    It's always good to drive a long dowel through all the layers to keep them from shifting during transport. I recommend it.

    How soon do you need to start adding your crumb coat when taking the cake out the freezer?

      I don't FREEZE as this causes too much condensation & will be a big problem for the icing. Just refrigerate, typically 30 min to 1 hour

      @ oh! I'm so sorry I thought you mention its best to freeze your cakes its better for adding your butter cream and decorating. Ah!! So for any cakes when decorating should I still wrap and seal my cakes in the refrigerator and then start the process?

      Oh I see, I thought you meant after crumb coating you would then freeze.
      So, yes I freeze the cake layers for up to a month wrapped well then when
      I build the cakes (layers straight from the freezer), & by the time the whole cake is filled & iced it is going to be almost completely thawed.
      THEN i do crumb coating & only now refrigerate before the final icing

    Grentchen,I made the white cake ad swiss butter cream for wedding cake for my granddaughters weddinf,I did it in 2 days because of my energy level cause of MS ,the cake got really ,to keep dry.How do I store it after put together ,so it doesn't do this again?

      +Jlane Hubbard always freeze your cake layers if you are not using them right away! Then take them out of the freeze just before building the cake

    Help please!! What size cake do you suggest i bake for a birthday party with about 60 guests? I know wedding slices are thinner otherwise i would use this recipe. How do i adjust the recipe for the bottom tier if i was baking it in an 11 inch tier? Please help. Thank you! Great job Gretchen!

    You do not use a bigger central dowel in the middle??? Thanks for the lesson. Also, What is the worst thing that could happen if I do not use a parchment paper to separate each tier?

      No I never used a center dowel that goes through the entire cake.
      The worst thing that could happen when not using parchment paper is the cake board will have all that icing from teh cake below it stuck all over it, it literally rips the entire top icing off the cake when you try to remove the tiers

    Good Morning. Few questions. I cooked and froze my cakes on Saturday. The wedding is this coming Saturday. I plan on working on the cake tomorrow (Friday). when is the best time to take them out of the freezer (the cakes have no filling)? Once I finish the cake, is it ok to put back into the freezer for the next day reception (the cakes are Itialian Cream -cream cheese filling, Red Velvet-buttercream filling, and Lemon cake with lemon curd)? The drive is 45 min and the weather is predicted to be 85 degrees and humid.

      I take the cakes out just before I am ready to fill and ice. They thaw quickly and it is easier to work with cold/frozen cake.
      Yes you will have to put the cake in the refrigerator for sure, overnight is best so great that you are working a day ahead.

I know all are different but about what temp do you recommend frig and freezer be at? I have a frig/freezer dedicated to my desserts but I struggle with finding the best temp. Thanks!       Sheena Gomes no each tier has a cardboard under the cake so the dowels only go as far as teh height of the cake

    If you're decorating the morning of the wedding will the cakes thaw by that evening? Will they sweat?

      the cakes are thawed by the time you crumb ice and put the final ice on, never had any sweating problems

    Gretchen how is this so much whiter than your normal buttercream recipe? Do you made it with shortening only when you want it to be super white? My Swiss buttercream always has a bit of a off white color like yours does in your recipe video. Thanks for any info :) Love you and all of your amazing videos.

      She mixes it on medium speed to incorporate more air therefor turning the butter cream a more white color. So, after baking just use your paddle attachment or hand beater and whip it :)
