  • 간장게장 - KOREAN SOY SAUCE MARINATED RAW CRAB

    INGREDIENTS:
    3-4 Blue Crabs (depending on the size)
    7-8 Cups water
    2.5 Cups soy sauce
    1 Apple
    1/4 cup- 1/2 cup of Honey Powder adjust to taste (if using using other sugars, use less)
    10 garlic cloves (5 for boiling and 5 for later)
    Ginger
    1 onion
    Couple of leek roots
    5-6 small pieces of kelp
    Few dates if you have them
    Hwang-gi 황기, 2-3 pieces (astragalus root) * if you don't have this it's okay but really helps catch any potential smell.
    3-4 dried dates
    2 표고버섯, dried shiitake mushroom
    4-5 pieces of dried anchovies (add last)
    *Optional (these are a must for me but if you don't like the spice skip):
    1 Serrano pepper
    Handful of dried Thai Chilies
    Cook initial on medium high 20-30 mins, lower heat + add soysauce and honey powder and simmer for another 45-1 hour. Take off heat and cool completely. After it's cooled use a colander to separate broth.
    Note. After a few days separate the crab and sauce, put the crabs back in fridge. Boil the broth one more time, let fully cool and pour back into the crabs.

    Hi ! what should the broth taste like ? Like should it be fairly salty or sweet etc. I’m scared to make it too watery and perhaps spoil it. Our marinated crab in my culture is in pure fish sauce so it’s fermented to prevent bacteria growth.

      It should be fairly salty and very slightly sweet but more salty. And you boil the broth once more time to keep it longer like suggested in the video. But this one is not meant to keep for months. You should it eat sooner than later.

    Can I use Korean syrup to substitute the honey powder?

      Phillip Amura what kinda of syrup? The corn syrup? You can also use sugar or any other sweetener of choice.

      Phillip Amura you. Can use that just don’t use too much~ you don’t want a thick sauce haha put in later not from beginning... but you’d have to use a lot to make it thick anyhow lol.

    can i use frozen crabs instead? i can't find live crabs where in live, it's a small town.

      You can use frozen but the only thing you can’t determine is if it was frozen fresh maybe you can check on the packaging. Many times a package should say. Just make sure they are fresh and you should be fine with using frozen crabs, I freeze fresh Crabs anyway I just know that they were fresh and alive prior. Thaw them in the fridge as well~

    i know the video is been posted for several months ago, but i hope you can still answer me.
    how long you can stock this marinated crabs? or how long is its shelf-life?

      shayne lafs hello! I would not keep them too long. Unless you decide to freeze. It’s best to eat within the week of making. And def reboil the broth completely cool and pour back in cool if you plan on keeping for more than a week. To be safe I would suggest to eat within a week or two max. The store bought soy sauce crabs they sometimes have it frozen in the freezer section but this is homemade with no additional additives. Trust me it’s so good they won’t last that long anyway! Haha

      Doesn’t really matter, mainly preference. I use low sodium kind.

      You can…but the flavor will be deeper after few days.

      I use whatever I have at the time but generally the low sodium green label from kikkoman or korean kind if I have it. I don’t stick with one brand only.

    This is not funny as most of the comments seem to suggest. If it was a cute fluffy animal like a puppy or a kitten this would be outrageous but because it's not it is okay to take its life in a painful manner? This is disgusting! It's an innocent creature and you have no right to kill it.
