  • On this video, I smoked up some beef tongue to make tacos de lengua. It's been several years since I've eaten lengua and this is my first time smoking beef tongue.

    I remember not too long ago, like just around 2014 I could get a tongue for around ten bucks now they are 25-30 dollars apiece! I think maybe the secret is out! That's >$6 per pound because most lengua are 4-5 lbs. Wow, I just got to the end of the vid- I never seen a tongue under three pounds! Wow. I'm making one this week that's 4.3lbs I thought was average!! Holy Cow!

      $8/lb now 😱 we need to genetically engineer a cow with two or three tongues and chicken with 6 wings and lays 12 eggs a day 😂

    I grew up thinking barbacoa was lengua. My mom always uses lengua. She just places it in the crockpot overnight with nothing but a little water. She says the skin slides right off. She then shreds it and removes any excess fat. A little salt and hmmm. I’ve been wanting to try a lengua using more of the beef cheek method you use. Great video. I like the Mexican take on smoking. Keep ‘em coming.

      Hey Rus! Thanks so much for taking time to watch and for leaving a comment. Getting some of that good offset smoke on the tongue was the key. I fried up some of the left overs tonight and got the tongue a little crispy and holy smokes it was really good. That salsa was so good too. Thanks again!👍🏼

    If you brine the tongue before boiling/smoking, you'll get a better flavor and just a velvet texture. Just wish this cut wasn't so dang expensive, but I suppose that's standard for these times.

    My local taco truck serves amazing lengua. My girlfriend was freaked out about it but she had it without knowing it was tongue now it’s her FAVORITE😂😂

      Curry beef tongue sounds so good! That really was a poor man's food back in that day. I'm really liking sharing these old school meats that I had when I was young. Of course my cooks have a twist since I smoke everything. Beef cheeks and now beef tongue...stay tuned for the next "poor man's" meat cook! James would love these tacos. 😂

    Nice recipe, i make it all the time seasoned up then vacuumed seal and sous vide 158 for 36 hrs peel it and dice it and heat in pan to crisp is amazing 😉

    We dunk them in ice water straight from the boiling water and the skin separates nicely !

    Joe this was a very interesting video on several levels. First I've never seen it done before and have to say I think I'll have to try it. It didn't look like I thought it would. Secondly it never occurred to me it would be like a roast or brisket but it makes sense now that I see it. And the process was like any thick meat you want to tenderize. I'd love to make that salsa though it's probably too hot for my family but I love making fresh things to serve. I like the idea of cooking it wrapped over the onions and steaming. I'll be giving this a try. Thanks for a unique and unusual cook! I learned a ton as usual. Have a great week Joe.

    I'm cooking my first tongue and this is the option I'm going to go with. Or the process. I've had it many times and love it let's just hope I do as good of a job!!! I also appreciate the short clip on the salsa!! I added a few tomatoes to cool the heat a little!! It's great!! Keep the great tips coming sir!

    Last vid i watched showed there is a blood vein on the bottom you have to cut out.Also the thicker end is the tenderest and it gets chewier as you move to the tip.And also,my taco place had their lengua a little crunchy and I liked it that way. They had it cooked and threw it on the griddle for a bit.

      @@SmokinJoesPitBBQ If people were around in the Great Depression era, like my dad, his siblings and parents, and my (late) mom, her older sisters, and parents, offal cuts were likely part of the diet. It's still great eating. Cheers!

      @@dwaynewladyka577 absolutely! My family made this all the time. My grandmother had 13 kids so you can imagine how expensive it was to feed that many people. This is all we knew growing up and the food was absolutely delicious. My grandfather even grew prickly pear (cactus) and my grandmother would make tacos out of that. A little onion, jalapeno and tomato and bam....dinner was served.👍🏼

      Boiling it in spices with enough bay leaves is a must. 👍🏼

    I Long did you Smoke This Beef Tongue 2-3 pounds size in an Electric Smoker?

    I love interesting twists on things like tacos! Was it tough or dry at all since its a tonge? I bet smoke it for half the time and then sous vide it the rest of the way. I might have to try this.👍👍👍 Thumbs up brother!

      Tacos de lengua are a staple in Mexico. traditionally they are cooked in a pressure cooker or boiled then deep fried. The texture is the best part of these tacos.

    This looks great ! I’m wondering if boiling the meat before smoking it would change texture of meat or prevent the meat from really deeply absorbing in the smoke into it? As your explaining this I’m looking at it as a boneless beef roast. I’m definitely trying this recipie Thanks for sharing

    Beef tongue is kinda pricey but i wana try it. My gf always gets asada but she says my tacos or burritos de lengua are good but seeing it raw in the store grosses her out.
    I want to try this with pork as I noticed the other day my food4less had pork tongue packaged on a misc part of the meat aisles.. Never had them but my uncle told me my grandma used to make beef tongue for like roast beef dip sandwiches back in the day.. Definately gotta try to cook my own, starting wit pork cuz its smaller and cheaper.

    I've watched a couple of your videos, but sub'd because of this one. I can tolerate a lengua taco once every few years - but they are mostly bland and chewy. I would really like to try this method.

    May I ask why butcher paper vs aluminum foil? Never seen butcher paper used like this.

      I used butcher paper to see if I could preserve the bark. I actually would've been okay using foil and it would've sped up the process too. Thanks for watching.👍🏼

    Lengua is delicious especially when you smoke it!! Have you ever asked your local butcher to remove the skin? Some of them will.
