I’m like you , Tacos are just not right without cilantro but my wife hates it. She said it tastes like dish soap somehow found its way into the mix. So I get it, she doesn’t... And Hell Yess, it’s about time Randy came back for a visit ! Looking forward to seeing him again !
You can get masa harina really cheap online and make homemade corn tortillas that are way better than store bought. Super easy! Also, some of us (me) hate cilantro because of a gene mutation, but I keep eating it hoping that I like it some day.
If you were curios what the strings are inside the heart, they’re called “chordae tendineae.” Connective tissue that keeps the hearts valves from prolapsing.
Cilantro is that addition you either love it or you hate it. Not many on the fence. Me I love it with most any dish. I have chopped stems in the freezer for soups and stews, leaves to finish a dish, and cilantro pesto.
In Peru we make skewers out of beef heart marinaded in spices and chilis called anticucho. My dad's special ingredient that we learned from a fruit vendor to make the meat extra tender was using papaya skins and papaya juice in the marninade. It turns out the papaya is very high in Papain enzyme which is an enzyme that breaks down proteins, so it softens the tough heart meat wwhile giving it some sweet notes. Y'all should try it out if you wanna experiment making heart in the future!
Here in Mexico we enjoy beef heart in many different recipes, including bbq tacos. It truly is a delicacy. If your wife thinks cilantro ruins everything, her heart is probably colder than that beef heart was. P.s. you're gonna have a lot of making up to do for that comment!😂
Your wife is my hero. There are only two edible items I don’t like to eat. And I don’t mean “I won’t eat”, I mean that I like everything else. The two...succotash and CILANTRO. Cilantro overpowers everything you put it on. That a FACT 😂
I bagged a moose in November and pan fried the heart. Looking back I wish I would’ve saved it and brought it home to smoke it. Gonna have to try with a beef heart now.
I Love Cilantro! I cover my food with it! My wife says it taste like soap. She also says it is proven that certain folks taste soap rather than how it should.
Very under appreciated cut, I am an avid hunter and commonly eat hearts, kidneys, and use the livers for homemade dog food. Thanks for your videos. BTW, tongue is also good, it’s all in the preparation.
Is that a Shun Premier boning knife?? I tried to buy one from America, but it was 'lost', where did you get it from? Can you recommend a company that can actually get it to Australia? Love the video's!
Ah heck yeah, Randy is comin back! Great episode, never really thought about cooking heart because I didn't know how to deal with it. I love Porter road, its the only place I buy beef from anymore. Now go apologize to your wife before you end up in the doghouse hahah!
Great video Jeremy, I like how you break down and explain everything. I'm with your wife on this I hate cilantro, it taste like soap to me. Before I figured it out I would always think don't these restaurants rinse their dishes. Thanks again Jeremy.
Never thought a heart could look like a sirloin. I like cilantro in moderation but I get why some people don't like it. I've also heard it tastes different to different people, some say it tastes like soap.
I am shocked that the cook time was so quick. I thought a working muscle would need to be braised or cooked low and slow for a long time. I'll have to look for heart at my butcher. Thanks for the video. I'm glad you're doing well.
You can either cook very quickly or braise for a long time. Anything in between is no good and tough. You can cook quickly because the grain is so small
Love the video, and am interested in trying it; I'll try nearly anything. I looked on Porter Road and they don't even advertise whole heart; just heart steaks. How did you get this?
Late here but I agree with your wife - cilantro ruins the dish for me. Unfortunately I’m one of those that tastes only soap. But the dish looked amazing and I want to make this the next time I get a beef heart.
The thing I love most about cows... they just seem to have such big heats! ;-) No, but seriously , folks. I have to try one of the these. I just won't tell my wife what it was until after we eat!
This is a first for me Jeremy. I confess, I haven't lived much. lol I don't like cilantro either mostly because I've never had it. So, with this in mind, all I need is one of those heart tacos all the way. haha. Nice video and thanks for bringing something new like this. Say, what part of the property is your bunker located. If you dig any holes out there on the property, don't dig too deep. You may run into an underground base. lol
Phil N Florence 😂😂 Give it a shot. You may enjoy it. Where I live there is no need for a bunker. Just live on the mountain and it’s almost like a bunker
Mad Scientist BBQ I like the cooker you have in this one. Is it a PK? I like smoking chicken on mine bc I can smoke the chix and get a nice sear after to get the skin crispy
Cilantro is an interesting ingredient. Those of us that love the flavor of cilantro do not get a soapy flavor when we eat it. My 2 daughters, when they eat cilantro, all they taste is soap with any amount, my son loves it. I am told it is genetic but I don't believe everything I am told.
Personally cilantro is very overpowering. It is okay in moderation. Which is hard, I want to taste everything together in harmony not just cilantro with other textures
Yeah, just because it tastes like soap to her because of genetics, that's no excuse not to eat it. I'm sure Jeremy will gladly put soap on his next cook to just to show her he's open minded.
You’ve probably heard this before but rumor has it that whether you like cilantro or not is a genetic thing. Some people don’t like it and they just can’t help it. I happen to really like, though. We’re the lucky ones, I guess.
My favourite BBQ channel - thank you for everything you do!
I’m like you , Tacos are just not right without cilantro but my wife hates it. She said it tastes like dish soap somehow found its way into the mix. So I get it, she doesn’t...
And Hell Yess, it’s about time Randy came back for a visit ! Looking forward to seeing him again !
TexasBob
I reckon Randy’s fixin’ to get back on the UA-cams
Looks good, you could almost say it's... Hearty.
😐
You can get masa harina really cheap online and make homemade corn tortillas that are way better than store bought. Super easy! Also, some of us (me) hate cilantro because of a gene mutation, but I keep eating it hoping that I like it some day.
Cilantro is an herb of the Gods
If you were curios what the strings are inside the heart, they’re called “chordae tendineae.” Connective tissue that keeps the hearts valves from prolapsing.
Hence “pulling at my heart strings” I did google that lol
Thanks!
5:49 for the people who only came to knoe how to cut the fat off😃👍🏾
Cilantro is that addition you either love it or you hate it. Not many on the fence.
Me I love it with most any dish.
I have chopped stems in the freezer for soups and stews, leaves to finish a dish, and cilantro pesto.
Great video, cilantro rocks!
Anticuchos?
Never knew that about papaya…Thank you!
Here in Mexico we enjoy beef heart in many different recipes, including bbq tacos. It truly is a delicacy. If your wife thinks cilantro ruins everything, her heart is probably colder than that beef heart was. P.s. you're gonna have a lot of making up to do for that comment!😂
Cilantro adds to the flavor. U r right in that the full flavor of the heart muscle comes out only with pepper and salt mixture. Congratulations!
Hands down the best idea out of this video was the Chipotle sour cream. Lord that's good!
I Love Cilantro! I cover my food with it!
My wife says it taste like soap. She also says it is proven that certain folks taste soap rather than how it should.
Daniel Preach
Yeah it seems like people either love it or hate it
There’s this Peruvian/Bolivian recipe called Anticuchos its cow heart but sliced thinly and skewered you should check out
Only_ Todd
Thanks! I appreciate it
Cilantro is perfect
Diced ripe home grown tomato and avocado would make your eyes roll back in your head.
After the “cold heart” comment, how long did it take you to walk home. 😂
Very under appreciated cut, I am an avid hunter and commonly eat hearts, kidneys, and use the livers for homemade dog food. Thanks for your videos. BTW, tongue is also good, it’s all in the preparation.
💯
Love Cilantro especially in Pico de Gallo & of course in a taco
2024 picked up my first heart to day. Looking for ways to cook. Thanks.
Try using longer knife strokes w a sharper knife....you won't get uneven slicing
Is that a Shun Premier boning knife?? I tried to buy one from America, but it was 'lost', where did you get it from? Can you recommend a company that can actually get it to Australia? Love the video's!
Just placed my first order with Porter Road. Thanks for the tip!

4 Seasons BBQ
Haha yeah some people just can’t stand the taste
It does taste like dish soap! Horrible weed
Wygląda pysznie. Pozdrawiam. Rękawiczki niebieskie ? 😃 Mówiłeś kiedyś że lubisz czarne.
Do you like the PK grill? Recommend?
Eli Yot
It’s a great little grill. But I think you would be fine with a Weber kettle too
My whole life cilantro tasted like soap. Recently I accidently had it, and now it tastes amazing. Can't wait to hear from Randy!
Jason Phillips
Interesting! Randy will be making a comeback shortly
Just bought my first beef heart from a local farmer, might just do this. 🤙
Sorry Erica, but I love cilantro like Jeremy. I do feel water chestnuts ruin everything but that’s a different discussion altogether! ❤️
I agree with her 😅
I smoke them all the time so good
Cilantro is the best.

Sure thing but those things are hard to find in Southern California
Never thought a heart could look like a sirloin. I like cilantro in moderation but I get why some people don't like it. I've also heard it tastes different to different people, some say it tastes like soap.
I’ve said that it tastes like soap for years and people look at me weird.
Yeah I think it’s a genetic thing
Thumbs up for knowing the plural of atrium 👍
Viva..celantro!
I am shocked that the cook time was so quick. I thought a working muscle would need to be braised or cooked low and slow for a long time. I'll have to look for heart at my butcher. Thanks for the video. I'm glad you're doing well.
Yeah. I figured he was lying. I've never seen heart cook so short. Maybe it's all about the seller.
You can either cook very quickly or braise for a long time. Anything in between is no good and tough. You can cook quickly because the grain is so small
Love the video, and am interested in trying it; I'll try nearly anything. I looked on Porter Road and they don't even advertise whole heart; just heart steaks. How did you get this?
fretless 5
I called and made a request. They usually do all the trimming and sell heart steaks but I thought it would be cool to have the whole heart
Great video.
It depends on how much Cilantro you use, Cilantro can be very overpowering!
Outlaw jjSmith
It definitely can be
How do you know how long to cook it for
Looks good! It depends on the cilantro. What was the internal temperature ?
Cilantro tastes great to me!
Misinformation With Randy
Haha agreed
I usually smoke then put mine in a pressure cooker!

Cilantro=Good…….Erica=Confused, but Beautiful
Looks really good! But where's the guacamole? Awesome videos!
My daughter and I like heart, grilled smoked pan fried in lard. My wife won't eat it. That just means more for me.
Brad Neal
Haha that’s cold blooded
I had never considered cooking heart like that at all. Looks amazing.
Great to see you back.
Me and my wife love coriander (Brits)
MrWylis
Yeah I wonder why it’s called coriander in the UK
The fat can be saved to make a candle. It’s called a heart light.

You will be bleased for not disowning her. Cilantro makes anything that recommends cilantro, BETTER.
Agreed
Those tacos look great. I do like offal cuts of meat. Yes, I do like cilantro, but to each their own. Cheers!

Yeah, just because it tastes like soap to her because of genetics, that's no excuse not to eat it. I'm sure Jeremy will gladly put soap on his next cook to just to show her he's open minded.
Go mustache only!!
Haha I dunno about that

Trying to
You’ve probably heard this before but rumor has it that whether you like cilantro or not is a genetic thing. Some people don’t like it and they just can’t help it. I happen to really like, though. We’re the lucky ones, I guess.
I has cilantro all over the backyard.
