    This festive recipe is beautiful and has amazing holiday flare. Great for holiday prep or giving as a gift.
    10 cups peeled, cored and ½ inch thick sliced apples from about 5 lbs of mixed variety apples
    2 cups fresh or frozen cranberries
    1 cup water
    2 ½ cups apple cider or juice
    2 ½ cups sugar
    2/3 cups ClearJel cooking starch
    Zest of 1 orange
    1/8 tsp ground cloves
    ½ tsp ground nutmeg
    ½ tsp ground ginger
    1 tsp cinnamon
    Pinch of salt
    ¼ cup bottled lemon juice
    *To treat apple slices to prevent browning, apply Ball® Fruit-Fresh® Produce Protector according to the manufacturer's instructions or submerge cut apples in a mixture of 1/4 cup lemon juice and 4 cups water.
    Ladle hot apple filling into hot pint or quart jars leaving a generous 1 1/4" -1 1/2" headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process for 25 minutes in boiling water or steam canner, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.
    This tutorial is for informational purposes only. It is your responsibility to follow all instructions for your canner and water bath/steam canning. Always adhere to safe canning guidelines.

    OMG, THANK YOU! I made this pie today. First bite I giggled with excitement, towards the end I almost started to cry it was SO good. It Smells & Taste like Christmas. Not like some traditional Holiday dessert, but like Christmas itself. I will definitely be canning up more.

    Thank you Carol. Not only was this a very nice recipe for canning apples. But, it also helped me soooo much with 'why a couple of my pears didn't seal'! I thought they were cooked enough and found out even after a 'second' redo to seal up the couple jars that failed. The pears I had were pretty darn hard organic pears from David and xxxxxxx. Even after a long ripening wait. Long story short...they still expanded in the jars during the water bath canning and brought the 1/2 head space up way to high causing a seal failure.
    Though your apple filling looks delicious I personally prefer it a little less thick and I have to watch that H.F. thickening agent amount used.

    Hello, so glad to see you back. I hope to see you do a canning recipe on how foods can expand and cause sealing failures...my pears were the worst :)). see below.

    Soooooo beautiful! 🍎😋🍏 Congrats on No Siphoning! Sadly, I can't use the steam canner for this because my elevation brings me up to 40 minutes of processing time. At any rate, this looks like a perfect Christmas gift. I wonder what a little Boiled Cider would do for the flavor...? But it is probably plenty delicious all on its own. Thanks so much for sharing this with us! 😊

    I have mase apple cranberry pie, and also put chopped walnuts in it. Just enough cranberries to give it a beautiful color, and a few chopped walnuts to give it a little texture (crunch) to it.

      Bc my wife is a crazed and proud home canner. She is prepped for canning cranberry concentrate as of today. Cranberry apple jam sounds great, in our old ages we seem to do more than when we used to work away from home, that’s a blessed life.

    I am just amazed at how beautiful this is!!! I'm going to try it but I do have a QUESTION: When I want to make a pie, do I bake the pie filling in the pie or bake the crust and just add the filling? Thank you so much for this recipe!! I did watch your video on how to can cranberry sauce too and will be trying that. Love your videos.

      I can’t say as this recipe is written as pie filling. I want to say yes but I don’t think I would. I’d use a tested recipe for canning apples. The liquid ratio would probably be different 😊

    • @cydney3283
      @cydney3283 8 місяців тому

      This would be like canning fruit in syrup. The head space is 1/2". I prefer to add the thickener when I open the jar. Happy canning!

    • @carol-thriftychichousewife6231
      @carol-thriftychichousewife6231  8 місяців тому

      @@cydney3283 I agree but it’s not really a syrup and there would have to be enough liquid to fully cover the fruit. I’m not sure the ratios would be correct for canning it that way…

    Can you double the recipe for canning. If so, is it still 25 minutes

  • @UncleDavesKitchen

    I see so many videos to can pie filling but not once has anyone made a pie with home canned filling and shown a slice of it. How well does this really bake up in a pie and a slice present dry, runny or what? In years I've yet to see any one bake a pie with pie filling they've canned. I've made hundreds of apple pies in my life and never once needed thicker, how does this compare to a fresh pie without starch added?

    • @carol-thriftychichousewife6231
      @carol-thriftychichousewife6231  8 місяців тому

      Do you add flour to your fresh pie filling? I’ve never made a fresh pie without some kind of thickener bc it would just be runny…

    • @UncleDavesKitchen
      @UncleDavesKitchen 8 місяців тому

      @@carol-thriftychichousewife6231 No, not on apple pie, cooking apples produces pectin, like in jelly. Once the apple pie is cooled it's naturally sets.
      I'm curious about this canned apple pie filling everyone shows canning but never shows it once baked in a pie. Apples cooked on the stove, then cooked in the jar processing then cooked in a pie. Is there any texture at all left once the pie has cooled down? No one shows that, I wonder why? Because the apples are cooked 3 times before the pie is served?

    • @carol-thriftychichousewife6231
      @carol-thriftychichousewife6231  8 місяців тому +2

      @@UncleDavesKitchen there’s nothing wrong with the texture of the apples. You can cook the pie less time than fresh bc the apples are already cooked. You only need to cook until the crust is done. I’ve just never showed it bc the video is about canning and most people don’t watch until the end. I’ll consider doing a video explaining cooking the pie less time and show the finished product.
