How to Make Delicious Miso Marinated Black Cod step by step.

- I am showing how I prepare Miso marinated black cod. It's a very popular dish in Japanese restaurants. So please try it at home.
If you can't find black cod, you can use salmon. This marinade goes with salmon too.

Ingredients for marinade
White miso 300g
Sugar 100g
Sake 170 ml

This is the most instructive video I have seen on this recipe. The cutting of the fillets on the diagonal was enlightening. Double wrapping the marinated pieces of fish for freezing was new to me.

The marinade goes with other fish too but I suggest shorter cooking time when grilling leaner meat.

Your recipes are great and your skill with knife is amazing. Since miso has beneficial enzymes should it be added after the other marinade ingredients are boiled? The cold miso will cool down the cooked marinade. Even though it is baked at 400 degrees later, perhaps enzymes can be absorbed into fish before cooking, and the final garnish will have the uncooked miso also. By the way, what brand of knife do you recommend?
