RAMADAN PIDE Servings: Makes 2 pides Difficulty: Medium Prep time: 15 minutes Cooking time: 15 minutes For dough, 500 g all-purpose flour, 3,5 cups 350 g lukewarm water, 1,5 cups 1 tablespoon instant yeast 1 teaspoon granulated sugar 1 heaping teaspoon salt 2 handfuls of bread crumbs or semolina or bran For topping, 1 tablespoon butter, melted 3 tablespoons water 2 egg yolks 1 teaspoon nigella 1 teaspoon sesame seeds - Mix water, yeast and sugar in a beaker and let the yeast bubble for a couple of minutes. - In a bowl, mix flour and salt, pour it on the counter, make a hole in the middle and pour liquid ingredients into the pit. - First, stir it with a fork from the edges to the middle, and when the mixture thickens enough, you can use your hands. - Knead for about 10 minutes until it becomes a smooth and elastic dough, or you can use a stand mixer as well. - Divide the dough in two equal buns, place in separate bowls, cover them with a damp cloth and leave until doubled -around an hour-. - Mix egg yolks and water for topping, then add melted butter. - Place crumpled and unfolded baking paper on your counter with water spray. Sprinkle some breadcrumbs or semolina on the baking paper, so you can enlarge the dough more easily. - Take the dough out of the bowl and place it on the paper. Wet your fingers with the egg yolk mixture and enlarge the dough to the sides gently. Get it as straight as possible. - Shape the edges with your pinkie fingers. Then press hard with your pinkie fingers in the middle again to give a diamond (in Turkey we called it Baklava) or square pattern. Spread plenty of buttered egg yolk mixture on it, sprinkle nigella and sesame seeds on top. - With a baking stone on the second shelf from the bottom, place it in the preheated oven at 250°C degrees, working on upper and lower heat. - Pide will be ready in 12-14 minutes. Easy İskender Kebab with Ramadan Pide 1 Ramadan Pide, diced, stale bread would work great as well 2 tablespoons butter 200 g minced meat 2 onions, chopped 1 tablespoon butter 1 pinch of salt 1 pinch of black pepper ¼ teaspoon freshly grated nutmeg For sauce, tomato puree, 1 cup 2 tablespoons butter 1 pinch of black pepper 1 pinch of salt 1 pinch of granulated sugar 4 tablespoons hot water 3 tablespoons savoury yoghurt, room temperature A pinch of black pepper Parsley leaves, to garnish - To make the minced meat sauté minced meat on a frying pan. Add onions when the meat changes its colour. Cook on medium heat for about 20 minutes until onions are disappeared. You can add a splash of water to glaze the pan. Add salt, black pepper and nutmeg. - To make the sauce bring tomato puree, a tablespoon butter and water to a boil. Add salt, sugar and black pepper. - Brown sliced pide pieces with butter on a frying pan. - To assemble the easy İskender, place the pide on a plate. Top with tomato sauce and spare some from the sauce for top. - Put the minced meat and add more sauce on it. - Mix yoghurt and black pepper. Add a ladle of hot water if yoghurt is cold. Put the yoghurt on the side of the plate. - Finally, brown a tablespoon of butter in a small pan and pour over the İskender. - Garnish with parsley leaves if you like. - Heavenly easy İskender is ready to enjoy!

What a beautiful unique bread!!!! So pretty!!! This is also a very inexpensive meal for those of us on a tighter food budget & I always seem to have leftover bread on hand. Usually it becomes bread crumbs or bread pudding, sometimes stuffing or panzenella. This gives me another way to use it that would be a quick & filling meal with things I usually have on hand!!! The amazing thing is that here in Australia, this Ramadan Pide is available all the time (literally, all supermarkets, literally all the time), and it is what we call "Turkish Bread". I have a friend who went to Ankara as an Australian diplomat, and he amazed us all when he said that what we called "Turkish Bread" was not what Turkish people eat all the time at all - he said it was only made in Ramadan. We were shocked, I tell you, shocked - we had to change our whole view of what Turks eat! The equivalent in Australia would be Hot Cross Buns: they are only an Easter recipe (usually mid March to April), but nowadays they make it from just after Christmas (January) until well after Easter (May) ... I am glad that the Turks are sticking to their traditions!

Woooah! Remember eating iskender kebab in Bursa, it was amazing experience. Just get him near the bazaar at the end of Ramadan, so nice time it was. Now sitting here thinking about the meal, I know for sure what I will cook right now. Sadly it’s not the right time for Ramadan pide, so I’ll make it with usual white bread 😅

@@tesekkur I agree eating out is far more expensive. For me that is, a real treat and rarely happens now. I cook all my meals from scratch with no processed food. I also grow 90+% of my vegetables and fruit. Ireland climate is not conducive to growing all varieties such as, olives, citrus fruit, melons and many spices. You do what you can.

We are able to get pide daily where I live but nothing is better than homemade. I love this technique of forming the pide on the parchment paper.

I heard that the ancient culinary and healing herb silphium has recently been rediscovered in Capadokia. If you can your hands on a sample it would be fascinating to see ancient recipes tested and tasted.
I love pide and will def have to make this one day. The hardest part about Ramadan is trying not to gain too much weight because it’s so difficult not to eat all the amazing food during Iftar. Ramadan Kareem

I love this bread! Any other suggestions on ways to eat it? And can you show us tırnak pide, too? A Turkish restaurant near me serves all of their kebabs on top of it and it's wonderful!

Reminds me of Mulaweh bread eaten with fava beans
350g Water (Lukewarm) + 1 teaspoon sugar + 1 teaspoon yeast
500 grams flour + 1 tsp salt
Knead together for 10 minutes till smooth
Separate into two balls and let it rise
Today I make Askendar kebab,,it was so tasty ,,love you rafika ,,,my daughter kiss me so many time ,,even we love turkey ,,and she gone there so many time ❤❤

Dear Refika, i saw so often this grey pan - outside silver. I saw that its from ZWILLING (a german brand). Your pan everytime looks like new. Is this pan so easy to clean or do you have 150 from them :-) ?
