Me too! My New Year's resolution was to learn how to ferment, but so far I've only tackled soya yoghurt, which is lovely, although I have purchased a long and complicated book about fermenting vegetables. Every week, I buy expensive jars of sauerkraut from a local health food shop, which I can ill-afford when I know I could make it for pennies if I just had the courage. So, we're nearly halfway through the year, and still no sauerkraut or kimchi. 🙄
PS: I've been using the prickly twigs (well, I've been using dried holly leaves) around the Pak Choi method from a previous video, and so far, so good-no slugs! Simple and effective, I've passed it on to others too. 👍
As per usual Gaz, everything in the video is fucking beautiful, the Welsh countryside, your garden, your house, your cooking, you. Your videos are so wholesome and calming to watch. And yes, we'd love a fermentation video! Keep 'em coming. ❤
This guy blows my mind, what a culinary talent!, what a beautiful world he lives in, his creativity is mind blowing to say the least, so glad my daughter introduced me to his channel, what gorgeous country side, I'm a transitionaling vegan, and I absolutely loved his own version of a KFC burger, how mouthwatering!, I MUST get get his book ASAP!!!, 😋**
Only a couple seconds into the video but I already want to give you respect for being transparent that this is the routine for a chill day and isn't necessarily realistic for a busy deadlines day. Not many influencers are honest about that.
Absolute favourite lifestyle UA-camr hands down. From your diet, to your mindset on the mind to body connection and how important exercising is, to your love for growing your own garden and cooking for yourself in a vegan life style. It’s so soothing to watch, but also inspiring. I hope to see you making videos forever :)
Love it! Nettles - seaweed and wildcrafter / biologist Ryan Drum relates that when we flash cooking nettles (2-3 minutes) most of the enzymes which make raw nettles so effective remain! I add it last to a stir fry, or make a pesto with quick- cooked nettles. Love the idea of a kombucha second ferment with rhubarb and herbs! I have some bubbling away ... I like soaking and then semi- sprouting dried beans before cooking - and make enough for several meals (freezing some when I make a bit too much!) Dinner tonight was garbanzos off cooked this afternoon with dried mushrooms, kombu (cut into small pieces), cumin and a bay leaf, short grain rice added the last 30 minutes Stir fried in coconut oil baby bok choi and asparagus, added the beans and rice, some tofu, chili lime and onion Seasonings; prepped some Gluten Free white miso, soaked some Wakame, combined and added a few fresh herbs - mmm Mostly organic ingredients.
You are for me one of the best👨🍳I ever seen...you have such a positiv Energy and I like the way you are🙏I miss your Country...best regards from Switzerland 😘
These vids are such high quality and inspiring, from a person who used to eat meat and dairy I can’t believe the changes I’ve gone through mentally and physically. Really cool to see your journey too!
yes we'd love fermentation video specificly kimchi and kraut! we've had every brand out there and nothing compairs to thirty acre farm!!! i'd love to see a side by side of you making it and trying theirs!
Gaz, Everything you do Is done with such love. It sooths the soul like a warm hug watching you. You and your videos are effortlessly stunning. The definition of art. Love to see a fermentation video as well! Thank you for being you and sharing. Keep shinning.☀️
Gaaaaz! I absolutely love your video's and I admire you!❤ As a dude who also loves cooking, I'm extremely inspired by you! You're an awesome being doing wonderful thing's to help our planet🌱
I enjoy making kombucha, the garden herbs are so good for the second fermentation. Fruits also add a nice flavor as well. I have used twist caps in the second fermentation process to burp the bottles, but I really like the bottler that you used especially if it’s going directly in the refrigerator. Everything you make is beautiful and I can tell it taste amazing. Your videos of your home steading are excellent. The stinging nettles are good for inflammation and for women’s health as well as men’s health. They are so beneficial, it’s nice to see other ways to use them other than traditional teas or medicinal recipes, this is great. Kimchi fried rice is so so delicious and you’re speaking my language on this recipe. It looks divine. Every time I watch your videos I get hungry, your recipes are great. You very well should do a second fermentation video. Some people do their fermentation processes differently, so it would be good to see yours as well.
I've been following you and watching your videos for years, have all your cookbooks, and have been infinitely inspired by you. AND YET THIS is my favorite video you've made so far. It incorporates everything i love about food. Thank you!
Genuinely just one of the best videos on UA-cam, ever. Actually, top 100 beat videos ever created on Earth. This is fantastic. The production quality continues to sky rocket while you effortlessly and lavishly flex your Vegan prowess and beautiful paradise you have created in Wales. Marvelous Gaz, you always out do yourself. Definitely NEED that fermentation video, but truly will watch any content you create. Thank you for raising the standards with every video you and your team sculpt!!

A fermentation video would be incredible! I’ve made Kimchi a few times for myself now and I’m loving it! Really intrigued to learn more about fermentation!
Hi Gaz - yes to a fermentation video. i'd love to see your take on masala dosa, the dosa (crepe) is made from fermented rice and moong dal. i love your work, great to see you enjoying country life and gardening so much!
Your home, your lifestyle, your videos - pure art and magic, my friend. Thank you for sharing bits of yourself with the rest of the world! It's very therapeutic and inspiring. All the best your way ❤
Hey Gaz, love you content, especially about the garden and foraging. I'd love to see more fermentation content, especially how to make Kombucha from scratch. Thank you!
Definitely interested in a fermentation video. Love the chickpea scramble and the idea for cooking Tofu, always trying new ways of trying to get others to find it tasty! Very inspiring.
It's so cool and lovely to see you cooking the food that I grew up eating (I am Korean)! Thank you for that. And yes! I would love to see the fermentation video please.
Yes gaz love your videos found you on TikTok but I’ll be watching all your UA-cam vids from now on, proper stuff I’ve already made quite a few of your dishes and loved them😎
This video brought back memories.. My grandma used to make pita with nettles, like greek spanakopita, but with nettles for filling, i havent had them in years...
Would love to see a fermentation video and how you use it in dishes. It always looks so hard to do, so would love an easy guide. Love your work as always 👌
I can't wait to see your kombucha video and YES for a fermentation video! Thank you to you and your crew for working so hard. Your videos are educational, inspirational and very soothing.
Lovely video, Gaz. Every time after watching you, I rush into the kitchen to cook something delicious. And an absolute "YES" on the fermentation video) Cheers
I certainly have rubbarb back at home, but since I moved, no more. It looks beautiful of your garden, much dedication to your lifestyle. always lots of work. also, I would like a video on fermenting anything, vegetables, I love how you secon ferment your kombucha, without sugar, but used maple syrup to sweeten it.
I would love to see a video on fermentation!! I have IBD and am trying to incorporate more fermented foods into my diet, so any tips would be appreciated!
Fermented foods are a great source of vitamin K. The IBD may be from a deficiency of vitamin K and the fermented foods can help with that, but you can also get a vegan source of vitamin K to keep around while you’re in the process of fermenting your recipes. Sourdough bread uses a fermented starter so if you enjoy bread try using a sourdough. Pickles and other pickled fruits and veggies also have may be good to try. Also apple cider vinegar (ACV) is fermented and can be added in small amounts to tea or included in other recipes toward the end and can also be helpful, some people would take a small amount of that on its own as well. If you do make kombucha and let it ferment a little bit longer, you can also make your own vinegar out of it. The kombucha vinegar can also be good to use and is very similar to ACV and you don’t have to do a second fermentation, you can just let the kombucha go a little longer on the first fermentation.
Love your authenticity and peacefulness. Yes, it's rare to have to the time to cook from scratch every day, so I love recipes that keep well for the week.
Hi Gaz, awesome video - very chill and love the Welsh countryside bit. Please add another vote for a fermentation video. I’m pretty good with kombucha but can’t seem to get kimchi or other veggie ferments to work well, so would love some of your excellent instruction, advice, and inspiration.
Wow, this is so uncanny! I was looking up kombucha recipes and wanting to give it a go, like forever. This is like a little push to go for it! Thank you, very inspiring, again! 🌱💚
Ayyy I don’t know if anyone has brought this up but I love how old school your videos look, like it has a visual record player effect. Your videos have a golden and nostalgic tone.
Would love to see a ferments video! Experimenting with different kombucha flavors is so much fun, I'll have to give that rhubarb and herb one a try this summer. Some of my favorites I've done in the past are dandelion/fennel seed, beet, and straight fennel fronds. Another really amazing one was a batch made with green tea and a little jasmine tea mixed in, and strawberry in F2....it was SO GOOD!
I am new to following you, it is so fantastic to see what and how to cook the veggies that you/ we grow, and encouraging others to try different foods , thank you for your videos 👏
I noticed the book on your table at the start of the video, my husband has literally just bought it a couple of days ago, would love to see a video on you using it x
Greetings from Pennsylvania. I studied in Aberystwyth, Wales for a semester in graduate school. One of the first things I noticed was that there were sheep everywhere. 😃 I absolutely love Wales.
Moving out of London has been the best thing for you, Gaz. It looks like you're really living your best life! I'd love to see a video about your kombucha and kimchi (assuming you make that yourself). Buying raw (rather than pasteurised) sauerkraut and kimchi is horrendously expensive. And kombucha, too, it makes no sense to buy it because most or all of the goodness is gone. In my dream world, I'd be baking my own bread and making kombucha, kimchi and sauerkraut myself at home. And having the time and the ingredients. I guess maybe you're living my dream life. You should be very healthy!
I'd love a ferments video, especially if you included how to use them (aside from eating them straight out of the jar).
Me too!
