10 cups peeled, cored and ½ inch thick sliced apples from about 5 lbs of mixed variety apples
2 cups fresh or frozen cranberries
1 cup water
2 ½ cups apple cider or juice
2 ½ cups sugar
2/3 cups ClearJel cooking starch
Zest of 1 orange
1/8 tsp ground cloves
½ tsp ground nutmeg
½ tsp ground ginger
1 tsp cinnamon
Pinch of salt

*To treat apple slices to prevent browning, apply Ball® Fruit-Fresh® Produce Protector according to the manufacturer's instructions or submerge cut apples in a mixture of 1/4 cup lemon juice and 4 cups water.
Ladle hot apple filling into hot pint or quart jars leaving a generous 1 1/4" -1 1/2" headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 25 minutes in boiling water or steam canner, adjusting for altitude as follows:

3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

OMG, THANK YOU! I made this pie today. First bite I giggled with excitement, towards the end I almost started to cry it was SO good. It Smells & Taste like Christmas. Not like some traditional Holiday dessert, but like Christmas itself. I will definitely be canning up more.
Something else you've canned that im inspired by. This is a definite.
This looks irresistible.
For gifts this would be perfect with a green ribbon/bow
that sure would make a lovely holiday gift...very beautiful and i bet it tastes yummy...thx marie from canada
Thank you Carol. Not only was this a very nice recipe for canning apples. But, it also helped me soooo much with 'why a couple of my pears didn't seal'! I thought they were cooked enough and found out even after a 'second' redo to seal up the couple jars that failed. The pears I had were pretty darn hard organic pears from David and xxxxxxx. Even after a long ripening wait. Long story short...they still expanded in the jars during the water bath canning and brought the 1/2 head space up way to high causing a seal failure.
Though your apple filling looks delicious I personally prefer it a little less thick and I have to watch that H.F. thickening agent amount used.
Hello, so glad to see you back. I hope to see you do a canning recipe on how foods can expand and cause sealing failures...my pears were the worst :)). see below.
Soooooo beautiful! 🍎😋🍏 Congrats on No Siphoning! Sadly, I can't use the steam canner for this because my elevation brings me up to 40 minutes of processing time. At any rate, this looks like a perfect Christmas gift. I wonder what a little Boiled Cider would do for the flavor...? But it is probably plenty delicious all on its own. Thanks so much for sharing this with us! 😊
This sounds and look delish. I have apples and cranberries in my freezer. I need to use some of my pie mixes before I can this.
Carol..I have no place to say this to you so I’m saying it here..I want to say that I’m thinking of you this Holiday season as holidays are never the same after losing a loved one especially your husband..I hope your day of Thanksgiving will be filled with lots of precious memories as you move forward ..Hugs..
Thank you so much. Your kind words are appreciated more than you know 💕
Yum!!
That looks beautiful, Carol. Ingredients on my shopping list. 🙏♥️
I made this tonight. It’s so pretty and tastes delicious! I love the extra level of flavor the zest adds😋. Thank you for teaching this recipe.
I have been wanting to can some apple pie filling!
I have mase apple cranberry pie, and also put chopped walnuts in it. Just enough cranberries to give it a beautiful color, and a few chopped walnuts to give it a little texture (crunch) to it.
So excited to see you making new videos! This is on my list for this week. Thanks Carol!
Not that it’s any of my business but it appears you had some changes in your life, I will say a prayer for you and I hope you are doing well !!!
Now hopefully this weekend I’ll be making this pie filling ❤
Yes, I’ve had big changes in my life. Thank you for your prayers 💕
Thx for sharing 😊
Thank you.
You are such a wonderful cook/baker. Thank you for sharing.
I'm canning this today, along with sour cherry vanilla jam and strawberry vanilla jam. Tfs ❤
Hello Carol, thank you for sharing your recipes. I may try this one. Sounds yummy. I've followed your channel for a few years. May I say you look the happiest I've ever seen. 💗 God bless you and your family.
Orange zest! Sounds wonderful. I want to try!
Looks beautiful, & I bet that it tastes great! Thank you. ❤
Great recipe, so delicious.
Yay!! I will for sure be making this. I make apple cranberry jam and it is superb.
Recipe?
Bc my wife is a crazed and proud home canner. She is prepped for canning cranberry concentrate as of today. Cranberry apple jam sounds great, in our old ages we seem to do more than when we used to work away from home, that’s a blessed life.
I ate some cranapple butter today. So yummy.
I am just amazed at how beautiful this is!!! I'm going to try it but I do have a QUESTION: When I want to make a pie, do I bake the pie filling in the pie or bake the crust and just add the filling? Thank you so much for this recipe!! I did watch your video on how to can cranberry sauce too and will be trying that. Love your videos.
Hi! Bake the filling in the crust as you would with a traditional pie 🥧
That looks delicious. What type of apples did you use?
Honey crisp and golden delicious
What would be the best the apples I can use that want turn to mush?
I used honey crisp and golden delicious
Hello Carol. Is it possible to use dried orange cranberries in this recipe?
I don’t see why not …
Hi Carol, I just love your channel. I have learned a lot. I have a question. Can I make this recipe as written but leave out the clear gel? What would be the correct head space? Have a blessed day.
I can’t say as this recipe is written as pie filling. I want to say yes but I don’t think I would. I’d use a tested recipe for canning apples. The liquid ratio would probably be different 😊
This would be like canning fruit in syrup. The head space is 1/2". I prefer to add the thickener when I open the jar. Happy canning!
@@cydney3283 I agree but it’s not really a syrup and there would have to be enough liquid to fully cover the fruit. I’m not sure the ratios would be correct for canning it that way…
Can you double the recipe for canning. If so, is it still 25 minutes
Yes
I see so many videos to can pie filling but not once has anyone made a pie with home canned filling and shown a slice of it. How well does this really bake up in a pie and a slice present dry, runny or what? In years I've yet to see any one bake a pie with pie filling they've canned. I've made hundreds of apple pies in my life and never once needed thicker, how does this compare to a fresh pie without starch added?
Do you add flour to your fresh pie filling? I’ve never made a fresh pie without some kind of thickener bc it would just be runny…
@@carol-thriftychichousewife6231 No, not on apple pie, cooking apples produces pectin, like in jelly. Once the apple pie is cooled it's naturally sets.
I'm curious about this canned apple pie filling everyone shows canning but never shows it once baked in a pie. Apples cooked on the stove, then cooked in the jar processing then cooked in a pie. Is there any texture at all left once the pie has cooled down? No one shows that, I wonder why? Because the apples are cooked 3 times before the pie is served?
@@UncleDavesKitchen there’s nothing wrong with the texture of the apples. You can cook the pie less time than fresh bc the apples are already cooked. You only need to cook until the crust is done. I’ve just never showed it bc the video is about canning and most people don’t watch until the end. I’ll consider doing a video explaining cooking the pie less time and show the finished product.
@@carol-thriftychichousewife6231 Thank you, I love your channel and have watched you for years. I'm starting a cooking channel on down home farm cooking from my childhood memories. Only a few videos so far, and none cooking yet.
@@carol-thriftychichousewife6231 You make a good point; only bake the pie crust. ChristmasTopping - mix together, spread over apples, and into the oven.
• ¼ cup butter, melted
• 1 cup oatmeal
• ⅓ cup flour
• ½ cup chopped nuts (walnuts or pecans)
• ½ cup packed brown sugar
5 lbs, 10 cups--how many apples does it take
It depends on the size of the apple … a dozen or so medium
I noticed in the recipe it seems to be missing a couple of steps, would you mind adding them? Thank you😊
They’re not missing. They are intentionally left out as I fully describe the process in the video 😊
Could this be frozen too. Looks like such a great recipe. Thank you
