  • MEAL PREP & LOSE WEIGHT! I put together some fall recipes for a fall meal prep! Apple Crisp Breakfast Bake and a hearty chili recipe! Breakfasts, lunches, snacks, and DIY dinner meal kits for my husband and I! Points given for all three programs. Come see what I eat in a day (actually what i eat in a week) on WW / Weight Watchers! Cook with me for breakfast and lunch, and find out what's for dinner with my dinner kits. This week I included a crockpot / slow cooker freezer meal! Meal planning and meal prepping are critical for me to continue my weight loss journey and helps me with losing weight. But it's also a tremendous time-saver throughout the week.

    🍎 APPLE CRISP BREAKFAST BAKE 💙3 | 💜0 | 💚3 (2023 points = 2)
    I added 1 point worth of sugar-free Cool Whip and some berries. We didn't end up eating the yogurt. It was filling enough without it! This turned out really good!! The consistency of the topping was obviously different (not crunchy like apple crisp) since it's oats, but it was good! We heated in the microwave for 30 seconds to a minute.
    I used the following recipe as a guide but my modifications are listed below.

    I increased the amounts by 1-1/2 and used a 13x9 pan so I could make bigger portions:
    These are the amounts and modifications of ingredients I used to make 6 portions:
    7 Gala apples
    1.5 tsp cinnamon
    3 Tbsp Lakanto sugar
    3 Tbsp flour
    TOPPING
    1.5 cups quick oats
    2 tsp vanilla
    1 tsp cinnamon
    3/8 c Lakanto brown sugar
    3 Tbsp unsweetened applesauce

    // HONEY MUSTARD PORK CHOPS WITH RED POTATOES & GREEN BEANS (FREEZER MEAL)

    (2) 5-oz. boneless pork chops
    1/3 cup sugar-free honey mustard
    1/2 tsp pepper
    1/2 tsp onion powder
    8 oz baby red potatoes
    8 oz green beans
    1/2 cup chicken broth
    Combine all ingredients except chicken broth into a freezer-safe bag. Mix well. Freeze. When ready to cook, thaw in the refrigerator overnight. Pour contents into a slow cooker and add 1/2 cup chicken broth. Cook on low for 6-8 hours.😋

    I made the chili, and it was very good, but it screamed for cumin; the addition of a tablespoon or so made it so much better.

    UPDATE AFTER TASTE TEST! The apple crisp bake had great flavor. We really loved it. We didn't have the yogurt with it because it was plenty filling without the yogurt. The texture of the topping threw me off a little because I was expecting that crispiness like you get with apple crisp. With it being oats, it wasn't really crispy. But the flavor was great. We heated it in the microwave for between 30 seconds and a minute. The chili - LOVE the chili, but WHOA that was way too much for one serving!! 😂😂 I would say 1 or 1-1/2 cups would have been PLENTY!     Just found you; I LOVE the way you split out your video with tick marks so we can move through this easily. I watched you this morning before work and really couldn't commit the entire almost 40 minutes. But with the divisions I was able to watch just the apple dish and them come back later to pick up right at the chili. Thank You!! I wish more UA-camrs would incorporate this. Your recipes look wonderful and I will be adding them into my WW meal rotation.

    Kristi, the next time you use a 28oz can of tomatoes, rinse and save it. I use one as a bag holder. Just stick your gal. size baggie in it and fold down the bag and load. Beats your green tent I promise! : ) ( For wet foods, like the chili). Your green one is better for the dinner kits though. Great video!

    Love your well loved pan. My husband’s uncle was a food inspector for one of the big name frozen dinner people. He came to visit my in-laws and she had one of the loved to death pans, Uncle threw it in the trash. She went and got it out as soon as he left. Love your videos and your content.     Hi Kristi, we just had the apple crisp for breakfast, we loved it. I used old fashioned oats because it is what I had and added about 1 -2 tsp spray butter along with the applesauce .The top was crispy. Thank you for another great recipe and making my life easier by posting these videos.👏👏💙

    For chili try using a combo of chili powder and cumin and coriander.

      I dont think I have ever used coriander for anything. Is it spicy?

      No it’s not spicy. It’s like smoky and earthy. Chinese cilantro and coriander come from the same plant but have 2 totally different flavors. My rule of thumb is salt & pepper are buddies, garlic & onion are pals, cumin and coriander are pals.

    Good recipes as usual Kristi. I would put a spoonful of fat free Greek yoghurt and a drizzle of syrup on the apple crisp rather than Cool Whip. I’m in the UK so noticed that you’re still having problems with Worcestershire Sauce. Forget the rce and pronounce it woostershire. 😊

    When you put the lid on your chopper, make sure to align it with the built in spout cover over the spout...that way nothing jumps out. :)

    Looks great, iv been on ww 10 weeks now and 2lbs off my 1 and half stone so I'm enjoying it. It's personal points now as you know but I can adjust these meals easy, I never thought to add cannelloni beans but I will now.im in the uk so some foods are different xx

    Omg packaged potatoes, we just cook our own and then can portion it out, vacuum pack and freeze.

      Yes, absolutely, use what you prefer. I always prefer whole foods over canned or packaged, but there are times where I will use the canned or packaged. Everything in moderation, of course. ;) Do you find when you freeze your potatoes that they brown? I used to have trouble with that.

      No i have never had them go brown, i do the same for cooked rice, brown or white . Not sure of what potato you would use i live in New Zealand and use one called Agria,

    Thanks also for keeping me busy for 40 minutes of watching and I decided to walk, march, squat, plank and do some crunches for the entire video. I went from 6500 steps to 11,000 while I enjoyed watching. I didn’t even realize how much I was getting done!

      I was skeptical with the oat topping, but it had really good flavor. The oats weren't crispy like a normal apple crisp, but I'd definitely make it again!

    I can’t find the right video for my comments, so I’m adding them here. I prepared the chicken fajitas for dinner rather than three lunch meals. Both my husband and I really enjoyed them. My husband can’t have tortillas so he had cauliflower rice with them. I had two Joseph’s Ole tortillas. Wonderful dinner AND leftovers. Thank you for all you do and keep up the good work.

    I'll be making the apple crisp for sure - I think I'll have vanilla greek yogurt with it. That chili - what a serving size! I'll have to check and see if pintos/black beans make a difference as I don't eat kidney beans (by choice). I'm with you - if I eat chili, I want heat!! Great meal prep friend!

      Yes, definitely WAY too much for a serving!! LOL I think I was hungry when I prepped those. We couldn't eat it all. I would say 1.5 cups at most is good, especially with all those filling beans! Thanks so much! 💕

      It absolutely can!! A lot of times I'll do that. Just throw it in a big stockpot and let it simmer for a few hours (and make the house smell amazing)! Haha - I'll let you know when they call me!! LOL LOL

    Seeing you posted a new video made me so happy! The crisp looks so good!
    I’ve made your pumpkin bake twice this week as well as the chicken fried rice once this week! Yay me, since I’m not much of a cooker. They are delicious!
    Wish me luck with my weigh in tomorrow. Been using my weeklies (which I never do) this week. Maybe that’ll help get the scale moving in the good direction.

      Yay you is right!!! That's awesome!! The crisp was great. Although I have to say it shouldn't be called crisp because using the oats wasn't a crispy top, but definitely still had good flavor!! :) Yay!! Good luck tomorrow!! Let me know how you do. And remember, if you just started using your weeklies, sometimes it takes a couple weeks to balance out in your body. But I am an advocate for eating as many weeklies as you can to still lose! :)

      Am Vi congratulations!! It’s so scary to think that you should eat more to lose weight and after 10 months on WW, I still have some weigh-in day anxiety because I use so many weeklies but it works! So happy this helped you! I usually drop a few pounds every other week eating like this so just hang in there and keep tracking! Congrats!!

    They make a Rotel Hot. It definitely has some heat. Think I’ll try your recipe with the Rotel hot and less chili powder.

The black ones are actually just cheap ones I got from Dollar General. They've held up pretty good so far though. I'm really wanting to convert to glass meal prep containers someday, but just not there yet. :)

      @@nkailihiwa Oh wow!!! Yeah, these ones from Dollar General are definitely not overly sturdy, but I haven't had any issues so far. The tops go on pretty tight. I also have some that I purchased from Walmart too and those are pretty much the same as these. I'll see if I can find the Walmart ones and come back and post them here for you.

    Omg the bloopers almost made me pee my pants. Your fall Chilli. I have been living off my veggie chilli as part of my weightloss journey even through the summer. I like mine spicy too but that was a lot of chilli powder. I chop up spinach and put it in before I reheat the chilli it gets me extra greens in my diet.

      Spinach is a good idea. I make it spicier and add in canned pumpkin. Not so much it changes the flavor but it adds creaminess

    OMG! Those recipes both look awesome! The chili recipe had me stopping the video to see if I had any beans. I have to got some. All I have is black beans. I prefer kidney and pintos in chili. I will be picking them up in the next few days and make some chili. My mouth is watering!

      @@PlanningUsHealthy I would say they are more like great northern bean or a navy bean. Not a lot of flavor like a kidney bean but just as hearty. I have even put garbanzo beans in my chili before and I liked them but my hubby wasn't a fan, lol. Of course, he will eat anything though.

      I was using a permanent marker, but I had to really scrub in soapy water to get it off. I am now using my dry erase marker from my whiteboard and that works perfectly! :)

    I keep hearing about Monkfruit but have never tasted it. Is it different than stevia or any other ones?

      To me, it just tastes like I'm using regular sugar or brown sugar in recipes. I don't notice that aftertaste that others have. My understanding is that it's comparable to stevia though in that it's natural and not like aspartame or one of those type of artificial sweeteners.
