    Hi Chris, Greetings from Costa Rica! as "The Mad Swine Backyard Barbeque" friend who wrote at MX they love it, here in CR we do cook Cow tongue as well, but we cut the base (head) of the cut, boiled with some species (Salt, pepper, bay leaf, garlic, celery, you could add carrot as week at the end all of those are added to the water for flavor), then you out all of them with plenty water on a pressure cooker, cook it, then once it cools down you peel it (that external skit comes out easy), then you slice it, and serve with tomato sauce (natural one). I did smoke once it but after it was cooked, so waw kind of cold smoking as it was already cooked.

      Eduardo Vega this is what I love about the Food Community. A piece of obscure meat like cow tongue can be cook a hundred different ways. I wanted to really step out of the norm on my favorite protein. I was going to boil it to remove the the skin, however I didn’t want to take away from the smokiness and authentic BBQ flavor.     Us Mexicans love our Lengua! Pronounced Lang-goo-wah 🙂 I cook it a lot but never on a smoker. Great idea! Tacos de like lengua are absolutely delicious! Hope you made some.

      The Mad Swine Backyard Barbeque I saved most of the roast cause I’m the only one that eats it. Lol. I sliced it thin at had it in a tortilla, I call it a burrito. Smoked Lengua is an amazing way to go and it adds a ton of flavor. Thanks for the support and watching Brother

      @@meatcranium4280 Smokey Ribs did a video on lengua where he made tacos and did a pretty awesome job. Was proud to see it done so well. However my fiance HATES lengua but I think you opened an avenue that I might be able to try and see if smoking it might elevate the flavor for her. Thanks for the excuse to make some more! ✌️😎

    That looks awesome. Best bbq channel out there. On a side note I was watching with both earbuds in. The music takes me back to the 90's when we had huge speaker boxes crammed into the back of a truck. A little nostalgic for me.

    Awesome. Have to try it. Growing up in Rome MANY moons ago, no one had steaks. We did tongue sliced up served with a green parsley and olive oil capers Italian sauce. Yum. Affluent people just eat "prime" muscle cuts. Love what you're doing. Hey I told you I had an answer to the "Merlin". Just ran the first test loading 100 briquettes at 40F ambient to start finishing at 25F ! No controller 5 hours. This is 50% loaded so it should go 10 hours fully loaded!! Now ordering a FireBoard to continue testing. I think it's s winner. Can't wait for you to test it.

    Hey Chris! Gotcha on the ending so I'm here on the flip side that cook was to perfection Beef tongue Candy and the Smoked Beef Tongue looks absolutely amazing.     Looks delicious! Going to try this soon but I may do a few things differently. The burnt ends didn’t seem tender enough. Maybe either start it whole or as bigger chunks then cube down when wrapping although they may not have as much bark or smoky flavor.

      I stated in the video that I could have gone another half hour, however they were bangin anyhow and still tender. Some of the pieces were perfect, but most needed about another half hour. Thanks for the support and watching Brother.

    My mom tried to pass cow tongue off as a roast when I was a kid. Didn’t work, I knew something was up and hated it. Now, smoked cow tongue I might be able to do. It’s gotta be cheap, right?

    People in America at least don't realize beef tongue meat is better than any steak cut. it's just a beefier, delicious part. They see that skin on it, and go, "ewwww". Same goes for beef cheeks, that too is better than any steak cut.

    At 150*f is the roast shreddable for tacos or does it need to go longer?

      Trippingonfaith ! Definitely needs longer. At least get it to 195-200, I like 205, that’s the sweet spot. I wanted a sandwich, and you can cube it up for burritos. Thanks for the support and watching

    Hey I was wondering did you use any wood chips, I have never smoked before but wanted to try after eat some amazing smoked beef tongue myself. Any recommendation for beginners like me that might not have all the correct smoking equipment but just a regular bbq

      Colten Arment several hours. I generally state that in the video. I need to rewatch. I would go by feel.
