The recipe that they provide for jerky in the Foodi Cookbook is very similar but you both need to add some heat like Cayenne pepper as you suggested. I prefer powders over fresh vegetables as well like Onion powder as it stays with the meat and I don't spend time picking the vegetables out before dehydration. I substituted the Splenda Brown Sugar Blend for the brown sugar and found no "diet" taste whatsoever. I also set the heat a tad higher to 160° and went the full 7 hours as I like it a little harder and I am a little fearful of under cooked beef. Some pieces were a little oily but I simply dabbed it off with a paper towel. I found 8 hours an adequate time to marinate as well. I am very pleased myself with the jerky as are my co-workers.
I'm not sure if it's different down in the United States but when we buy a roast here in Canada, if we ask the butcher to cut it up because we want to make beef jerky then they'll cut it up free of charge...they'll of course ask you how thick you want the slices but nevertheless they'll do it without any additional charges...it makes it really convenient when making jerky... I'm waiting for you to cook some bacon on the racks as I've seen another channel do...

I just got a Foodi and I love beef jerky, but hate the high $ for a small bag. I love that you cut the fat off the meat. I have my stuff (except ketchup, I didn’t have any) marinating as I write this. Btw, your video shows 1/4 cup of brown sugar, but your recipe shows something different. I plan on making the jerky tomorrow. I will let you how it turns out!
Good video. I made some jerky last night for the first time. Dehydrated it at 155 for 6.5 hours and then air crisped it at 390 for 8 minutes. I used onion powder, honey and chipotle powder. DO NOT AIR CRISP JERKY..

Supposedly putting the beef jerky in a plastic ziplock bag introduces some of moisture back into the jerky which makes the overall product much better.
Gosh I bet that is delicious ... would love to try homemade beef jerky and my family would love it. Thank you for sharing this recipe with us Rick, but dang it you make me want all those fun kitchen gadgets and I don't have a ninja foodie .
Could you use your round parchment paper with the holes in it for easy clean up? If you want to cut down sodium or allergic to soy, try coconut aminos, reminds me of terriaki sauce :)

The germs from the outside of the steak are on his hands, then the outside of the ziploc bag, then all over the inside of the refrigerator. The blood splashed all over the outside of the Foodi an the rest of the countertop as he tenderized the meat. I'm sure he grabbed the faucet knob with his hands when he went to wash his hands (if he even washed his hands). I would not eat from this guy's kitchen.
Rick if you put your meat in the freezer for 10 minutes it makes it easier to cut. Got that tip from Racheal Ray.

Making it yourself means you know exactly what ingredients are used and cut of meat...unlike store bought versions.
