Thank you for advising people to perfect the crumb coat! It's frustrating to hear cakers say it doesn't matter but I know, from experience, that when you have a flawless crumb coat, the final coat is SO much easier to get smooth. And its so easy to have a smooth crumb coat.

What a great tip about the parchment liners! I've made tiered cakes and grimaced as they were disassembled for serving and half the buttercream came off the lower tier. Thanks so much, Gretchen! I never end one of your videos without learning something!
This is without a doubt Gretchen one of the most organized tutorials on how to make a wedding cake. You lay it all out for those who dare to go beyond just making desserts. I think though that I would rather use your American Buttercream recipe for the making of the flowers. That is the best recipe for making the most delicious icing ever. I froze my leftovers an ate it like ice cream. Yes I love it that much. It is superior in taste especially with the high ratio shortening used to give it stability. If I were to make a grande cake I could use the American buttercream for flowers? I would love to learn how to make petunias out of the buttercream. You were talking about keeping the top tier of the wedding cake for the bride and groom on their first anniversary. Many moons ago, my mother made wedding cakes and she made mine. The top layer was saturated with brandy as a preservative and we did have it a year later, which was the tradition way back then. Of course, I won't say how we all felt after eating it!

Gretchen, what an amazing video. I think you demystified the building of a 3 wedding cake for everyone. 😊 I really loved it. I've seen another video of a 3 tier wedding cake done by somebody else on craftsy a few years ago, by a guy, I think he was won Food Network cake challenge. I can't remember his name, but his video was very good, along and your other video of doing this were the only ones I've ever saw of making a 3 tier wedding cake. Yours were much better hands down! 😊. There is nothing wrong with taking a little help from an outside source, especially with fondant flowers. I know the struggle. I have a funny story to tell you. I have to fit in the comment below.
There was show I seen, but I cannot remember which channel it was on, and it would have cameras put up where a manager or owner of a business would watch secretly to see what the workers were doing and if they were stealing or what went on behind the scenes or how they react with employees or customers when he was not around. In this big deli or place which had a bakery, there was this very worker who was trouble, they secretly had these two actors come in as a couple to order a wedding cake, the bride wanted chocolate cake, she kept convincing them that it's traditionally white, not chocolate, well when she argued with them telling them white is traditional. She got so upset she wind up throwing a cake or something at the couple missing them going nuts! In front of customers. 😮 Yikes! The manager fired her. If the customer wants a carrot cake she's gets carrot cake.

Is it true that freezing the undecorated cakes (well wrapped) is actually better than keeping them (well wrapped) in the fridge? 2. If I stack the cakes the night before and keep them in fridge, will they get dry? or should i just keep them in room temperature? 3. Hi Gretchen, I have a question I'd like to ask you. I noticed in the video that you put a separate dowel rod in the center of each cake tier along with additional support wooden dowel rods. Are you ever nervous that your cake tiers will shift during delivery or slide apart? The reason I ask is because the method I was taught on how to build a wedding cakes, is that when constructing a stacked wedding cake, once all the layers are assembled; sharpen a wooden dowel rod on one end and insert the dowel down thru the center of the top tier, using rolling pin to carefully punch it thru the cake boards until it hits the bottom support base. Once the dowel rod is just below the surface of the icing; using a piping bag, fill the hole in the top tier then smooth out the icing.
HI, I do not use center dowel rods (I have never used them) and never had any trouble on transport or for 5+ hours out at a reception. It is of course your preference if you prefer to do it that way, by all means go for it

People do it both ways, I prefer to cook them because it breaks them down more and extracts more juice in a more concentrated form (*more flavor) but you can omit the sugar of course, it depends on how sweet my berries are, I do 0- a few tablespoons depending on what nature gave me

I just love you videos! I watched the video and I understand putting the dowels in the cake but I didn't see you putting a dowel thru all the cake layers to secure them together. What if you weren't putting the layers together on site?

I love the video, it's given me some great advice for a wedding cake I'm doing. But question about the fondant flowers. Im making the on my own, is it best to make them with. wire or without? And if I dok make them with a wire, can they go directly into the cake or do I cover them with florist tape first? Also heard about posey picks, wouldn't I lose a lot of cake if I used them?
HI Thanks! I agree about the posey picks they are really large and really disturb the cake. I think depending on the type of flower wires are best for most. The bulging typically comes from too much filling that is trying to creep back out. I make sure I use a good sized buttercream dam to keep it all in and make sure it stay refrigerated up until the time of the event
hi Gretchen, my vanilla cake recipe makes 3 nine inch layers so how would I scale up or down the recipe to make 2 twelve inch cakes, 2 ten inch cakes, 2 eight inch cakes and 2 six inch cakes? thanks

The bulging typically comes from too much filling that is trying to creep back out. I make sure I use a good sized buttercream dam to keep it all in and make sure it stay refrigerated up until the time of the event
