Another way to caramelize onions with no fat at all. Fill a slow cooker [Crock Pot USA?], with sliced onions, add 1/2" water. Set on low overnight. Awesome onions plus the bonus of the amount of onion stock it produces.

ABSOLUTELY RIGHT ON RECIPE. I made this last week, followed your recipe exactly. I was concerned on the wine as I never used it before, this was my first time opening a bottle with a cork!!! It did give that perfect flavor. I had just cooked down chicken breasts with bone in to can so I ended up with 1.5 gallon of broth, so used that for my liquid. I doubled the recipe, added the Better than Bouillon beef paste and salted at the end which didn't take much. Thyme and pepper go so well with beef. I bought chopped onions for ease, they come in 3 pound bags so I had 9 pounds of diced onions. One jar didn't seal so I ate it the next day. Just delicious. I'm going to make more and give as gifts.

Just made this today. Used a quart of chicken broth and rest with the Better than roast beef bouillon. I should not have added salt. Only used a teaspoon and that was too much. Lol learned my lesson there! Still good just a little more salt than I prefer. Got 9 pints. Definitely trying this again. Thanks Carol!!
I just used that Better bullion also, and I skipped adding any salt. I just checked that bullion and salt was the second ingredient listed- that may be enough hah?

I love French onion soup my family is not fond of it. I have never used chicken stock or kitchen Bouquet in it, but I put everything else in it. I use onion soup on my pot roast in the oven. I think that is would be easier, just open a can on top and no need to put water in. Easy for the husband and kid todo. LOL 😆 I will have to look for the kitchen Bouquet in the store I have never used it before.
I love using Kitchen Bouquet! It adds just the right amount of color and flavor, that like Carol says, to make your recipes richer! Love adding to beef broths, gravy, soups, roasts, etc... It's one of my pantry staples! You're going to love it! My daughter couldn't figure out why her gravy never got rich and dark like mine! I had such a Moma moment! Lol! But I thought she had seen me make it a million times! But now she knows the secret!

I’m making your recipe now and my house smells very good. I have the same Ball book as you have, but mine must be a different release date because mine calls for 1/4 cup of olive oil. I thought that might be too much so I went with your version of 1 tablespoon of butter. When my husband and I go to a nice restaurant and if they have onion soup on the menu he always orders it. He is looking forward to this soup. Thank you for posting it.
Just heads up. I love your videos and you got me started on pressure canning but alcohol takes about 3 hours to cook out of food. I have had to research this issue due to a liver condition I have and I have always loved cooking with wine. I even bought powdered wine in hopes I can substitute liquid. Still researching.
I always love your videos (and your sweet fur baby too!!!) but I have sooooo many onions this year and I usually slice and dice them to vac seal and freeze for the year but then I saw your video. WHY have I never thought to make this?! French onion is my all time favorite soups. So I ran out and got the kitchen bouquet because I only have island browning sauce and I want to make it just like yours. Yesterday was a major canning and vac seal day, today is too. I’m currently waiting on my salsa to finish processing and I came back here to make sure I follow this to the letter!!! I enjoy provolone as my cheese but at least I’ll have the soup flavor of yours. You always have amazing recipes. I’ll come back and tell you if I did mine to a way I think you’d approve, lol. Based on your comment of the “long onions” I might cut my slices in half as well. Am in the process of finishing canning French onion soup. Just waiting for the pressure canner to wind down and came across your video. Wish I would have came across your French onion soup canning video before I started . Could not understand why my onions were not caramelizing. Kept waiting and staring and could not get the liquid to evaporate because I had the heat on a simmer. Will be doing it your way from now on . Thank you very much !
You can sub ACV for the wine. Also, the purpose of the butter is to caramelize the onions, which can’t happen properly if you add liquid before they caramelize.
Better than Bouillon IS da bomb, AND it comes in veg, mushroom, onion and garlic varieties, too, although most of those I have to order. The vegetable is available in grocery stores, usually, and I have seen the onion one in my area, as well. A little adds soooo much depth and flavor.

Is it typically one kind of cheese or are there several cheese options? Can croutons be used in place of the bread? Thanks.

Elizabeth Rowe yes, you can safely add mushrooms. I just checked processing times with NCHFP and you would be fine for the processing time for this recipe 😊
This is my first time canning. I saved some of this soup out to try it was fantastic. Question about the canned soups. My jars are are a little more than a inch short of the top. What are the safety rules about how much liquid should be in the jars. Thank you so much for these videos they have helped me make the leap into canning and loved making this recipe. Can't wait to try some more.
Liquid loss or siphoning is common during the canning process. Ideally you want to be as close to proper headspace as possible but yours sound as though they are still fine. If they go much lower than 1-2” lower than the headspace required just consume sooner rather than later.
Jennifer McQueen sure... just use the same amount of stock. If you want to try, I always use an inexpensive bottle pino Grigio, usually Beringer or Barefoot. It does add great flavor but it’s very good without also 😊💕

I was looking for a French onion soup canning recipe when I found your video. I was glad you were using the one from “The All New Ball Book of Canning and Preserving”. This is the recipe I had planned to use but wanted to see what recipe other canners were using before committing. Here is the problem. My book does not call for butter only 1/4 cup of olive oil. The rest of the recipe is the same. Do you think it was changed? My book has a 2016 date. Can you look and see what yours is. One of us needs to correct our recipe😊. Thanks
I have the same ball canning book 2016 edition but I don’t see anything in the recipe that says butter can be substituted. Am I missing something? A new edition possibly? I made a note in my book to substitute 1 tbsp. butter. Im new to pressure canning and I’m just curious. Thank you! I love your videos.

In my Ball 2016 book of canning and preserving on page 290, the recipe for French Onion Soup calls for 1/4 cup olive oil, do you think that is correct? I am confused now, please help!! Thank you , Carol
Verna Spiker I don’t have that book so I can’t confirm. Check to make sure it’s a canning recipe. They also include freezer recipes in their canning books and it can be easy to miss. It would also depend on how big the batch is... let me check their website also... I just checked and there’s nothing listed. Just confirm it’s a recipe for canning and go with it. Their recipes are supposed to be tested so you should be able to trust it 😍
Hello again. I made your French onion soup And it’s delicious. ? My new Ball book has the same recipe but ,instead of butter it says olive oil. Also have a little fat set an on the top of the jar. It’s that ok. I made it with butter.
Ana Tedesco it should be fine. It’s interesting they changed it from butter to olive oil. But fat is fat. As long as you used the amount specified there are no safety issues 😊
kaila snider hi! You can cook the soup however you choose but know that caramelizing your onions is important to the flavor. I don’t have an insta pot so I’m not sure how it works for that step 😊

Apparently there are versions of the book with typos. I made this according to the exact instructions in the copy I have. So I didn’t change the recipe 😊
Technically electric pressure canners have not been approved by the USDA. Supposedly the manufacturers have done their own testing and claim they are safe. However the USDA does not recommend using their guidelines since they were developed using traditional canning methods nchfp.uga.edu/publications/nchfp/factsheets/electric_cookers.html
I have this book so I wanted to watch a video to get an idea of the process. There is a difference in the recipe in my book. It does not have any butter but it does have 1/4 cup olive oil.

Just an idea, if onions need help carmelizing maybe use tallow, lard, or coconut oil for more fat. Then when soup is done put in fridge overnight and skim off fat in the morning before canning 🤔

It’s Swiss or gruyere cheese. You can also use provolone. Yes croutons can be used

I actually only can a combination meat stock instead of beef stock that I make with chicken and oxtails. I think it tastes better than just beef.

I always process hot. But if you do it cold it needs to be cold canner with cold water, jars etc.

I have the same ball canning book 2016 edition but I don’t see anything in the recipe that says butter can be substituted. Am I missing something? A new edition possibly? I made a note in my book to substitute 1 tbsp. butter. Im new to pressure canning and I’m just curious. Thank you! I love your videos.
There were some printing errors in that book. The butter is correct.

I am wanting to make this recipe. I don’t drink so I have no idea about what things taste like. Can you recommend a couple of specific kinds for me to pick from. Love your videos and I have done quit a few of your canning recipes.
Pinot Grigio is my favorite and any brand will do nicely. Chardonnay or a dry Reisling are also good choices

In my Ball 2016 book of canning and preserving on page 290, the recipe for French Onion Soup calls for 1/4 cup olive oil, do you think that is correct? I am confused now, please help!! Thank you , Carol
Verna Spiker I don’t have that book so I can’t confirm. Check to make sure it’s a canning recipe. They also include freezer recipes in their canning books and it can be easy to miss. It would also depend on how big the batch is... let me check their website also...
I just checked and there’s nothing listed. Just confirm it’s a recipe for canning and go with it. Their recipes are supposed to be tested so you should be able to trust it 😍

My new Ball book has the same recipe but ,instead of butter it says olive oil. Also have a little fat set an on the top of the jar. It’s that ok. I made it with butter.
Ana Tedesco it should be fine. It’s interesting they changed it from butter to olive oil. But fat is fat. As long as you used the amount specified there are no safety issues 😊

kaila snider hi! You can cook the soup however you choose but know that caramelizing your onions is important to the flavor. I don’t have an insta pot so I’m not sure how it works for that step 😊

Apparently there are versions of the book with typos. I made this according to the exact instructions in the copy I have. So I didn’t change the recipe 😊

I have a stove that cooks with magnets so I cannot use a canner that sits on the stove. Do you ever use a plug in pressure canner such as the Nesco?
Technically electric pressure canners have not been approved by the USDA. Supposedly the manufacturers have done their own testing and claim they are safe. However the USDA does not recommend using their guidelines since they were developed using traditional canning methods

Well I ended up with about 9 pints and a bit more. I have no idea how that happened except I did weigh out my onions and added one more.

My recipe for onion soup…not a canning recipe…uses beer. Can you use beer to can? Just wondering.
You could use beer in place of the wine
Just an idea, if onions need help carmelizing maybe use tallow, lard, or coconut oil for more fat. Then when soup is done put in fridge overnight and skim off fat in the morning before canning 🤔

I dont understand the rules around fat- you can cann meat- chicken legs etc that has fat on it.....
Too much fat can interfere with heat penetration. I know, sometimes the rules make no sense. 😊
