    The perfect homemade lahmacun,
    Today I want to make you Turkey’s number one street food and take away - a thin layer of tasty meat on bread which is crunchy and bendy at the same time. They married to become the flawless lahmacun. It should definitely be on your bucket list!
    Servings: 4
    Difficulty: easy
    Prep time: 10- 20 minutes
    Cooking time: 2 minutes
    For the dough, (makes 9 lahmacuns)
    300 gr all purpose flour (2 cups)
    1,5 teaspoons instant yeast
    ½ teaspoon sugar
    180 ml water (3/4 cup)
    1 heaped teaspoon salt
    or skip the dough and use 8-9 lavash breads as the base
    For the meat mixture,
    200 gr minced meat, half beef half lamb (you can use just lamb, beef or chicken as well. Add half a teaspoon of butter if using just beef. Add cumin, tomato paste and pepper paste to flavour if just using chicken.)
    1,5 onions
    2 cloves of garlic
    50 gr sucuk (or any cured meat such as chorizo, salchica, pepperoni, mortadella, pastrami, pancetta or bresaola)
    8 tablespoons homemade tomato puree, (6 tablespoons if store-bought, alternatively, use a grated tomato with a teaspoon of tomato paste)
    12 sprigs of parsley, chopped
    1 teaspoon yogurt
    1 teaspoon salt
    1 teaspoon black pepper
    1 teaspoon hot red pepper flakes
    1 teaspoon isot (any smoked pepper works like paprika or even fresh hot chilli)
    • Preheat the oven on upper and lower heat, without fan to its maximum heat, around 280C (536F) is fine. Place a pizza stone or baking steel on the bottom of the oven. You can use the back of a cast iron pan as well.
    • To make the dough, mix the flour, yeast, sugar, water, and the salt in a bowl and knead for 2 minutes.
    • When the dough becomes smooth and less sticky, cover with a damp cloth and let it rest for about 10 minutes in a warm place.
    • Meanwhile, for the meat mixture, pulse the onions, garlic and sucuk in a food processor until they become a paste or grate the onions and garlic if you are not using cured meat. Cured meat helps enhance the flavour because it is aged and fermented.
    • Mix the paste, minced meat, tomato puree, yogurt, salt, black pepper, red pepper flakes, and the isot. If the mixture isn’t juicy enough, add a couple of teaspoons of water to spread the mixture easier.
    • Add in the parsley and give it a last mix.
    • To make the dough, divide the dough into 9 equal balls. Dust the work surface and the rolling pin with flour and roll out the balls around 30 cm (12 in). Place the dough on a peel and remove the excess flour. Spread a heaped tablespoon of mixture on the dough and slide the lahmacun onto the hot stones in the oven. Bake for about 2 minutes and repeat with the rest.
    • To make with lavash, heat a pan around a minute and place the lavash in it. Spread a heaped tablespoon of the meat mixture on the lavash and cook it around a minute. Then, transfer the pan to the oven’s top shelf and bake for 2-3 minutes.
    • To enjoy the lahmacun at its best, thinly slice a red onion and mix it with sumac and olive oil. Place the onions on lahmacun with parsley, squeeze some lemon and roll it. If you also have a glass of ayran then it is a perfect feast!

      I haven't seen any Turk in central Asia make lahmacun before. It's more of an Arab middle-eastern dish which Ottoman Turks came into contact with.

      @@mertroll1 Eating the same is one thing: not cooking it at all because it's not part of your cuisine is another. Turks only came into contact with most of the dishes they see as Turkish after they migrated westwards. They don't deny it so why are you? Turks proudly say it was through the Ottoman empire that much of the food they eat became part of their national cuisines.

The ottoman empire were primarily turks, its state language was ottoman turkish, so what are you getting at Lahmacun was always part of turkish cuisine and your little rant wont change that fact, and if you want to get reaaaally technical, one could make the case that lahmacun wasnt even a arabic invention, rather an assyrian one.
      So i dont know what you are getting at, everything you said is wrong

    Armenian here, as well. Grew up with Lahmajun with a lot of Armenian food shops and restaurants. My great-grandmother (came from Turkey) also made it but recorded no recipes. I just made a batch today for the first time and then watched your video after. Very similar!

      I would echo your sentiment. Turkish cuisine has always been a challenge for me but since watching Refika's videos (even the Turkish ones) I am more confident trying dishes I would never have dreamed of like isekender, cilbir and doner kebab.

    I'm from India, but I live in Munich, Germany now. "Turkish" takeaways are everywhere and cheap here and some of them have really good döner. But all the Lahmacun at these joints is pre-cooked. I had lahmacun at Halil in Kadiköy and it blew my mind. They were making it fresh by order and serving to the table piping hot, straight out of the oven. I will never have the pre-cooked version after that. I was supposed to be in Istanbul again in April, but of course that didn't happen. But whenever I'm back, the lahmacun at Halil and the Adana Kebab roll at Dürümzade are some of the first foods I will eat.
    Thanks for the recipe. I somehow never thought of making lahmacun at home, but it looks relatively straightforward. This should make for a great dinner party.

    So... I have wanted to try turkish Pizza since forever. I was discussing it in a forum unrelated to food, and learned Turkish Pizza is really called Lahmacun. Then the next day you dropped this video!
    I have been subscribing here in Oregon for maybe 2 or 3 months.
    This was the first meal of yours I have made. It was amazing. Thank you for showing this technique for making in my home! I even made my own dough! I could not get as thin as yours but was also my first attempt.

      I’m Norwegian and like you, I discovered Lahmébajine in Lebanon when I visited that beautiful country for the first time ten years ago. This dish isn’t Turkish, starting with the name of it, it means nothing in Turkish. The Turks took most of their food from Lebanon, Syria and the Middle East, and also from Greece. The Turks came to the region from Central Asia not from the Mediterranean world.

Plus Americans call this food Armenian Pizza, Jordanians call it Sfeeha Ermeniye which means Armenian Pastry . Turks always steal other peoples' cuisine. This food is a part of the Armenian cuisine.

    Once again, my father comes to my mind. I have tried lahmacun recipes I've found on the internet and they were all missing something. I couldn't put my finger on it. You brought me back to my youth and my father making lahmacun and sitting eating and enjoying Turkish music and Raki. You always put that bit of love and just the right ingredients to authentic Turkish food. All my love and gratefulness.

      @@Refika Refika how can you trust the restaurants in these days? Even one hygene or mask mistake of the staffs can make us Covid. I want to eat lahmacun and icli kofte (you should definetly do the recipe of it) but i cant, due to lack of trust. Fantastic video btw, i laughed so hard at the beginning:)

    Hi Refika! Thank you for your amazing recipes. I'm Greek living in Scotland and love Turkish food since it's very close to greek food and it reminds me of home. The best lahmacun I had was in Berlin , where some Turkish grandmas were cooking it on some kind of spherical oven. I've never had a lahmacun in Turkey although I've been many times. I'll save it for next time I come :)

    I’ve so wanted to travel to Turkey when I retired which happened to be the very day the “lockdown” happened here so no travel for me at this point, but ... The positive note that’s come out of this is you! You post, I get a sudden craving for what you’ve made and run to the kitchen to replicate it. I just did a huge market haul and did not pick up lamb, but will definitely get some in the next few days so I can make this. I think it will become a regular in my house.

    You Rock Dear🤟! I’m from Bulgaristan, and i used to have a turkish restaurant next to my work - they had a wood oven and baked lachmajun, pide and tava with minched beef. You inspires a lot, keep rocking. I’m watching you also on 24 kitchen. I was thinking that you have to put isot and you put in in the next moment! Just for an idea for future - kokoreci, tava djiger, ci kofte...

    Thank you for your amazing videos. Not only are the recipes spot-on but all of you look like you are having such a wonderful time together. A friend posted your yogurt video and I got hooked. We just had family over and made these delectable Lahmacun along with a number of mezes from your recipes. The crunch of the crust and the spicy goodness of the meat was incredible. I want to eat Turkish food all the time. We were all doing that happy dance!

    One of my favorites when I was in Turkey! I make it at home, I use tortilla's when I am lazy and don't make the dough. Lemon parsley and the onions on top yummy
