Cool!👍👍
Thank you so much for watching my new video right away.😊 I wish you and your loved ones a joyous and safe Christmas filled with love and laughter. 🎅
Hi, can you also make a video on making sauces for grilled fish?
Yes, I'll definitely make the video. Thank you so much for a suggestion.😊
May i ask, do you grind the beef and pork yourself? Or are they available ground at the store in Japan?
I've never been to Japan and would like to know because my wife is a bit spoiled here in the u.s.
Thanks...
Ground meat is available at supermarkets in Japan. I've lived in both countries, and I can say that Japanese people are a lot more spoiled than your wife. Supermarkets here sell many varieties of meat, and those are usually pre-cut or pre-sliced for your cooking needs. I sometimes miss bulky American style meat.. 😢
A bit question. Red wine (and any kind of wine) are not common ingredient around my region. Is it possible to using another thing to replace red wine if i can't just skip it to make the sauce?
You can simply replace it with water if any wine is not available. 😊
I want to make this tomorrow, what type of red wine? Sweet red wine or dry?
I used MERLOT for this dish. So it's medium sweet.
just curious… are you the narrator/francis in the cookingwithdog videos??
I get that so often. But, I'm not Francis.🤣
You are so careful about all the details, great ❤
Thank you so much for watching.😊
If you put this hamburger over steamed rice (gohan), add the sauce as before, and top with a fried egg, you have created a fusion between Japanese, American, and Hawaiian dishes to effectively create a riff on Hamburger Steak Loco Moco Style.
I never tried Loco Moco style before. But' I heard it's really tasty. Do you know what kind sauce you put on Loco Moco?
@@sushibykunihiro7534 Beef broth, Worcestershire sauce, ketchup, soy sauce, sesame oil, sugar, cornstarch. Mix it together. ^_^
My husband and I eat hamburgers, with no bun almost every night for dinner, can I prepare the hamburgers a couple of hours before my husband gets home and then cook them like you do, or is it important to let them sit in the fridge for 30 minutes exactly? Thank you so much chef.
It doesn't have to be exactly 30 minutes. It's fine to prepare the patties in the morning and cook them at night. 😊
@@sushibykunihiro7534 Oh, perfect! Thank you so much for your reply.😊
how long can I keep the hamburger mixture in the fridge after mixed it with raw egg ?
You can keep it only for a day. It's not the raw egg, but actually the ground meat is the one goes bad quickly. I hope it'll help.
Is the red wine regular red wine or cooking red wine
I always use regular wine for this recipe. 😊
May I know what’s the second sauce u put 🙏
Worcestershire Sauce. I hope you can find it in your area.😊
What percentage fat meat should be used 80/20?
Or can 90/10 be used
Which ever you prefer is fine. 😊 Even if you use the leaner meat, you can get the juicy result.
Thank you for watching.
@@sushibykunihiro7534 Thank you for your feedback.
Take care.
Don't u pour the red wine in when steam the meat ?
If so, the hamburger steak will change its color.
Hi there can I do with 500grams beef and pork ,how would the ingredients would be ?
Or do I have to stick to the recipe only do 300gram beef and 300gram pork ?
I am curious! You were worried about moisture in the onions then you added milk and egg! I think I’d disagree that comment and only that one! They look wongerful
I'm new to the channel but is he the narrator of Cooking with Dog?
No, I'm not Francis. But, I get that really often.🤣
Are you the voice from Cooking with Dog?
No, I'm not. But, I get that really often.🤣

this guy pronounced worcestershire better than most American

Uhh, it,s just like American meatloaf. But meatloaf is more delicious. Just my opinion.
