The literal reason why Gordon is as harsh as he is is because he loves food. He loves restaurants, and he loves the industry as a whole. When he goes to these places and gets mad, he's getting mad because he knows that other people have come to these places before and have had a bad time. He just wants to help, and the owners just don't know how to take someone being brutally honest about the business they're running.

None of the employees came up with the idea of cleaning. This is their workplace, it's their responsibility. You cannot put the blame on one person.

Why do ppl invite him, ask his help, and then fight, deny, and ignore him.
Most of the time on the show, the ones who invited him over are the family members, owners, or business partners. Then Ramsay would have problems with the other people like the chefs. In this case, this woman is the one who invited him and then completely lost her mind. She is insane.
