Easy recipe to make Okonomiyaki at home - Japanese savoury pancake

  • How good are savoury pancakes. Today we’re going to make the Japanese savoury pancake Okonomiyaki, Osaka style! If you haven’t had this one before, today is the day to make it yourself and give it a try - they are delicious!

    Ingredients
    - 250g flour
    - 1 tbsp baking powder
    - 1 tbsp baking soda
    - 80g corn flour
    - 350ml dashi stock
    - 2 eggs
    - 200g pork belly, skin off and sliced thin
    - 1/4-1/2 green cabbage, sliced thin
    - 2 tbsp pickled ginger, diced
    - Handful tempura batter bits (optional)
    - 100ml otafuku okonomi sauce
    - 100ml Japanese mayo
    - Handful bonito flakes
    - 2 spring onions
    - Nori, ground
    Method
    1. Start by seasoning the cabbage and sit aside.
    2. Next, mix the batter by placing the flour, baking powder and cornflower into a bowl. Make a well in the centre and add the eggs and dashi stock.
    3. Using a whisk, mix until you have a relatively smooth batter.
    4. Add the sliced spring onion whites, cabbage, tempura bits and pickled ginger to the batter and stir through.
    5. In a nonstick pan or on a flat top, start with a small amount of oil, then put strips of your pork followed by a nice large mound of the pancake batter.
    6. Cook this for 5-6 minutes before you flip it over and continue to cook for a further 5-6 minutes or until it is cooked through.
    7. Remove from the pan and garnish with okonomi sauce, Japanese mayo, bonito flakes, the greens of the spring onion and the Nori seasoning.
    8. Enjoy!

    お好み焼き (Okonomiyaki) roughly translates to "how you like it grilled" or "whatever you want grilled", so your emphasis of putting whatever you want in is very in spirit. Looks great, おいしい!

    That's exactly how we cook Okonomiyaki in Japan🇯🇵!!!!Sauce you used is the most famous one in Japan called "Otafuku sauce."

    After hearing chefs in their videos say “it’s not the same without Kewpie mayo” I didn’t believe them until I bought some myself. I haven’t purchased any other mayo every since 🥲😂

      It's that good huh? Best mayo I've had was uhh I forget the brand but it was an organic garlic infused mayo.
      I was shocked at how much better it tasted (I've never had the kewpie mayo though)

    My missus makes this all the time.
    Some cheats to make it even easier for home cook but still get max flavour
    Just get pre made okonomiyaki flour from a japanese/asian grocery - there's a few companies, I like the one with the red label best
    Dice up some British Butcher Co Smoked Bacon and fry it up nice and crispy, add into your mix
    Instead of tempura you can use Panko breadcrumbs
    Instead of Dashi we use Miso w/ hot water
    We don't like pickled ginger, our toppings are bonito, the sauces, spring onion and a shake of furikake (the seaweed and white seasame seed one)

    Looks delicious, had a brilliant hiroshima style okonomiyaki in a Japanese ski resort, and I'd say despite being less popular it's my preferred way. Looking forward to the exciting new content next year.

    Great and quick reminder for how to knock out some Okonomiyaki, thanks! I saw a great restaurant video of a place in Japan that specializes in Osaka-style Okonomiyaki loaded with freshly-shucked oysters in place of the bacon/pork belly. May try that variant as soon as I can source some good oysters.

    Thank you so much for this recipe Chef, it look and taste so good ! There's restaurants in Tokyo and other cities, where you can make your own Okonomiyaki while sitting at a solo table with all the ustensiles and a cooking plate. Something common in Japan but kinda unusual elsewhere !

    We made this a ton in college. Got lucky with having a great Asian grocery near by. We just got the okinomiyaki flour. Used a box grater for the cabbage and honestly my preferred over shaved.

    Ate this at the last day of a trip in Japan, it was awesome. Traveled 300km (a lot for European standards) to a restaurant to relive it but it didn't taste the same.
    Next step is to make it myself I guess. Thanks for bringing back the memories.

    Thanks for the reminder Andy. Just made this for breakfast/brunch and it was phenomenal. Didn’t have any kewpie mayo to hand but that’s ok. After all okonomi means “what you like” and yaki grilled or cooked! OISHI!

    My last visit to Costco, they were selling a double pack of Kewpie!!!! I bought one pack for myself and one for my brother who loves it too. There’s just some ingredients that you can’t skip or substitute. 🙌🏽

    I have a though that a good vegetable filler for these is the coleslaw packets that Coles sells. The packs are one of the pre-cut salad packets and contains white cabbage, red cabbage, and shredded carrot. I'd also add sliced onion. But then I generally think those coleslaw packets make good stirfry and soup vegetables as well, even the bigger packets, some of which have a pouch of dressing included which I don't use. It is the convenience of pre-cut veg.

    @Andy I thought the Okonomiyaki was gonna be my favourite part of this vid, but turns out the Korn Flour container was the star of the show for me 😂😂 So good mate haha....I'm not sure quite why I found it so amusing 🤷‍♂️ Thanks for doing this recipe though, some of my best Japan moments were with 'big beer' sitting on one of those hotplate tables getting Okonomiyaki flipped up in from of us with all the epic variations...I think a Kimchi one was my favourite 😍

    Awesome video mate. We were lucky enought to get to Japan for the 2019 RWC and tried both Osaka and Hiroshima versions. I did prefer the Hiroshima version but the Osaka version does seem the more home friendly version. Can't wait to give this a try at home.

    VERY GOOD DEFINETELY RECCOMEND IT. The only downside is the time it takes for frying. Which is still a very easy dish that can be made into lunch & dinner.

    Andy a classic ingredient in Okonomiyaki is Nagaimo(slimy potato) they add it to the batter after making it into oroshi, just whisk it in it adds a creamy texture. try it next time!

    Looks good Andy! For a bit more traditional, I’d recommend to put grated yam to decrease amount of flour. You won’t need corn starch or baking powder :)

    You can always use the kitchen multi tool for all your cooking needs (aluminum foil) this one of my favorite dishes

    My little twist is to use wasabi flavoured mayo. Not for everyone I'm sure, but I love that extra zing. I cook vegetarian so usually mushrooms for the filling, and fried shallot instead of bonito on top. Yum!

    Chef, I want to thank you for taking me around the world. It does look yummy. I would try this but I would have to leave the Bonito off. I think that is a fish, allergies.

    I learned a few things from this video, thanks! I love making okonomiyaki but being a vegetarian whenever I am in Japan I am afraid to order it since they always add fiah sauce or the like. Also all our Asian food shops here in north Queensland have closed but I find HP sauce approximates the right taste. I also often add cooked lentils or freekeh to the batter.

    Well done, chef! It is a bit scary turning the okonomiyaki, but you did great!
    We like shrimp and/or bay scallops in our okonomiyaki. Also love verrrry thin slices of Berkshire pork. (I'm in the US).
