    Tongue is one of the best cuts off of any animal, wild or tame. Wondering how wagyu differs from the rest..

      I totally agree! Earlier I chopped up the big piece that I didn't chop up in the video and that had some really nice marbling. The tongue itself is pretty lean but that other part has a very nice meat to fat ratio. I chopped it up, and vacuumed pack enough for another taco night or two, and sauteed the rest in it's own fat and OMG, that was even better than what I showed in this video. I'll be ordering more of this at $20 per tongue. It's only my wife and me so one tongue will get us at least 3 taco dinners.

    Tacos de Lengua has always been one of my favorites! Although you're missing one crucial step to cooking Lengua. After you rinse it really well it's very important that you chase everyone around the house with it........ then proceed to cook.

    First of all, Sway here from South Florida... my favorite recipes are your red beans and rice, stuffed crab and seafood boils. Tacos de lengua is a Mexican staple. Traditionally, a Sunday meal. The awesome thing about tacos Is that you can make the toppings whatever you like. Definitely gonna try your spin on it.

      I love all kinds of tacos. Mahi Mahi being one of my favorites, but this was so so authentic Mexican tasting. Really good stuff and thanks for trying my recipes and the feedback. I really appreciate it!

    This recipe looks amazing. I never did beef tongues, but my father used to eat beef tongue very often... Hey Rus, I also am really looking forward to your upcoming video on cleaning your bbq smokers, I hope when you do that video you can also explain how often is ideal and about whether some rust or paint chipping is unavoidable and how to properly re-season.

      I can't even buy it around here, so I have no idea what it normally cost, but this is wagyu tongue, so I'm sure that alone is going to make it more expensive. Thanks for watching!

      Yeah, I know what you mean. Years ago, they would just about give brisket away, but now everyone wants to do brisket. Pork belly was for bacon and nothing else, but look at it now. Cut's of beef you hear of now, that you never heard of before. It's crazy!

    And Russ Jones arrived at the bat and once again I take it out of the stadium ... I have tasted the tongue in tacos, in tomato sauce and marinated and it is a super delicious meat .....     Been making this for years absolutely love it. I like the white onion and cilantro with some chile verde and some guacamole in my tacos to round out the flavor with a squeeze of fresh cut lime oorah! Nice Job!

    My grandma always made lengua when we were kids. She would make us burritos and day it was pot roast. We all ate it up. As I grew older I knew that she was making tongue. By then it didn’t bother me it was tongue. It’s fun seeing the other younger grandkids fall for it now. We grew up on a lot of organ meats, tripe, tripas, liver. I still have a hard time with liver though lol. Too gamey. Great video.

    Thanks for the video. I had never thought about "lengua de res" other than how gross it looked in the store. A friend told me it was his second favorite cut of beef behind filet mignon so I found a couple of recipes (and this video). I'm going to try it in my Instant Pot next chance I get. $25 for a Wagyu tongue - around 6 bucks a pound? The best meat market in Kansas City charges $7.89 a pound for Angus! They charge $5.99 a pound for a packer brisket (properly trimmed) for reference. I like mine spicy, so I'll add some of my garden Dragon Cayenne to mine while it's braising. Thanks again for giving me the courage!

    Good vid Rus. I know beef tongue is a delicacy in many European and South American countries. Someone here in the comments mentioned how the price of all these specialty meats has risen dramatically over the last 20 years or more. I think folks are demanding more specialty cuts now than they were in the 80's and 90's. I remember beef skirt steak was dirt cheap in the 80's until Fajitas became a huge hit and now the price of that cut of meat has skyrocketed. Good looking tacos Rus and keep these awesome vids coming. Cheers mate!

      Thanks William! Yeah cuts that use to be considered undesirable are now very popular and the prices reflects that as well. I can remember when they would just about give brisket away, but now one of the highest priced meats out there. Thanks for watching William!

    Looks good Russ, we typically don't use vegemite in cooking here in Australia. It's more commonly used on toast in the morning for breakfast. Great video brother

      Thanks, I appreciate it! I just ate some leftovers. Took the chopped tongue meat and sauteed in a skillet using it's own fat, to add a bit of color and texture to the outer parts and man oh man was it good! I could hurt myself eating those LOL!

    I love a cold tongue sandwich. We get tongue every time we butcher a cow. Something else to do with tongue that's really good is corn it, like corned beef brisket but more of a firm less fat meat, it's really good sliced and right out of the fridge.

    He gave me a Vegemite sandwich. Men at Work. The only time I've ever heard that word, (until Mo ate some on MoJo's Crazy Kitchen. Mind over Matter I always heard. LOL It's just different.     Great idea using the vegemite,. I use both vegemite and marmite to season stew and soup it really does beef things up. I like it on toast as well. Looks like we have a nice and dry week ahead of us..Cheers buddy~

    When we were kids, my parents never threw anything away so we ate a lot of tongue. Once you get past the idea of it being tongue it is delicious. Just like eating Rocky Mountain Oysters............yummy.

    Great recipe Russ looks absolutely delicious here in Trinidad &Tobago we call it cow tongue we'll usually do a stew or a curry stew but our stew is done different to how use guys to your stew over there. Thanks for sharing.

    Great Demonstration Russ, only way I seen beef tongue is served with raison sauce. The consistency of meat after cooking looks similar to chicken and turkey gizzards. Have to check the vegemite out, I take it a little beef bullion if you can't find that would be good substitute. The tortillas are becoming a good wrapper for many things. This video is a keeper. 👍🏼

      Yeah, the texture was very similar to organ meat, kinda like liver almost but has a much better flavor in my opinion. I just don't care for liver to much. Yes, I would recommend the real beef bouillon over the vegemite. It didn't really make a difference on this cook, but with the real deal, you know you are ok in the flavor department.     Hello Rus, tongue is like a rich roast beef, you must have some Mex in you, that is the proper prep for tongue tacos, try spraying the tortillas with some veg spray and warm up the tortillas in a skillet and get a little color on them it will help from falling apart...going to try wagyu cut of tongue, love your recipes brother...

      Thanks Scott, these tacos are incredible! Especially the ones I did last night with the leftovers. I reheated the chopped meat in a skillet and let it saute in it's on fat (lots of fat on the other end of the tongue) and wow, that made a big difference. It was already delicious, but that one maneuver elevated it to another level!

    Great video. I love beef tongue, and pickling them, too, for sliced tongue sandwiches.
    Do you think with all the cooking seasonings and then the toppings, that you could tell a basic tongue and this fancy tongue?
    I just made a tongue overnight, in the Crock Pot, and it's delicious and tender. Can't imagine it any better for a higher price, even..........

    Well yum yum. I have had tongue before and I know I would just love that with onions & greens and all. I've never cook any myself and I think I might not want to do the cooking part but eating yes & heck yes 😂 I'm glad your son took some tasting too ! Very yummy tacos you made Rus.       I think you would like this version of tongue Paivi. It was so good and I got leftovers for tomorrow too LOL! Yeah, the rain really gets in my way a lot but what can I do other than think of recipes that's bound to make people take a second look LOL! Yeah the vegemite is pretty strange to me. People make sandwiches out of it in Australia and to me it tasted like concentrated beef bouillon, but it didn't ruin my tongue in this video, so that is a good thing. :D

    Nice shout out to First We Feast. I imagine Wagu tongue is outlandishly expensive. Prices I see for regular beef tongue are ridiculous. Would love to see a traditional barbacoa prep.

    I've never had beef or any other tongue. Like your son, it's a mindset thing for me. Looked very unappealing, until you removed the skin. Lengua sounds a lot better than tongue. Maybe someday, I'll give it a try. Nicely Done. Thanks for sharing. 😎.

    People often misspeak calling American Wagyu just Wagyu, there is a huge difference. I know from living in Japan for 11 years that American Wagyu doesn’t even come close to the real thing.

      American Wagyu is not bred nor raised to compete with Japanese Wagyu. It is usually a cross breed between certified Japanese Wagyu cattle and a American breed such as f1 Angus with a certain end result in mind that delivers a very well marbled beef with a familiar American beef taste and texture that Americans like. This cross breeding pretty much guarantees prime grade of beef every time and not so heavily marble and rich that only small portions can be eaten like with the Japanese Wagyu.

    You ever seen anyone smoke beef tongue? I wonder if there's a way to make that work. I've heard lingua is awesome, hope to try it one day. Nice cook, Rus! Smoke on 👉 💨

      I’ve heard of it and sure it could be done. I think smoke would be nice on it. Maybe smoke a few hours and then braise. Put back on smoker for 15 minutes to dry the surface a bit.

      LOL, I hear ya! Beef tongue is actually great tasting, but the vegemite thing was a challenge that I agreed to. That will be the one and only time you see vegemite on my channel, guaranteed ;)

      LOL, it must be the beard he wears. He looks much younger and totally different when he is clean shaven, but he lives the boat life, and the beard is there to stay. I just ate leftovers and sauteed some of the chopped tongue meat in it's own fat to add a bit of color and texture and man it was even better than what I did in the video! Wish now, I would have done that in the video. There is always next time though. I was able to vacuum pack and freeze two bags for two other taco meals in the near future. Great stuff and thanks for watching, I appreciate it!

      Why because he doesn't like raw onions or cilantro? Or because he was hesitant about trying the tongue meat? You don't have to be a kid not to like certain things. I can't stand brussel sprouts, beets, liver, and the list goes on ;) Thanks for watching!

    I doubt a wagyu tongue is any different than a regular angus tongue. Sure there’s a difference in steaks and what not but I highly doubt the tongue is different other than tacking a higher price tag on it. 🤔

      It's only $20, but the part I didn't show chopping in the video, I chopped earlier and it had awesome fat marbling. That is what I should have used in the video actually. I chopped it all up, vacuum packed enough for two more taco dinners, and sauteed the remainder for tonight's dinner and WOW, it was better than what I did on the boat! I think I'm going to order about 3 of these, braise them, chop them, then vacuum pack and freeze. Too good not to keep on hand.

      Smoky Ribs BBQ right on. That’s pretty cheap for a tongue. Used to be trash cuts that now have a premium stamped on em. Been eating lengua since I had my first teeth. I’m 34 now. Keep up the good work. 😎

      He likes what he likes just like anyone else does. I live in a great area for seafood, and it floors me how many people in this area don't like seafood and won't touch it, so him being a little squeamish about eating the tongue of a animal is ok. He isn't the only one I assure you. I actually figured I was going to get hammered over this video, but so far, going good. Thanks for watching!
