Yarın sabahtan pişirecegim. RAMAZAN başlamış artık. Sizin ve tüm izleyicilerin kutsal Ramazanını kutluyorum !!!
This is the best bread I've ever made and tasted. I used wholemeal flour instead. Half of it is already gone. So fluffy inside and crispy on the outside. Love it. Thank you!!
I wrote out directions for myself so that I can add this to my recipe book. Here it is for anyone else who wants to copy/paste and print: For pre-fermentation: 1 glass of warm water (200 ml). 1 cup of flour (120 grams). 1 pack of fast yeast (10 grams). For dough: 1 glass of warm water (200 ml). 3 cups of flour (360 grams). 1 teaspoon of salt (8 grams). For sauce (egg wash): 1.5 tablespoons flour (15 grams*). cold water (20 ml). boiling water (50 ml). 1 egg "yolk" To sprinkle over top: Sesame. Nigella Directions: 1 Pre-fermentation - place yeast in a large bowl; add 1 glass/200ml warm water and 1 cup/120 g flour and whisk to combine until smooth. Cover with plastic wrap and allow to sit and rise for 20 minutes. 2. Dough - mix your yeast mixture with a spoon, then add 1 glass warm water and stir. Add 3 cups of flour and 1 tsp salt, then mix with a spatula to combine until no longer lumpy. Dough will be thick and sticky. Cover again with plastic and allow to sit and rise for 20 minutes. 3. Turn dough out onto a floured surface, sprinkle with flour, and fold/roll it until it forms a cohesive ball. Divide into two equal portions. Shape each into a ball, then gently flatten and stretch with your hands into a flattish rectangle. Place the two flattened loaves side by side onto a large baking sheet lined with parchment paper. *make a fold in the parchment to create a separater between the two loaves.* Cover with a clean cloth and allow to sit another 20 minutes. Preheat your oven to 250°C (approx 480°F). 4. Make the sauce (egg wash): in a shallow bowl, combine 1.5 tbsp (15g) flour*, with 20 ml of cold water and whisk to combine into a paste. (can be a little lumpy) Add boiling water and whisk quickly, then add egg yolk and whisk until combined. 5. Brush the sauce/egg wash liberally over the loaves, then use fingertips to impress a criss-cross pattern into each. Sprinkle liberally with sesame and nigella as desired. 6. Place a small oven-safe bowl of water on the lowest rack in the oven for humidity; this helps keep bread soft. Bake bread on centre rack for 15 minutes. **Note - the video cites 1.5 tbsp = 40g, but after having made it and measured it, I feel pretty confident that this is an error in translation, conversion or typing and it is intended to be 14 or 15 g instead.

She said all purpose flour in the video. I tried it and it was wonderful - not quite as pretty as hers but I would try it again and improve. It was light, soft and with lovely aroma. A little lengthy to make with multiple rises but worth it. I loved it. Great sesame and Nigella flavor.
I've made it twice now. It's so good! The 2nd time, I let the fermentation sit over night. Such a wonderful flavor both ways and so very simple! Thank you!
