Derek, my son was a professional vegetarian chef in Portland Oregon. He was a veg baby before he was even born and considered all animals to be his brothers and sisters. He had a heart of gold like you. And he found pure joy in creating healthy animal-free meals. Tragically he passed suddenly several years ago on his 34th birthday. I've lost my inspiration for cooking since I lost him. But watching you has re-ignited my creative veg cooking super powers. I've been plant based for 54 years and raised my precious son and daughter that way. Your story about your dear partner who you lost so tragically as well broke my heart... If you cooked for your son it would heal your heart and bring his spirit close to you, a time you could share together, he in spirit and you while still here on the earth. Bless your heart. Healing from losing a child is something that cant be understood unless youve experience it.
I pickle the kale stems - super easy. Just stuff them into a big jar, pour your favorite flavor of vinegar over, add any extra spices you might like; garlic, colored peppers, tomatoes, etc. Screw on a lid and put in the refrigerator. They will last for more than a year. Eat them as a side taste treat with just about anything except a sweet! I also freeze big leaves of kale. It will crumble in the big jumbo bag. Roll up tight, freeze and sprinkle into whatever savory dish you might be making including a smoothie. Big time saver.
I should have also said that you can stuff kale leaves in the jar also. Another way to fix peppers is not throw out jars of peperoncini pepper juice but use the juice to pickle all kinds of fresh peppers! Just slice, chop or leave whole or whatever size you'd like and stuff in the jar, refrigerate and then wait a few days. Good on just about anything except ice cream! I also "pickle" commercially canned fire roasted tomatoes. Add garlic, vinegar, spices, herbs and again wait a few days and viola' you have a great taste treat.....enjoy.

If I'm making a dish -- maybe a stew or a casserole -- that calls for both onions and something like kale, and where you cook the onions first to soften them, I have gotten into the habit of finely, finely dicing those thick kale stems and adding them with the onions. They cook down nicely, and you're getting all those extra nutrients and fiber, as well as not wasting a thing. Makes me feel like our old ancestors who would use every bit of whatever they had in the kitchen, because they couldn't afford not to.
We are minimalist plant based eaters, and this is perfect! Sometimes we literally eat black beans, farro, salsa and guacamole tacos for dinner. Or sweet potatoes with sautéed veggies, beans, kraut, and hot sauce. It’s nutritious, and filling so who cares. ❤️

The only bad thing about this video is the fact I am now starving and it's the middle of the night 😂. I've watched other vegan cooking channels off and on over the years, but there's something in your style and recipes that makes me feel like cooking again. The practical tips and techniques are awesome for me, because I usually find a way to make all of the tasks take 5x longer and more complicated than necessary. Thank you for all that you teach us Derek, thank you for taking the time to share your knowledge, and thank you for soothing my mental health without maybe even realising it 💚🌱
The 'greens' you refer to, we call Sprng cabbage here in the UK. I usually steam for 3/4 mins max. I agree. It's so frustrating that here in the UK, it's really hard to get hold of kale other than already chopped in a bag. You have to go to farmers' markets or grow your own. Another great video, thanks 🙏💕
I from the UK and always called them 'spring greens' rather than 'spring cabbage'. Supermarkets seem to call them either just 'greens' or 'spring greens'. Either way they're bloody lovely and criminally underused.
I've definitely become more creative in the kitchen since becoming completely plant-based. Thank you for continuing to inspire me with delicious ideas and combinations that allow me to enjoy my food and show respect to animals by not eating them
Thanks Derek, this was exactly what I needed to learn to soften my greens, especially the silverbeet (Australia), you call chard/collard greens? l now enjoy a huge selection of salad items in my diet, the colours and flavours are inspiring for one who had no idea of cooking to save herself. Big hugs to Frankie.
I've read almost all the comments on this video and I am amazed by how we all seem to have a similar kind of appreciation of your work, Derek. I hope you can feel the love and the gratitude - for you and the cooking and for your charming canine companion!
I made this and wow was it good. I had a bunch of swiss chard, kale and sorrel in my garden so used that instead of collard greens. Love this channel. I learn something new every time. thanks!
Best way to use the woody stalks from silver beets or kale, chuck into a high speed blender with some fruits like apple and banana. They are excellent for juicing.
Derek, you are a kind and gifted man. I am thankful for you. God bless you richly. We love you and beautiful Frankie! I take kale stems and dehydrate them. Once dry, I powder them in my coffee grinder and store them in a Mason jar. It can be added to loads of things and no waste. ❤
You're a man after my own heart. My dog is a necessity in this life joirney as well. But so is a garden. I'm more of a turnip green type person, but grow collards, chard, mustard and beets as well. This is my first incounter with your channel and just wanted to thank you for sharing. And for not eating animals.
I’ve been the primary cook for my sons for a very long time. My youngest just went to college. I am in a relearning-to -feed myself period where it was, first, important to focus on recreating rituals around food. Then it struck me last week that I can cook what I like to eat. Your channel has been important for this learning. Thank you!
Derek, it does my heart good to watch and learn how to prepare all these delicious veges and also see our beautiful Miss America, living her best life. (Lovely scarf too!) Thanks again!!
Hey Derek! Your lovely channel is a brand-new discovery for me. I dig your cooking style and am inspired to stir up some of that kale for this evening's dinner. BTW, green is one of my favorite fragrances, LOL! Fellow Portlander here. Keep up the good work, neighbor.

Wow I cooked this one and I gotta say it maybe only looks basic, but is so delicious I couldn't wait to eat the leftovers. Don't just watch the video folks, definitely make this one yourself!
I’m new here & looking for inspiration. I’ve been plant based since my teens, but I’m always looking for new recipes. Thank you for sharing your knowledge with all of us!
I just made this, each step was really simple but it still took me like 2 hours. I'm just not fast at cutting everything up, but it did make enough food for 3 days at least and I really like the chickpeas with a different flavor than indian spices. The lemony garlic sauce was really good, that's a neat trick to use the juice from the can. Overall it's a good recipe, tons of greens which I love, easy flavors that aren't overpowering. It's just a normal home cooked dish. Buckle up for the prep on this one though, not difficult, just a lot of veggies!
Discovering this channel has been a blessing

I from the UK and always called them 'spring greens' rather than 'spring cabbage'. Supermarkets seem to call them either just 'greens' or 'spring greens'. Either way they're bloody lovely and criminally underused.
Discovered your channel recently, and have been binge watching - you are truly a blessing. Thank you so much!
You videos are amazing and so inspiring ❤ dogs are truly the best friends anyone could have!
Your videos are so peaceful.
I learn something new every time. thanks!
That looks delicious Derek! I am so looking forward to seeing you creat more delicious dishes of delight 😊
Absolutely love your cooking dude, and your compassion.
Thank you!
Thank you Derek. Always a pleasure seeing you whip up your scrumptious creations and sweet Franky ❤
Thank you kindly
Best way to use the woody stalks from silver beets or kale, chuck into a high speed blender with some fruits like apple and banana. They are excellent for juicing.
Gorgeous! I make many versions of vegan bowls...color, texture, taste!!! Yummy❤
Beautiful presentation!! Thank you for sharing!
Been a huge fan for years and notice the heart and effort in the recent videos and am here for the journey!! Excited to try this one

We love you and beautiful Frankie!
I take kale stems and dehydrate them. Once dry, I powder them in my coffee grinder and store them in a Mason jar. It can be added to loads of things and no waste.
❤
Love your channel! So excited to find you. Thanks
You're a man after my own heart. My dog is a necessity in this life joirney as well. But so is a garden. I'm more of a turnip green type person, but grow collards, chard, mustard and beets as well. This is my first incounter with your channel and just wanted to thank you for sharing. And for not eating animals.
You are an amazing human being - thank you - I love your videos and your love for the animals 😻
Absolutely love your channel. This is a fantastic video...
I’ve been the primary cook for my sons for a very long time. My youngest just went to college. I am in a relearning-to -feed myself period where it was, first, important to focus on recreating rituals around food. Then it struck me last week that I can cook what I like to eat. Your channel has been important for this learning. Thank you!
Love your no nonsense minimalist filming style…and your tasty recipes 😊
I feel so relaxed with you. Love your channel chef.🩶
Derek, it does my heart good to watch and learn how to prepare all these delicious veges and also see our beautiful Miss America, living her best life. (Lovely scarf too!) Thanks again!!
You are both so lucky to have each other, bless you both xxx Lyn

Yes, I agree! I love watching the mechanics of what he can do in a kitchen. A great learning tool. 👍
Hey Derek! Your lovely channel is a brand-new discovery for me. I dig your cooking style and am inspired to stir up some of that kale for this evening's dinner. BTW, green is one of my favorite fragrances, LOL! Fellow Portlander here. Keep up the good work, neighbor.
Yay Derek you are wearing the checked shirt 👍. AAAAWH Frankie relaxing❤. Yes, I try to use as few utensils as possible too. Keep spreading the veg, so important. Enjoy your choice of music, how do you decide what music to use? Thank you for sharing and making your videos must take time, so really appreciate it. Hugs to Frankie. Gale x

Wow I cooked this one and I gotta say it maybe only looks basic, but is so delicious I couldn't wait to eat the leftovers. Don't just watch the video folks, definitely make this one yourself!
Excellent Derek. The mentor I always wanted. I appreciate you.
I’m new here & looking for inspiration. I’ve been plant based since my teens, but I’m always looking for new recipes. Thank you for sharing your knowledge with all of us!
Frankie in a red kerchief, "Please, sir, may I have a biscuit?"♥🐾
I just made this, each step was really simple but it still took me like 2 hours. I'm just not fast at cutting everything up, but it did make enough food for 3 days at least and I really like the chickpeas with a different flavor than indian spices. The lemony garlic sauce was really good, that's a neat trick to use the juice from the can.
Overall it's a good recipe, tons of greens which I love, easy flavors that aren't overpowering. It's just a normal home cooked dish.
Buckle up for the prep on this one though, not difficult, just a lot of veggies!
You're absolutely wonderful. Thank you.
