A little envious as where I live (Vienna, Austria) elderberry flowering and strawberry season shall never meet - elderflowers bloom in March/April, strawberries in May/June. Amazing, they should coincide in Wales. Looks absolutely scrumptious, the dessert, the cocktail, wow, yummy 😊🎉🎉

Love elderflower everything! 🌱💚 Every time I walk home from work I walk through a park with massive old Linden or lime trees, and they are in bloom, literally burdened with fully opened flowerd. The scent is indescribable for those who never came across it, but I grew up with it and it happens to be one of my fave teas! I sat down for a while on a bench today just to fill my soul in with the scent. I kept thinking about ways to use it in other foods as well. Going to pick some to dry for ice tea because I love it! Great video, very inspiring!

This is the most beautiful and earthy kitchen , I am not there but I can smell it and feel its grounding and calming effect.
I absolutely love your videos. So creative and inspiring! I love finding new ways to enjoy the bounty in the garden. Elderflower is less common where I live, but I planted a few plants about 2 years ago, and they finally bloomed this year. There were only a few bunches of blossoms, so I let many of them go to make berries to use for medicinal purposes, but also to share with the birds that visit the birdbath nearby. I did take a small amount of blossoms to make tea. The scent was incredible! I can’t wait to have enough next year to make this delicious dessert.

My elderflower is over (I have lots and lots more grows wild), as are my strawberries. But I made cordial and jelly and will use the berries later in the year.
I adore pannna cotta. I usually make mine with a fruit compote as well. Its right up there with ice cream. Thanks Gaez

Hey Gaz, absolutely great video. I can see a lot of work goes into editing but they missed one thing... you said you call strawberries tomatoes and tomatoes strawberries... but... you also called them raspberries just after the first elderflower scene haha thought for a moment in wales they were labelled the other way around 😂😂

Great idea adding kombucha to cocktails! Be putting carbonated drinks in a shaker… it could explode 😬 I’d double strain to get better foam then add the kombucha after to boost it 😊

This looks absolutely delicious, it looks similar to the texture of a flan. The flavour pairings would be great though, I enjoy elderflower and strawberries so this would taste absolutely delicious. The Sapling Vodka would bring a really nice flavour, this looks excellent.
It was interesting to learn about the elderflowers smelling like cat urine when drying, I wasn’t expecting that. Thank you for this recipe Gaz!

I'm in Australia and someone gave me an elderflower tree cutting. It has really taken off and produces flowers and berries almost year round. But there is no scent with the flowers. Devastating!! Going to try elderberry wine but think it is going to have to go 😥 and be replaced with something more fruitful.
