      Foods that your body is used to it can absorb nutrients from such foods very well. There is no defined standard for this as it'll vary person to person. If you've been eating legumes or dals since childhood then there is no need to worry about nutrient absorption from it as long as your gut health is good. If gut health is not good you cannot absorb nutrients property from any food.
