Xylitol a birch bark derivative is sweeter than sugar, looks like sugar, is a (1) on the glycemic index and sugar is (100) so Xylitol won't spike your sugar. It tastes, cooks and bakes like sugar and it is also great for your digestive system and it prevents tooth decay. I swear by it!
I agree with you 100% Xylitol is my go to sweetener. I just make sure I don't consume any more than 2 Tbs per day unless I want it to work like a laxative for me. I also use it with my toothpaste for dental decay and plaque prevention. And I "pull" with it and coconut oil (swish it around in my mouth) before I go to bed, then swallow it for good gut flora to sleep on. It's awesome stuff if used in moderation. Just make sure you get the non gmo version made from birch bark and not corn cobs.

The Lakota monk fruit is not good for baking. You have to get the powdered version not granular. It simply does not dissolve. Note that monk fruit will not react the same as sugar. Baked goods will not rise as well.

The health associations in the USA and the EU have been approved Stevia years ago, for the human consumption. In the Japan, the most consumed sugar is Stevia. Japan has much lower obesity and diabetic rates compared to the western countries

You would probably do very well to remove sugars that spike your insulin. Although Agave and Cane sugar may seem better than regular table sugar, they still spike insulin and add calories. The monk fruit/erythritol sweetener and Allulose combinations do not. They are created in lab either. Replacing table sugars with them is worthy of a try. Good luck regardless :)

My family has a clementine cake recipe that we’ve made for years and we always use monk fruit in that. Did a test batch of one with sugar and one with monk fruit, and they tasted identical! Good replacement for anything that calls for regular sugar. I’ve occasionally found a powdered sugar substitute made from monk fruit as well!

I’m currently reversing my pre diabetes as well, what I’ve learned is diabetes along with almost every other health condition comes from too much bad fats in the blood mainly from animal products more specifically red meat. I won’t go into too much detail but so far a plant based whole food diet has be quickly reversing the symptoms. I had tingling in my toes that have gone away, as well as my fasting blood glucose was usually 100-102 in the morning now it’s usually between 87-97 in the mornings. Fruit and veggies does the body so good. I also supplement because I don’t have time to be deficient. But it works. I have been learning so much from a channel called mastering diabetes and it’s worked so much for me in only a week

Stevia, over the long haul, is hard on kidneys (not good for diabetics), and has other issues, per my PCP.
