I split the butter in half and add half Hugh ratio shortening to give it more stability.

I use cake, isomalt, sugar, candy, fondant, cookies, buttercream (American buttercream is my favorite) royal icing, sprinkles… I even have a special recipe that uses flax seed (eww gross) to make my crazy cake creations.

Great tutorial, thank you! I’ve been decorating cakes for almost 10 years but just making my first wedding cake. The look using the spatula is exactly what my bride was looking for and I wasn’t sure how to do it...but now I do!! I'm getting married on September 1st 2019!! I know time flies by SO fast! I was thinking the same though, making my own wedding cake. They can be so expensive!!
You can do it.
I wish you have a great wedding. Also a little tip, you can buy like special stands for a wedding cake that have branches an you can put each layer on its own branch instead of making a multi tier cake (which can be a bit difficlt cause the cakes tend to lean if you mess up your layers)

What is the width of your pans are they 2 or 3 inches and are there any particular brand of pans you prefer?
Thank you! I use fat daddios but I like the magic line too. I prefer 3” deep pans.
