- Its cold and dreary outside so let's make soup! In this video I make four different kinds of soup: Tomato and Rice Soup, Back of the Fridge Soup, Autumn carrot and sweet potato Soup, and Potato and Leek Soup. All these soups are easy to make and delicious to eat. So let's make soup together!

Autumn Carrot and Sweet Potato Soup

INGREDIENTS (as I used them)
dollop of Smart Balance
3 small yellow onions, chopped
1 tablespoon Hawaiij
1 pound carrots, peeled and chopped
1½ pounds sweet potatoes, peeled and chopped
8 cups veggie broth
1¾ teaspoons salt
1 tart yet sweet apple (such as Honeycrisp or Fuji), peeled and chopped
2 tablespoons honey
Ground black pepper
INSTRUCTIONS
In a large pot, melt the butter over medium heat. Add the onions and cook, stirring frequently, until soft and translucent, about 10 minutes. Do not brown. Add the curry powder and cook a minute more. Add the carrots, sweet potatoes, chicken broth and salt and bring to a boil. Cover and simmer over low heat until vegetables are very tender, about 25 minutes. Stir in the apples and honey. Using a stick blender, puree the soup until smooth and creamy. (Alternatively, cool the soup slightly, then puree in a blender in batches. Be sure to leave the hole in the lid open, and cover with a kitchen towel, to allow the steam to escape.) Season to taste with salt, pepper and more honey if necessary. Ladle soup into bowls and sprinkle with more curry powder if desired. (Note: As the soup sits, it will thicken up so you may need to add a bit of water to thin it out.)

TOMATO RICE SOUP

2 tbsp olive oil1 large onion, diced 1-28oz can crushed tomatoes3 cups of water½ cup basmati rice½ tsp salt
Heat the olive oil in a large soup pot. Add the onion and sauté for 7-8 minutes, until translucent
Reduce the heat to low, add the crushed tomatoes, water and salt. Turn heat to medium-high and bring to a boil. Add the rice and stir well. Reduce the heat to low again, cover and let simmer for about 10-15 minutes or until the rice starts to soften (increase the time to 30-35 minutes if using brown rice or until the brown rice is tender). Take the pot off the heat and keep it covered for another 10 minutes or until the rice has cooked completely.

Potato Leek Soup

INGREDIENTS (as I used them)
dollop of Smart Balance
6 large leeks, white and light green parts only, roughly chopped
3 cloves garlic, peeled and smashed and chopped
2 pounds Yukon Gold potatoes, peeled and roughly chopped into ½-inch pieces
7 cups vegetable broth
2 bay leaves
3 sprigs fresh thyme
1 teaspoon salt
¼ teaspoon ground black pepper
1 cup soy milk
INSTRUCTIONS
Melt the smart balance over medium heat in a large soup pot. Add the leeks and garlic and cook, stirring regularly, until soft and wilted, about 10 minutes. Adjust the heat as necessary so as not to brown.
Add the potatoes, broth, bay leaves, thyme, salt and pepper to pot and bring to a boil. Cover and turn the heat down to low. Simmer for 15 minutes, or until the potatoes are very soft.
Fish out the thyme sprig and bay leaves, then purée the soup with a hand-held immersion blender until smooth. Add the soy milk and bring to a simmer. Taste and adjust seasoning with salt and pepper. If soup is too thin, simmer until thickened. If it's too thick, add water or stock to thin it out.

Question: I noticed you used the immersion blender on vegetables. If you used it in either dairy or meat soup, would that cause the blender to be specialized to one or the other? Thanks! PS. Loved the “Amen” chorus behind you!
@@LauraRogers-xu1fi yes absolutely. We only use it for parve (meaning not meat or dairy). I’d have to get a second for dairy and a third for meat if I wanted :)
Really love Potato and Leek so excited to try that one first. Since I'm a widow and live alone I need to find recipes that I can freeze so I'm not eating the same thing for days. Thankfully all these soups should freeze well so I'm ready to start cooking. Love watching Baby Firefly sitting on the floor enjoying his snack and his hearty approval of the soup. Really enjoyed this video. I have just volunteered to provide home cooked meals, 100 of them, to a charity event on 2 March so it's good too see someone else doing lots of cooking. Inspiring. I like to hear of good ideas to use the odd bits of veges etc to reduce waste. It's also good to see you getting your children involved in cooking. It's a great skill for them to take into adulthood😊

My favorite meal is grilled cheese sandwich and tomato soup. I always say if I knew I was eating my last meal that would be it.
We have some type of soup/chili/soup most weekends in the Fall and Winter. I am definitely going to add the potato band leek soup to our list to have.

Soup is one of my favorite comfort foods…I spend Sundays in the fall making soup…I always have chicken soup (some with matzah balls), a vegetable soup, butternut squash soup…sweet potato soup…French onion soup…on cold nights I will pull a soup from the freezer…
We have snow today in Michigan. I make lots of soup all winter. Mediterranean White Bean, Chicken Orzo, and potato are my favorite go to easy meals. I always make a huge pot and freeze since it’s just us empty nesters. My daughter-in-law is sick so I grabbed a container of the chicken orzo and we took it over.

What I love most when I make soup is that all the flat smells so good, I have food for too days and is natural warm for the body.

Hi Chana! These soups looked so delicious! My own favorite soup is a butternut squash soup. I have also taken a can of pumpkin puree and added vegetable or chIcken stock , delicious and quick and easy! My husband is happy with chicken noodle or minestrone. As always a pleasure to watch and learn....
Leek and potato soup is so good; I’ve added peeled courgette (zucchini) for extra creaminess when blended. I’ve used oat milk in place of dairy and it works well.
Parsnip soup is nice blended and some curry powder added; the spices really suit it. Also good with just cumin and coriander added.

The base of all of my mother’s soup was clarified onions, tomato sauce and creamed corn. Then the fridge got cleaned out - if there no potatoes in in fridge (which she called an icebox) we added chopped potatoes. My favorite fridge leftovers were black eyed peas, black beans, and carrots. I add potatoes and carrots to all over my base ingredients. This was an upgraded depression era soup. She was born in 1914. I(I’m 73 and she was 36 when I was born - think WW1. It’s an oldie, but a goodie. Oops! Forgot the salt and black pepper, as do I. Love your channel, Channah. I was raised Roman Catholic, too. And I live in or around Dallas for years. 🙏🏻 to you and your beautiful family. ❤

So many ideas. I love carrot and orange,or carrot and ginger soup, also celeriac,apple and cider. I also make back of the fridge soup to use up leftover veg before it us beyond use.
My Dad's Mom lived with us and my Mom worked. Grandmom made soup everyday with chicken reserved for Sundays. That's pretty much how we got our vegetables. At least that's how I remember it. My family is Portuguese so if we had been Jews we would have been Sephardic. Avo was big on onions but very sparing with garlic. I didn’t notice any garlic in the soups you made. She was also big on bay leaves. The house always smelled great.

Your soups look really good, Chana. I especially loved your tomato and rice, which I've never tried in a soup form but I have put tomato sauce on top of a bowl of rice and its delicious. Rice is so versatile, it goes in and with so many different meals. I'm definitely a rice lover; could eat it everyday .. I don't, but I could.

Hi Chana, loved this video & love soup ! Like you I am not really a gadget person but do have an immersion blender which was my Mums, does a great job but I am so clumsy with it & usually end up splattering the kitchen & myself with hot soup 😕I like to make carrot & parsnip soup & blend it up so yummy😋 Such a great way to get additional veggies in the family's diet, I make chicken soup every week & chuck in all kinds of veg to use them up green beans, spinach, cabbage, carrots, celery etc a big squeeze of tomato paste also adds depth of flavour. Loving your pretty ceramic bowls, we certainly eat with our eyes 😋 Clare 🥣

Hi Chana! Raining here alot also in Israel the past couple weeks. The first soup looked so yummy! Tomato soup and grilled cheese are great memories. My Mom would serve this after we went swimming. (we skipped the rice as we had sandwiches). I also love ''Cleaning out the Fridge soup''. I get really proud of myself (and my husband also).using the food for good meals instead of wasting and throwing away food/vegies. All the soups looked delish. Thanks for sharing with us. It must feel great when Big children FF help with peeling and chopping. Baby FF is getting big!

Love the fact you have dairy free options for soup and I loved tomato and rice soup too growing up my foster mother use to make it quite often during the winter but the soup was made from scratch using fresh tomatoes 🙂.

Hun never had tomato and rice soup I will have to try it. Some faves In my house is beef and barley soup as well as broccoli and cheddar soup and always big hit in my house is chicken and dumplings.

Nice! I have chicken bone broth in the crockpot as we speak. I have been soup testing, too. I have a tomato to try from a Zingerman’s cookbook. I am making the Shoney’s beef and cabbage next week, maybe Friday so I have a bowl for Friday night! I am going to make Sivans kitchen orange soup ( sweet potato and butternut squash), again. I am planning on buying some kubbe to try in the soup (not a beet fan). I am still looking for Hawaij. I added Moroccan Ras el Hanout to the canned beans cooking down to make refried beans. Smells good so I think it was a good guess. Love Baby Firefly’s stamp of approval!
